One Mom’s Journey from Fat to Skinny to Confident

A Saturated and Successful Sensational Sunday

This is how it looked ALL weekend.

The weather has been SO depressing for so long. It was even cold enough today for snow. SNOW!

Ugh. I don’t want to talk about. I know most people are experiencing the same if not worse. I just can’t believe how much it’s been affecting my mood.

Anyway, the day started with a game of Candy Land with my Little Alligator.

This was his reaction when the game was over and I wouldn’t play Sorry.

Ahhh, I love 3. :)

I decided there was no way the One Week Eat IN challenge wasn’t going to end a success so I put dinner in the crock pot.

That’s pork roast and sauerkraut. Something totally new for us.

With dinner in, we turned our sights on breakfast. Little Bean and I made a batch of blueberry and chocolate chip pancakes.

They came out great!

I basically used this recipe and modified it adding some flax meal, frozen blueberries and mini-chocolate chips.

After breakfast I started folding laundry while Evan played trains and talked my ear off about everything and anything.

The awesome side of 3. :)

Soon we were joined by Dad and Big Brother and our family game of dodgeball ensued.

The 4 of us stayed downstairs for quite some time just playing. It was really nice.

Of course no day would be complete without some mesmerizing video game time.

Cereal sharing with Dad.

Gloomy days call for big batches of homemade soup.

I’ll definitely be posting that one on GreenLiteBites later this week!

We all ate it for lunch and both kids liked it even though it became a grated cheese fiasco.

My little robots.

I decided to take them to one of those indoor bouncy places because we just had to get out of the house.

The kids had a great time. The staff there were really great with them.

We came back and feasted on our slow-cooked pork.

Before bed, a few chores.

And a few stories.

So that was our day. Everything really is saturated but that’s OK, our One Week Eat IN Challenge has been a success!

I’m not going to post my food journal table today. I did a lot of picking here and there so it wouldn’t be accurate anyway.

Hope you had a great weekend! I’ll be back tomorrow with a final post to wrap up the challenge where we can all share our thoughts and experiences.

I’d love to hear your story or thoughts on mine.

However, to prevent the massive amounts of spam I was receiving I have turned off comments on any post older than 5 days old. If you'd like to leave me a note regarding this post or anything really try me on twitter (@RoniNoone,) my Facebook page, or even IG (@RoniNoone) I'm so sorry for the inconvenience. I never thought I'd have to do this but it's gotten way out of hand and comment management has become simply too time consuming to manage.

Looks like a great Sunday! We always love a good bounce house. My eat in challenge was almost derailed by the hubs and kids (who are not participating with me…husband traveled all week). They insisted on McDonalds for dinner (they can’t turn down $1 nugget Sunday)….so I went with them but then had my own dinner at home! (The steamfresh couscous with spinach is my go to dinner when I’m eating alone!)

The challenge went well for us, too! Today’s hiccup occurred when a relative who was visiting from out of town called to see if we want to go out for dinner. We politely declined and invited them to come over for coffee and dessert, which they accepted. The blender brownies were a hit!

I can honestly say that the eat in challenge was – gasp – easy! We don’t have much desire for high prices meals out on the town so it was quite the money saver and much more delicious!

We had success as well. Cheesy chicken, broccoli, and sweet potatoes.

Ok, I just have to ask – how do you get away with never using napkins with your meals?! Especially with the little ones?

I never thought it before. A few years ago I started weaning us off more and more paper products. We usually grab a kitchen towel or a paper towel (the one paper product can’t give up) and share it at the table.
