The One Week Eat IN Challenge is Going Strong!

What Why
2 Pancakes — This recipe but with whole wheat flour instead of oats — I was lazy this morning. Breakfast with the kids. We make these pancakes about 3-4 times a week.
Spinach Egg Cake A super quick egg breakfast when I got back from the gym.
Leftover Tilapia with a balsamic tomato salsa, brown rice and peas Told you, leftovers are my friend!

Another Blender Brownie… Honestly, I let myself get too hungry while I was trying to get some work done and it was the easiest thing for me to grab on my way out the door.
93% lean Burger on whole wheat with spinach, tomato, and sweet pickles. A side of baked beans and steamed broccoli  Dinner – Decided to go with a family favorite
Warm Chocolate Chia Pudding One of my new nighttime go-tos – Fills me up and is super satisfying especially on cold nights.

    It was burger night here at the beach,too! Kids loved playing with their treasures form the boardwalk trinket shops while we cooked up dinner.

    Day 3 of eating in. Pan seared hake loin with a BIG salad. Lunch all week (already cooked and portioned) has been spinach, quinoa, feta, chickpeas, porkchop diced up.

It’s so easy to get a lot of vegetables at once and so tasty! Everyone in my house is getting used to not eating out. We are coming up on 90 days at the end of the month.

    Huge kale salad with cottage cheese for lunch and tortilla pizzas and leftovers for dinner. Such an easy way to give the kids their own personal pizza, the crust is thin and crispy and they are done in less than 5 min.

    Still going strong! Except that yesterday i had a stomach bug and didn’t eat anything but ginger ale. BUT my husband and son made themselves chicken quesadillas for dinner instead of getting takeout (which would be the usual solution.) I feel fine today — just had a whole grain waffle w/ pb.

    For me at the moment, eating out is harder than eating in! I can’t have all my old favorites because I am nursing an almost 2 month old whose stomach is SUPER sensitive to everything. I’ve been breaking out the crockpot a lot lately and scouring Pinterest for all recipes healthy :-)

    We had salmon burgers (seems everyone is on a burger kick!) They’re great for a quick dinner when I haven’t planned (although in this case they were planned!) Doing great on the challenge this week – it’s stopped me more than once from “oh, I’ll just grab something while I’m out”.

    Breakfast and lunch are super easy, I have been brown bagging them for years. Dinner has been challenging, especially if I have meetings at night. But I am making it work and it has been eye opening to see all the food that I am going to eat in one bag that I take to work with me. Do I really eat THAT MUCH food for my 3 meals? WOW (I don’t eat prepared frozen meals like lean cuisine, etc)

    I got home late so there was the temptation to eat out instead of cooking a late dinner but eating in prevailed! A huge wrap that would rival Chipotle but not in the sodium or calories. :)

    I had extra baby carrots and red potatoes so I made a creamy potato & carrot soup. Just used some veggie broth, diced onions. Chopped up the carrots and potatoes, threw them in and cooked for a short time. Let is simmer, took the ingredients and put in a blender. OOOH it was so good and creamy. Paired it with a tossed salad & dinner was done!!
