Happy Sensational Sunday!

Today was a glorious mix of relaxing and preparing for the week, which kicked off with a cuddle session.


My sleep schedule has been all off and although I’m one of those “lucky” people who easily fall asleep (mostly because I’m flat out exhausted) I normally wake up a few times a night and if it’s 4 a.m. or later I have a hard time falling back asleep regardless of what time I went to bed. I can only assume it’s a mix of aging, being “ruined” by the kids and training my body to wake up at 5 a.m. to hit the gym.

Today I woke up at 4:05 a.m. and since I couldn’t fall back asleep in bed I came downstairs and dozed off watching the ID Network. By 7 I had company and we watched Paw Patrol together.

At 8 I sprung up and decided it was time to get moving. I was on a mission to kick off the week on the right foot.

I made Banana Oatmeal Cups while the kids played target practice with the Nerf guns.


I also hard boiled eggs, cooked and prepped a spaghetti squash, and assessed  the produce situation in my fridge.  I’ve decided my new plan is to take any aging produce I have and cook it up or freeze it before shopping for the next week.  Today I found a package of baby portobello mushrooms and an onion so I whipped up Mushroom Quinoa for lunch.


Now my fridge was cleaned out, I had a few things prepped and I knew exactly what I needed at the grocery store — win-win-win.

Late morning The Husband was on a yardwork mission and the kids wanted to go out to play. That left me some alone time to FINALLY clean my pig stye of a desk.


It’s gotten way out of hand! Somehow it always ends up to be my dumping ground.

However, give me 20 minutes, a good playlist, a kid-free house and BOOM!


Every time I walk past it I smile.

After lunch I went grocery shopping. ALONE!

It was glorious! And I stocked up on lots of stuff for the pantry and freezer.

Once the groceries were away we watched the Ravens game while the kids were in and out playing. I decided to make Salisbury steak over mashed potatoes for dinner and it came out fantastic!


I’m proud of myself too. First time I made it completely from scratch, no can or dry soup packet to make the gravy and the family  loved it! I will totally make it again to measure everything and share on GreenLiteBites.

After dinner we cleaned and closed the kitchen…


and I’m totally ready for Fear the Walking Dead. I just have to fold my clothes first so I’ve gotta go!

    We always wake up at 4- 4:30 on the weekends-up and out the door by 4:30 or 5! Good habit!

    Sounds a lot like my Sunday except I made egg casserole, stuffed peppers, greek chicken and lasagna to prep for the week. Love the googly eyes on the fridge. Where did you find those?

    I love that – “cleaned and closed the kitchen”… that’s a great way to look at it to avoid night time snacking. The kitchen is closed! :) And wow, just saw that your fridge has a face! Cool/creepy! :) Also, can’t wait for the salisbury steak post! Looks so good.

    Hi Roni. U r sooooo productive, i mean playing with kids, cooking, shopping, all in a a day. I have no energy left on sundays, i need to work on myself soon before i wilt. Thx for the inspiration
