The Dinner That Almost Wasn’t

Super long day here. So long I’m not sure I can write in complete sentences.

My day started at 5 a.m. I just HAD to have one more workout with the ladies of 6 a.m.

Today started the big gym move. I had to grab the computer to drop it off at the new gym for set up along with my camera for a time lapse I’m attempting. This is my first attempt at one so I don’t have high hopes, but I wanted to give it a try.

I jetted home just in time to see the 10-year-old off to school before the bus came. Then I had to run back to the new gym location to meet the Verizon guy before jetting back to the elementary school for a short dance event.

Yes, dance event!

The 10-Year-Old has been taking ballroom dance lessons all week and they had a little event today to show parents their progress.

He did great! And as I said on Facebook, I’m not sure how I’m going to survive the next 10 years or so without being a blubbering mess. I had to hold back tears just watching him dance!

Right after the dance I headed BACK to the gym and it was… go, go, go, go, HOLY crap, it’s 5:30 p.m.!

I got home a little after 6 and told The Husband I just didn’t have it in me to make dinner. He offered to pick something but our options were pizza, subs, or, umm gee, pizza.

Nothing I really wanted any of us to eat.

I did have some chicken semi-defrosted because I wan planning on making this but I just lost all motivation after my long day.

The breading.

The mess.


I proceeded to throw myself a small pity party.

I hemmed.

I hawed.

And then I said, F-it and just started cooking.

Twenty minutes later I was sitting in front of this.


Sweet potato microwaved.

Brussels sprouts sautéed with bacon.

And chicken sans breading because ain’t nobody got time for that after a long-ass day at work.

Time to finally shower and chill with The Husband. I have a feeling I’ll be asleep in minutes.

    Don’t you feel like you’re on a hamster wheel sometimes? I know I do….those days I have to remind myself it’s temporary.

    Your choice to cook instead of ordering pizza showed that your 30 day challenge was successful in rebooting your healthy choices lifestyle.
    AND, THE DINNER LOOKED DELISH in the photo. The chicken was MUCH healthier without the breading, so it was a win/win in the health AND time column.

    *HIGH FIVE*!!!! That’s awesome! I ate dinner at home 7 days straight and it felt SO great, planning ahead and staying on track. Trying your slow cooker chicken recipe this week. I LOVE the idea of a warm meal waiting after a long work day.

    Good job, and that dinner looks way more satisfying than greasy pizza! This is the dilemma I face on a daily basis – after a long day at work and an hour commute home in horrible traffic – the last thing I want to do is cook dinner when I only have a few hours to spend with my kiddos before their bedtime, and most of that is to look at homework and get showers done, etc. It mostly takes a LOT of planning and remembering that it usually can be quick once started, and my kiddos are starting to help with dinner too! Always glad I ended up cooking. Now, if I could just convince myself to feel that way about a few minutes of exercise somewhere…..:(

    Ain’t nobody got time for that! I hear that! That is one of my favorite meals – baked chicken, brussel sprouts with turkey bacon, and roasted sweet potato! Yum! Very nice.

    I do the same meal after a long day! Of course I complain during the process, but I kinda feel good about myself afterwards and the boys eat it happily!

    Quick question — a while ago you talked about bed in a box. How is it holding up? My sons need a bigger bed and we are considering it.
