Where Do I Begin?

The last week has been a whirlwind! I’ve wanted to blog since I got home from vacation but there just doesn’t seem to be enough hours in the day to do all the things I want to do. I can’t even sift through all my thoughts! So let me start at the beginning.

Last Thursday The Family and I headed off in a rental car to Florida for Little Bean’s 5th birthday Disney trip. I blogged all about it and shared tons of photos on TheUnworldlyTravelers — click here to check it out.

So cliche to say but I really can’t believe he’s 5.  I’ve come to terms with The-10-Year old being 10 but I can’t get over the fact baby No. 2 will be registered for kindergarten by the end of week.

We got back super late Thursday night leaving us with what I thought would be three days to get our acts together before work and school.

HA! I was so wrong. My laundry may be clean but it’s not folded or put away. The house is a mess. I haven’t wrapped my head around the week’s schedule yet and one word: TAXES! Ugh.

I’m just not ready to return to reality.

I did, however, tackle the food department and I’ve been killing it since I got home. It all kicked off Friday morning when I rummaged through my empty fridge and made a this really tasty quinoa and beet dish.

To prep for the week I made:

Told you, I killed it in the food department. It’s totally what I’m prioritizing right now. Especially after a week of eating out on vacation.

I’m also focusing on eating better while training for a CrossFit competition I registered for in June. I’ll be blogging about it and keeping my food journals again as I learn how to eat more like an athlete and less like a “dieter.”

I’ll get more into details on my goals later this week. Right now I’ve got to get to bed!

    Hi Roni, thanks for sharing your experiences here. I wanted to tell you that today I’ve entered for my first 10k, aged 54, and never done any running before.
    Although you’re a lot younger than me, your achievements have definitely shaped my aspirations!
