I was planning on posting this last night but I was exhausted. I squished in a 4-mile hike with the 10-year-old before dinner and we ended up swimming at our new favorite spot for a bit because it was just so darn nice!
This pushed up dinner about an hour and threw off the rest of the night. By 9 I was DONE. I’m feeling my early mornings more than ever and I refuse to say it’s because of my age. ;)
Yesterday’s food journal…
5:45 a.m. – 3/4 of a date-based bar on the way to the gym. I’ve been keeping these in the car in case my stomach rumbles on the way to the gym. Lately it has since I’ve been keeping my nighttime snacking under control.
7:45 a.m. – Lately I’ve been coming home from the gym and making my new recovery smoothie but yesterday I actually felt like eggs. So I scrambled up 3 with some sweet potato, onion, red pepper, and ham. And of course a drizzle of sriracha!
10:45 a.m. – Leftovers of my Blueberry Salad with Northern Beans and Corn while working. I really love this salad!
12:30 p.m. – Threw together lunch using about a half of cup of leftover brown rice as inspiration. If I remember correctly thats bit of sesame oil, the rice, onion, carrot, red pepper, spinach, leftover chicken, an egg, soy sauce and ginger.
2:15 p.m. – I’ve been working on a new single-serve avocado pudding recipe and I think I nailed it! I hope to be sharing on GreenLiteBites in the next few days.
6 p.m. – After our hike I grabbed a handful of these because I knew dinner was going to take awhile.
7:20 p.m. – Dinner was spatchcock chicken on the grill, baked sweet potato, cauliflower, and the Husband’s potato skin because he doesn’t eat it and it’s the best part! ;)
9:o0 p.m. No picture of my Fudgsicle but I ate one while watching Mr. Robot. Note: I fell asleep before it was even over.
