Totally forgetting to defrost something for dinner, I was *this* close to taking the family out.  THIS CLOSE!

Instead I thought about last week’s challenge, pulled out some leftovers, grilled some hot dogs, warmed some beans and prepared some frozen broccoli.

Success!

Besides my last-minute dinner, I ditched car and took a walk in honor of National Walking Day.

    Luckily my husband is home during the day, so there have been many times that I call him at 11:00 and say “can you take out the chicken breasts!” I don’t like defrosting meat in the microwave for some reason. :D

      Me either!! I’m a counter girl, I’ll admit it. I pull out what i want, defrost it on the counter and it’s perfect by dinner. Works for me.
