Back With a What I Ate Wednesday! (#wiaw)

Hellooooooo!

I’m back from our Wyoming adventure, and if you were following along on IG you know, It. Was. AWESOME! I’m planning at least one post on TheUnworldlyTravelers. I have a ton of photos to shift through and a lot of video footage. I’m hoping to put together something like I did for our Utah trip.

In the meantime here’s a handful of my favorite shots…

It was truly an amazing trip and I’m so proud of myself and both boys. We sucked the marrow out of 6 days seeing and experiencing everything we possibly could. They kept up with me and more importantly, I kept up with them!

We hiked, kayaked, rafted and just hung out with no distractions. The experience has cemented my commitment to doing a mother-son trip yearly. It’s such a great way to bond with them. Plus, I swear I can see them maturing in front of my eyes. From trying new foods to meeting new people, getting kids (anyone really) out of their comfort zone is the only way to grow.

Today was my first full day home and it was glorious as well. I hit the gym, took the wagon to the grocery store…

…and napped — today’s #loving39 gift to myself. I never like to admit I have jet lag but… I have jet lag.

Anyway, here’s how today’s food went….

7:30 a.m. Small Best Ever Bar Sample from the gym.

I must say, not bad!!

8:15 a.m. Steel-cut oatmeal topped with cocoa nibs, sunflower seeds and honey.

I was doing an overnight steel cut oats experiment. It was OK, not great. I’ll post more when it works out.

11 a.m. Leftover veggie lovers pizza from Domino’s

We ordered pizza last night. It was The Husband’s way of “cooking” for me. lol

1:30 p.m. Strawberries and quinoa

I’m going to post about this on GreenLiteBites ASAP. I have a new quinoa tip that worked out great!

6:30 p.m. Marinated chicken tenders, roasted broccoli and an ear and a half of corn.

It felt SO good to cook after a week of eating on the road. In the morning I marinated some chicken tenders in lemon juice, olive oil, thyme, peppercorns, honey and salt.

They grilled up in minutes!

And made a plate of awesome.

I ate this plate plus half of The 4-Year-Old’s corn and a few more nibbles of chicken while cooking and making the plates.

7:30 p.m. Watermelon — how could I not nibble while cutting it for the boys?

That’s all I’ve got in me today. I haven’t had time to post anything else yet. I’ll find my groove the next few days, especially because school starts on Monday!

    We took the chickpea blueberry and strawberry picking this weekend and also scored what has to be the world s largest watermelon in the history of ever, so fruit is on the menu all day every day. I ve been missing in action lately, eh?
