Me? I’m giving eggplant another chance!
I may actually be past the “try 3 times” thing with eggplant but I’ve yet to integrate it into my diet in a consistent way, so every time I get one I feel like I’m trying something new all over again.
My plan is to add it to my Cheesy Zucchini Tomato Bake to up the veggies even more. I’ll keep you posted!
Oh! And I tried coconut chips for the first time today!

They are amazing! I found them at Big Lots today but folks are saying Trader Joe’s also carries them. You may want to buy some stock. I can see these becoming a total obsession.
