In honor of our one Week Eating IN Challenge I have to share my absolute favorite Michael Pollan quote/Food Rule.

I tried frying my one own fries ONCE! Never again, now I bake them. :)

How’s the challenge going? I’m on day 5 and loving it!! husband is also still going strong!

2 eggs with sausage links and leftover broccoli from last nights dinner I’m trying to make Friday Egg day for the kids, it’s sort of working. :)
Apple and peanut butter Was feeling a little hungry, not late enough for lunch yet.
Leftover Black Bean and quinoa soup turned mushy stew topped with a bit of grated cheese My “mistake” recipe yesterday. Still yummy. I’m going to have to give this another try!
Blender Brownie Last one of this batch!
Handful of chocolate goldfish The 3-year-old was snacking. I couldn’t resist.
Tomato and Feta Stuffed Cucumber Cups Quick snack, I’ll share on GreenLiteBites asap!
Homemade chicken and broccoli with ginger sauce Family liked it my version out our fav Chinese take out dish!
Air popped pop corn with olive oil and sea salt + 2 chocolate martini’s  I hosted a girls movie night! SO fun!

    We played the French Toast card for dinner tonight. It’s quick, easy and I always keep the ingredients on hand.

    We had cereal for dinner! I know – I didn’t “make” it myself but I think cheerios are a lot better than Wendys ;) (I hope!) This weekend I’m making a savory marinara to have Sunday night with some garlic bread and whole wheat pasta! YUM!

    Homemade pizza..well all except the crust. Made our own pizza sauce, then topped with shredded chicken, parsley and lemon pepper. Yummy and no cheese (they didn’t even miss it) ;-)

    Felt a cold coming on so I made a batch of chicken noodle soup. We usually hit a local place on Fridays but stayed in instead. We’re really enjoying this challenge.

    Yes! We don’t fry anything in our house (mostly because of the mess factor). Baking is my method to cook fries when we do have them too :-) On another note, we haven’t eaten out all week (and I almost caved last night when everyone wanted Chick-fil-a, but instead I made chicken and rice from leftover rotisserie chicken!). Pure torture for the kids!

    *Really* wanted to go out last night (Friday) but decided to stick with it – made salmon with a sauce I copied from one of my favorite restaurants (now closed, alas!) Still going strong!

    FInished up our time at the beach with a “picnic dinner” we made from leftovers and ate in the airport. It was warm enough to grill tonight for the first time in 5 months! So that was a treat for our first dinner home.
