And if you are dealing with kids, make them try something at least 10 times because toddlers are fickle, fickle creatures.

What will you try new this coming week? New class at the gym? New recipe? 

Me? I’m giving eggplant another chance!

Eggplant

I may actually be past the “try 3 times” thing with eggplant but I’ve yet to integrate it into my diet in a consistent way, so every time I get one I feel like I’m trying something new all over again.

My plan is to add it to my Cheesy Zucchini Tomato Bake to up the veggies even more. I’ll keep you posted!

Oh! And I tried coconut chips for the first time today!

I think my exact quote on Facebook was “Holy cannoli!”

They are amazing! I found them at Big Lots today but folks are saying Trader Joe’s also carries them. You may want to buy some stock. I can see these becoming a total obsession.

Anyway, let’s try at least one new thing this week, OK? Keep me posted in the comments. Remember motivation is contagious! :)

    I think that eggplant will be great in your Zucchini Tomato Bake. One of my favorite ways to eat Eggplant is for breakfast: I cube and saute it with some zucchini, red bell pepper and mushrooms, then add spinach until wilted and sprinkle with Penzy’s Spices “Mural of Flavor” or chopped basil. Top with a over easy egg and a little parmesan cheese ~ that’s a breakfast that gets me off to a good start to my day! My guys won’t touch it though! :-)

    According to google, you can eat raw eggplant, so I would shred it and use it in salads the same way you would use shredded carrots. It’s simple, and the taste will be decided by your favorite dressing.

    YUM! I love eggplant SO much! Grilled is best in my humble opinion, but it’s also delicious in lasagna.

    I eat a lot of eggplant, but I wouldn’t say I love it. 4 standard recipes: baba ghanoush, eggplant pizza (microwave eggplant slices, top with sauce/cheese), ratatouille, roast/marinate salad. I try not to fry it, but I did treat myself to the eggplant parm sandwich (melissa clark, nytimes) and inhaled about a pound of the fried eggplant before it turned into parm. I think any of these dishes taste even better if I replace the eggplant with portobello mushrooms, but more expensive. Looking forward to hearing what you do with it.

    I don’t know if I will be trying anything new this week, but what I will do is try to keep my head above the water and try to stop myself from sinking into the negative mindset I seem be to struggling with more and more. Right now, it really does feel like try, try and try again is all I can manage. It feels like there is so much piling on right now (although much of it is normal adult life) including ongoing injuries which I am slowly coming to accept may be permanent, managing my work and personal life around my injuries, uncertainty with my partner’s unemployment, our lease ending in less than a month and no new house yet, and generally trying to be the one of top of things and all organised and in control. I’m not sure what is going to happen, but all I can do is ‘keep swimming’. Wycwyc, I guess.

    I just bought Agave nectar to use in making my own bars. The first ones were yummy (just dates, pumpkin seeds, almonds, a little almond butter and sesame seeds) but they kept falling apart and were hard to eat out of a baggie on my mtn. bike ride yesterday. I need more of a binder, so trying this!

    My dad used to be obsessed with eggplant parmesan! But then again… anything breaded, fried, and covered in cheese tastes pretty good. lol

    I’ve been eating healthier since Jan. and started weight watchers a few months back. I’d lost 17 pounds, but got sick a couple weeks ago. Since then I’ve been trying to get back on the wagon. Today is good so far. That’s my try, try, try again.

    Three things:
    1. I bought and devoured those coconut chips from Biglots last Thursday. Went back for more….
    2. I want to thank you for the encouragement to do more, try more, and live beyond my comfort zone. This summer I have been wearing some sleeveless items- something I typically do grudgingly only when I must ( think cocktail dresses and swimsuits). I have oddly large upper arms-looking like the arms of people much heavier than I am. However, not a single person seems to have stared or even noticed. I actually enjoy wearing the occasional sundress.
    3. Today I jogged ( slowly, very slowly) a full mile without stopping. I have always wondered if I was able to jog a mile, but I told myself not to even try. Of course, I can’t. Well, something you wrote last week got me thinking about that mile and I tried it. I did it and it wasn’t even that hard.

    I wonder what else I am capable of doing that I talk myself out of without even trying….
