The One Week Eat IN Challenge!

I’m so excited to be collaborating with the American Heart Association (AHA) this week!  In honor of National Nutrition Month, we are announcing an eat IN challenge to inspire you to not only cook more at home but to do it in a heart-healthy way.

You guys know how important this subject is to me, especially after my step-dad’s recent open heart surgery, but with my husband’s family history mixed in I’m on a mission to make my family (and myself) as healthy as possible because I want to spend as much time with them on this earth for as long as possible.

So here’s the deal… Starting today, YOU and I (and to much The Husband’s dismay) our families must eat in every night this week. I’m purposely including lunches for The Husband and I because that’s currently where we struggle. Believe me, he is DISTRAUGHT right now. When I told him this plan a few weeks ago his exact reaction was…

Ahhhh I love pushing his buttons. All joking aside, he’s on board but this is not his thing. He just isn’t as motivated my health as I am. :(

AHA Red Prize PackAnyway, the AHA is providing fun red prize packs for 12 of my readers who are willing to commit to eating IN with me all week. The prize pack includes a Heart Health magazine, a red oven mitt, AHA healthy recipes, a red KitchenAid can opener, a red KitchenAid potato peeler, AHA branded measuring spoons and an awesome red Giada whisk.

I’ve struggled with how to pick the winners for this challenge as it is going to have to be somewhat of the honor system but I’ve come to the conclusion that if you are willing to cheat to win then so be it. You’re the one who has to live with yourself and really, is it worth it?

I know. I know. I’m naive but I have faith in people. So here’s the way I’m going to run this:

  1. Leave a comment on this post if you are willing to take on this challenge with me. This will enter you into the contest. 
  2. Update me on your progress at least 3 times this week on any post. Just be sure to use the same email address or Disqus account. 
  3. Next Monday stop back for my recap and leave a comment sharing your experience with the challenge. Was it easy? Hard?  Did you learn anything?
  4. I will then randomly pick 12 winners on Wednesday, April 2 from those who have met the above requirements.

I will be posting tips and updates all week as well, so there will be a post every day for you to interact with. Please comment daily if you want to do this with me in real time. I will be sharing my food journal each day plus tips from the AHA website on how to cook more and healthier at home. I’ll also share some recipes on GreenLiteBites, of course.

I’m posting this as early as possible but if you have already eaten out have no fear — just start from the time you read this to the same time on Monday or Tuesday of next week. That’s why I’m not picking the winners until Wednesday.

I’ll be back later tonight with my food journal and some first day thoughts. I don’t normally like posting more than once a day but I’ll make an exception for this.

    I’m at work, and I didn’t bring lunch today, so mine will have to start with dinner. I’ve been massively depressed, at least partially because of this never-ending winter we are having (I live in Syracuse, NY), and therefore I haven’t cooked (or gah! Cleaned my kitchen) in a long time. I will not only have to commit to cooking, but I’ll also have to commit to cleaning and giving my depression the attention it deserves so I can get out of the funk and actually do something good for myself! A challenge might be just what I need to get on with things…

      Mehgann – I’m right there with you! This weather has been REALLY bringing me down and last night I was so funk filled I didn’t even bother with dinner. We literally ate goldfish and crackers. I know, mother of the year, right? Let’s do this together and maybe by Friday we’ll be rewarded with some nice weather. :)

    Count me in! This is something we struggle with at my house too. Good thing I packed breakfast and lunch today!! Yesterday we did a freezer inventory so I know I have delicious healthy choices at home! (And I sympathize with Mehgann – done with winter!!)

    I’m in! We normally eat in but I have been getting food from the restaurant I work at 1 or 2 of the 3 nights I’m there. I used to be great about bringing my own food so I could control it better so this is perfect to get me back on track!

    I’m all in. My dad just underwent open heart surgery this weekend. It’s definitely inspired me to cook healthy meals for my family! Up tonight is lemon pepper chicken tenders with a side of quinoa and tomato salad and a side of roasted broccoli. Can’t wait :)

    Oh I’m in! Starting tomorrow as I already grabbed a prepared salad when I was grocery shopping. I’m excited to try this. Lunch is the challenge meal for me too! I do well with breakfast and dinner because it’s always planned. Lunch? Not so much. I get busy or am out and push until I’m starved and want to eat the first thing I see. It is also the time I am easiest to cave-in to a craving. Good Challenge! Thanks for the opportunity!

    I’m in as long as a dinner we have at our preschool doesn’t count as “eating out” :-) It’s a fundraiser for the school and the teachers are cooking…we are paying for plates and eating there so it’s not technically cooking for ourselves and eating in. Can I still join??

    Can your Canadian readers join in Roni? I need to try and make this happen. As a student (and freezing Canadian) it’s so easy to grab a Tim Horton’s bagel or a food court salad when I’m busy in the mornings. But it helps me stay organized AND save money when I prepare all my meals in advance. I will try my best. For tomorrow – cabbage soup from the freezer, couscous and lentil bowl, and a smoothie on the go for breakfast!

    Ha! Not only will I take this challenge, I accept it while on vacation in Myrtle Beach with my husband and our 4 and 6 year old boys! We started tonight by making a “kitchen sink salad” with a bunch of ingredients we had on hand in the condo.

    I’d love to accept the challenge!! I’m not actively losing (pregnant!) but were always trying to stay healthy and make smart choices food wise. We do pretty good but also do our fair share of pizza/Chinese/bagels etc.

    We actually gave up going out to eat as part of Lent this year so we haven’t eaten out since March 5. It was hard at first, but the secret it having a meal plan. I try and meal plan for as much of the month as possible. My husband also gave up gluten for Lent which is actually harder because we eat a lot of gluten in this family. Monday night I had a whole chicken in the slow-cooker with potatoes and carrots. Tonight is broccoli and beef with rice. Tomorrow is chicken pot pie (without the crust) that I had made extra of a while back and we have in the freezer. Thursday is Salsibury Steak w/mashed potatoes and peas. Recipes is from a paleo site I found. Thursday is orange roughie for the husband and fish sticks for the kids. With home fries. Saturday is grilled turkey burgers, slaw and corn. And Sunday is BBQ chicken swekers on the grill with baked potatoes and roasted veggie!

    The hard part for me is that I manage a restaurant so honestly, 5x a week I “eat out” I try and pick healthier meals but honestly, it’s free so mostly I try and stay in my allowance for work.

    So happy you are affiliated with the AHA; very important organization. While I love the idea of the challenge and we do eat most of our meals in already (and I take my lunch to work), will pass on the challenge this time as we have some events already planned. When I go out I check the restaurant tips on the AHA site for healthy options.

    What a great challenge! Since moving cross-country, my husband and I have really made an effort to eat in more and save some money. I’ve taken over planning our meals for the week which has really helped, especially making sure we have enough leftovers to cover lunches!

    I would love to try this Challenge! Every week my husband finds a reason to meet our friends for Pizza or at Keno and I am desperately trying to stay on a work out regimen and watch my portions. Just started this past week with 530 am workouts and weight lifting. I’m in!

    I’m in! My family does not eat meat during Lent, and it is a lot easier to eat in during Lent. Last night we had Bean Tostadas and tonight we are having Wheat Pasta with homemade sauce and a big salad. Good Luck everyone!

    It’s Friday! Thank God. I made it through my first hard week of workouts and feel like, well, no pain, no gain right!? My niece is coming to stay with us for the weekend so we are trying to plan some good meals without eating out! So far, so good!

    Made it through the weekend with no problem. This was easier than I thought once I set my mind to it! Still keeping up on my early AM workouts and starting to finally actually feel some more energy this week! I feel good and am gaining more confidence everyday! Thank you for the Challenge!
