It’s been a Sensational Sunday and for as much as I’d love to sit at my desk and recap, I’m EXHAUSTED! All I want to do is veg on the couch and watch the Food Network. Unfortunately, I still have a load of laundry to fold, too.

I need to replace my laptop so I can work in the living room again. I miss it even though it’s probably a blessing in disguise.

All that is my way of saying, I’m going to make this quick.

This morning started with Cocoa Dusted Banana Bites and 10 miles.

I’m not going to even pretend to be humble about it. I KILLED those 10 miles! Felt great the whole way AND my knee didn’t act up at all!

It’s amazing how fast you start to get used to the long distance once you have a few weeks of training behind you.

When I got home I ate the last serving of the sweet potato, spinach, egg casserole thing I made last Sunday. I bought sweet potatoes yesterday so I’ll be making it again. Today I decided to try something new and made a casserole out of some ground turkey, zucchini, eggplant and tomatoes I picked up at the farm stand yesterday.


I’m not sure if anyone else will like it but I LOVED it and now I have lunches in the fridge for the week!


Once I packed it up we stuffed the kids in the car and headed downtown to see the Blue Angels, but first, lunch at Panera.

These two are becoming quite the handful together!


Fun (most of the time) but exhausting!

I ordered the Chicken and Hummus Power Bowl, my new favorite at Panera when I’m not in the mood for soup.

We headed out toward the show and found a spot to hang out. I think I watched them more than the planes.


The same thing happens at fireworks.


We watched the first half and then headed back toward the car to beat the crowds and hit the yogurt place on the way out.

We watched the rest of the show from the parking lot and had great views!


Our plan worked! We beat the crowd, hit no traffic and got home with some time to relax. Well, relax as much as you can with a 3-year-old in the house!


For dinner I butterflied (spatchcocked) my first chicken and grilled it!


Overall we had a great meal minus the battle of the one bite.


Someone was not too keen on trying the zucchini but I’m happy to say, after about 10 minutes of hoopla the bite happened.

Score another one for Mommy!

After dinner some fruit for dessert while we cut extra for the week.

Right now The Husband is putting the 3-Year-Old to bed. The 9-Year-Old is folding his laundry watching TV and I’m rushing to get this done so I can watch at least part of the Kids Cook Off with him before Minecraft time and bed.

On that note, I’m out. :)

    Love all of your casserole ideas! Makes for quick easy breakfasts when I’m not in a smoothie mood. Finally started crossfit. I thought I was strong from doing boot camp for the last three years. I’m guessing its a different kind of strong but I’m enjoying it. Did my first triathlon over the weekend. Holy wow! But I finished! Stronger is the key.

      Stronger is definitely key for me too and I really have been on a casserole kick lately. I love having stuff I can just grab out of the fridge.
