Let’s Talk About Breakfast — What I Ate Wednesday #2

I go through stages with breakfast. For a while I was really into eggs. I’d make an omelet or scramble every morning but lately I just haven’t been in the mood. Before eggs I was pretty much a cereal girl. I’ve gone through a muesli stage, an oatmeal stage, a smoothie stage and even a chia pudding stage!

Right now I’m in a breakfast rut. What’s your go-to? I’d love some more ideas!

As for today…

5:40 a.m. – Larabar knock-off for a quick pre-workout snack. It’s basically dates and nuts.

7:45 a.m. – My latest recovery smoothie — click here for the recipe. This morning I decided on the dark cocoa powder. Note: The 10-Year-Old wanted you to see his waffles and jelly as well


10:30 a.m. – I made this quick tostada-like thing for a snack before recording a podcast with Carla. I’ll be sharing the story behind it on GreenLiteBites ASAP!


12:30 p.m. Lunch was some leftovers turned into quesadillas. The kids and I had this for dinner last night, too. I refused to throw away leftovers!


4 p.m. – A square of super dark chocolate I brought home from the Dominican Republic.


6:30 p.m. –  Dinner was a grill fest! I made steaks (an extra one so I can have leftovers for lunches), cauliflower, mushrooms and corn on the cob — I’m the only one who likes mine roasted. That’s why there are only two on the grill.

8:30 p.m. – A bowl of chocolate Mini-Wheats with skim milk. My stomach was growling!

    This may seem crazy, but when I find myself in a breakfast rut, I do a 180 and go savory for a while. I roast some chicken legs with different seasonings or a citrus marinade. Then, I will grab a cold chicken leg or two and a piece of fruit for breakfast. It is quick, tasty, and gets in the protein. You could always heat up the chicken, but I like it cold. Weird, I know but it’s always a welcome change when nothing “breakfasty” seems appealing.

    My latest thing is the “no flip fried egg.” I like it because even my 10 and 11 year olds can make their own. I never could make a fried egg right because I ruined it while flipping! Also, I always had to use so much oil or butter to get it to do right. Now, I use 1 tsp of coconut oil, an egg, and water! Love it! If I had pans that could use spray, I could use cooking spray instead of the oil. Also, I’ve gotten into mini bagels with real butter and turkey sausage patties. Your quesadillas look good!

    I have two main ones that get tweaked a little: first is yogurt (something low in sugar), fruit, flaxseeds, and nuts or sunflower seeds. All in around 325 calories. Second is Thomas high fiber English muffin w/cheese or peanut butter with fruit. Will occasionally make an omelette with veggies or a stir fry w/veggies, egg, and brown rice. Winter may shake it up with oatmeal and fruit and milk.
    For me it works better to have a few go to meals.

    lately, I’ve LOVED grilled cheese sandwiches for breakfast:
    I use a T. of coconut oil, Arnold round bread, and a thin slice of sharp cheddar cheese…I toast both sides in the skillet until the bread is toasted and crisp and the cheese has melted. I also have fruit with it//watermelon for now! L.

    I’ll eat just about anything for breakfast. One of my faves is sliced cucumber, cherry tomatoes, a tablespoon or two of feta, and a whole grain pita half. I chose not to stuff the pita but that would be good too. I also like whole grain toast with a slice of cheese broiled until melty. Oh! Roasted nuts esp when on vacation. Easy, no cook, no mess!

    My most fav by far, 1 cup non/fat Fage greek yogurt, 3 oz raspberries (sometimes strawberries or blackberries, but raspberries are the BEST) & 1/4 cup of Fiber One sprinkled on top. DELICIOUS!! I get excited every morning when it’s time to eat. :)
