I have so much swimming in my head I’d love to share but it’s getting late and I REALLY want to be well rested for tomorrow. Just in case you missed the million times I mentioned it, I’m going on the “Today” show tomorrow morning to talk about this recipe.

“Today” is starting a new segment about healthy recipes. I and two other women who have healthy burger recipes are the first to appear. We present our food to Al and Willie and then they will then pick a winner.

I have no hopes of actually winning, I’m just ecstatic to be on the show! I feel like it’s such a great opportunity to promote GreenLiteBites. I mean when’s the next time I’m going to be on national television LIVE?!?

Anyway, I traveled with Mom by train to NYC this morning so I thought it would be fun to share a few scenes from our day.

First, have I told you how much I love New York?


It feels like home even though I’ve never lived here.

Well, that’s not entirely true. I used to live in Brooklyn when I was super young and I spent summers with my dad on Long Island, but never Manhattan. I just visited a lot.

After we checked into the hotel. we strolled around the city, people watching and sightseeing.


We decided on Bill’s Bar & Burger for lunch and it was AMAZING! So amazing I totally forgot to snap a photo until I was done.


After lunch we relaxed a bit before heading to my rehearsal.


Let me just say, so far, everyone I met and interacted with that works for the “Today” show has been an absolute joy. Just really friendly and down to earth.

It’s refreshing.

After the rehearsal we hit a walk-in nail place and I FINALLY got my toes done.


With soft feet and painted toes we hit the streets and walked and walked and walked. Both Mom and I could seriously stroll around Manhattan all day. We don’t need an agenda.

After about an hour we decided on a Brazilian restaurant for dinner called Ipanema.


I got a dish called Vatapá, shrimp and monkfish in a coconut and peanut paste.


And Mom ordered camarão no coco, a shrimp dish with coconut milk.


We decided to finish off the meal by sharing a slice of raspberry cheesecake.


We strolled back with our full bellies and are now relaxing in the hotel looking for something on the TV.

I’m planning on waking up a little early to run in Central Park before I head over to the studio. I think it will help me manage the stress a little bit. I’ve been feeling pretty self-conscious lately and this whole experience is shoving me out of my comfort zone yet again. I’m even wearing a sleeveless shirt. You guys know how I feel about my arms, right? Yeah, I’m facing that head on.

Ok, I need to wrap this up. It’s sleepy time.

Oh! Which reminds me, my segment is scheduled for the 9:30 half hour and we’ll be teasing it about 9:20.

    Roni, where do you stay when you go to NYC? I have a girlfriend that traveled there and she stayed in NJ and then traveled over to NYC every day. I want to travel to NYC In the fall, but never having been there, don’t know how to go about finding a decent or good location for hotel. Any thoughts?

      This time NBC made my travel arrangments but I like the Hilton in’t between central park and Times Square.

    I just watched the segment online, and it was great. You definitely got more “air time” and got to talk more than the other 2! And you did it well…look out Food TV, you may have a new show in your near future, called “Green Lite Bites”, featuring our Roni. Even though yours didn’t win, you made the best impression, imho!

    I’ve been lurking on your sites for about a year- taking in your advice and making a few of your recipes for my picky husband and two picky daughters. I didn’t realize how much your blogs were an influence until this morning when my daughter turned on the TV and the Today show was on. It was your segment and I got so excited for you. “That’s our lady! that’s our recipe lady!” I said running to turn up the tv and prevent the switch to the Disney channel. “The banana ice cream lady?” She asked referencing our most memorable foray into your recipes (long story involving my missteps with our food processor) so apparently you are The Recipe Lady or The Banana Ice Cream lady around our house. :) congrats on all your recent exciting events this summer and thank you soooo much for all your real world, easy, quick and lite recipes and good advice.     I saw your segment on The Today Show, before reading this post. You did awesome! One of the first things I noticed was that you had a sleeveless shirt on. Having read about your self consciousness with your arms I thought to myself ‘you go girl’! Way to put yourself out there and rock it! You looked amazing!!

    I watched you live this morning. You were great! Loved the segment. All of your burgers looked delicious! But, the best part is reading about what a great time you and your mom are having together. You really are blessed to have such a great relationship with your mom!

    I saw your show and on Saturday at my WW meeting in Cincinnati someone mentioned the Today Show and your burger for a replacement instead of a regular burger–you are really reaching out to people—-congrats Roni.
