Eat IN Challenge – Dinner Day 1!

I got everyone mid-bite! lol

Tonight was our first successful Eat IN Challenge day — click  here if you don’t know what I’m talking about. I made a steak and pepper dish and paired it with a sweet potato. It was awesome! Now to come up with 6 more family-approved ideas meals, that’s the biggest challenge. ;)

What Why
Special K Nourish™ Cranberry Almond Hot Cereal Ate in the car on the way to the gym. These are my back-ups for busy mornings when I don’t have time to sit with the kids for breakfast.
Almond Butter Banana Bites  Post-gym quick bite while working to catch up on a Monday morning
Quinoa Salad With Swiss Chard and Radishes I had a cup while I was posting the recipe on GreenLiteBites. :)
Spicy ‘Noodle’ Bowl With Peanuts and Cilantro Lunch – cooked a spaghetti squash this weekend so I could use it all week.
Cashews and dried blueberries An afternoon snack. I love this combo especially when I add an ounce of cheese but I’ve been overdoing it in that department lately.
Steak, pepper and onion stir-fry with a sweet potato on the side Dinner with the family made with mostly CSA items!
Homemade Blender Bean Brownies Dessert! recipe coming this week to GreenLiteBites!

    Let’s see. Protein bar on the way into work. Oatmeal with protein powder mid-morning. Leftover homemade chicken marsala (from dinner last night) and broccoli/cauliflower for lunch. Pita chips and cheese for snack since dinner would be late. Teriyaki chicken breast with brown rice & veggies for dinner.

      Eat clean and at home yesterday. Today breakfast and lunch at home. Dinner planned. Day two is looking good.

    I had eggs for breakfast, salad for lunch, and barley rosotto for dinner. All delish and all made at home!

    I had yogurt & kiwi fruit for breakfast, a hard-boiled egg for morning snack, a Hugh Jass salad for lunch, some turkey jerky for afternoon snack, and dinner was cabbage, sausage, & potatotes.

    Day 2 of the eat in challenge going strong here in rainy, but 47 degrees warmer than Chicago, Myrtle Beach! Declined the oldest boys’ request to go to a breakfast buffet and made “egg Mc Muffins” here in the condo and watched the waves role in through the rain before heading to a children’s museum.

    Day 1 Breakfast:Banana & milk for older kid. Milk and oat meal for everyone else. Lunch: Broken Wheat vegetable rice with yogurt.
    Dinner: Was healthy and full. Made avacado rotis( like tortillas) and channa(a indian curry with garbonza beans) for dinner. Packed the same for next day’s lunch for myself, husband and the older one too.

      Hema- I have tried homemade recipes for homemade Channa Masala, and I can’t quite replicate the flavor of a good Indian restaurant (and keep the calories reasonable. Do you have a good recipe?

    I have had 1 successful day of not eating out…and ate mostly clean. Today my goal is to eat 100% clean, and of course no eating out!

    I have to ask, maybe i eat to much, how do you make 1 squash last throughout the week! the avrg one i get at the grocery store lasts me 2 meals max

      It doesn’t last me a week. I just use it throughout the week when I want it. I usually only get 1-2 meals out of it depending on how i use it.

    I came home this afternoon to find my husband made dinner! Whole wheat thin spaghetti with marinara sauce, corn, garlic bread and salad. He’s a keeper. As I’m sitting down to read the blogs now, I’m realizing I’m going to a going away lunch for a friend Thursday so I guess I’m out! Oh well, I’m going to try my best the remainder of the week. Had lunch skiing today and completely forgot about this eating in thing, but I’m happy to say I ate sabra hummus and pretzel crisps instead of the fried special they were offering. Great job to those of you who remembered!

    I was excited to continue our eat-in week with a fun breakfast for dinner last night! The kids loved it and I took the opportunity to turn our usual Bisquick pancakes into healthy from scratch pancakes with whole wheat flour, oat flour, and farm fresh eggs. They LOVED them! So excited to keep going with the rest of the week!
