Feeling blah tonight even though I had a great day.  I hate that.

So I looked online for something to make me smile and this did it…

Now I’m going to bed before I eat something just to eat it.

I have been thinking of eating greens for breakfast & I see you had it for breakfast today. I just wasn’t sure if I would like it, but bok choy is a good mild green. Did you prepare it in any special way. I look forward to you date bar recipe. Larabar ALT bars are getting expensive & it would be great to make my own.

This was the first time I used the bok choy in eggs and I really liked it. I just cut the bacon into pieces and let it cook down. Then I added the sweet potatoes cut into small pieces and the bok toy chopped and cooked everything together until the bacon was crispy and the potatoes soft. Then I drained it on a paper towel to reduce the grease, added the eggs to the pan, poured back in the bacon, potatoes and bok choy and scrambled. It’s really good!

So true! (the dog thing) Who’s a good boy? HA! Thanks for the chuckle.

Spinach eggs are pretty much the only way I get my greens. Plus it looks great on a plate, all that color. :)
