Every day I’m getting closer to finding my new groove. I’ve come to the conclusion that I thrive on order even though I don’t like to admit it. Walking into a management position where things are quite out of order has been stressful, but the more order I put in place the calmer and more at ease I feel.
I still have a lot to do but I’m enjoying the challenge and, in a way, the distraction.
Anyway, since it’s Wednesday I thought I’d do a “What I Ate Wednesday” post so I started snapping photos of my dishes until I forgot. I have a habit of doing that.
My diet was also really odd today because I’m in leftover mode, and The Husband and I are really trying to eat more at home.
1/2 banana on the way to the gym — lately I’ve been hungry in the mornings so I’m grabbing at least a banana to eat in the car on the way there.
1/2 roasted acorn squash with bacon sautéed with leftover taco meat and baby kale drizzled with a little sriracha.
I remembered to snap a photo about half way through — there was more on this plate when I started.
I know it’s not the prettiest dish but I wanted to share because, well, it’s what I ate!
Last night I roasted the squash just so I’d have it on hand for quick meals and my plan worked great! It was perfect simply warmed in a skillet.
Pistachios at the gym — I learned the hard way I need to bring at least one snack. My stomach is usually growling by 10 a.m.
Leftover Simple Two-Tablespoon, Two-Bean, Turkey Chili With Pumpkin, leftover collard greens, and Scoops.
Another ugly dish but it is what I ate. I can’t help it.
Greek yogurt with cocoa nibs, hemp hearts, sunflower seeds and maple syrup — I was hungry and I knew I wouldn’t make it until dinner. Totally forgot to take a photo but you can see one here.
I marinated pork chops in the most amazing marinade. The whole family loved it! And this time I measured everything so I will be sharing on GreenLitesBites ASAP, hopefully tomorrow.
