I’m SO excited Vitalicious came out with a new VitaCake flavor! If you remember last year, the then-6-year-old and I did a video review of the their new Fudgy Chocolate and they were a big hit …

Clocking in at only 50 calories with 1g of fat, 12g of carbs, 4g of fiber and 2g of protein, they make a great go-to when you just want something sweet.

Honestly, I didn’t think they could top the Fudgy Chocolate ones but they did. The Chocolate Raspberry are just as yummy but, well, better because they have raspberries in them, and yes, REAL raspberries. You actually get that raspberry seed grittyness I love so much.

Because I’m a cheesy blogger I attempted to take a photograph of me eating one today for this post and this is what I ended up with…

Why am I pointing? 

I’m going to be honest, the dorky tech side of me REALLY wants to turn those into an animated gif. I just can’t help myself! However, if I did there’d be a film flub since the photos were actually taken out of order. I’m sure fellow dorks spotted it right away. ;)

Anyway, I’m getting off point as usual! I’m actually here to not only announce the new flavor but to host a contest. You may have noticed I’ve severely reduced both product reviews and giveaways on the blog. They get out of hand, fast, so I only agree to host them for my favorite brands and products. I know I’ve said this before, but Vitalicious has always supported me and my blog.

Chocolate Raspberry Mini VitaCake “Recipe” Contest Deets

Vitalicious LOVES when folks come up with fun ways to use their products (it’s another reasons I like them so much) and they are looking for new ideas using the Chocolate Raspberry Mini VitaCake. A couple of weeks ago I came up with this for #DailyYogurt on Instagram…. (Note: #DailyYogurt is my attempt to come up with a fun way to eat plain Greek yogurt daily. Click here for more examples)

That’s 1/2 cup of plain Greek yogurt topped with a cubed Chocolate Raspberry Mini VitaCake (I cut it frozen,) frozen raspberries and just a teaspoon of chocolate syrup.

It. Was. DIVINE!

And only about 125 calories.

Not bad for a filling bowl of yumminess, right?

    I love VitaCakes!! I like them frozen because it takes a little more time to eat.
    Anyways how about a Vita Whoopie Pie, something us Mainers LOVE!
    *Take 1 Chocolate Raspberry Mini VitaCake (thawed) cut in half lengthwise
    *Take 1 T. Cream Cheese and Blend with 1 T. PB2 or smooth Peanut Butter of choice
    * Spread mixture between the two pieces of VitaCake
    *Put together like a sandwich and you will have a Chocolate Raspberry Peanut Butter Whoopie Pie!

    Make a layered cake with them!

    1. Slice Vitacakes in half horizontally
    2. Layer Vitacakes with fat free cool whip and strawberries in the fashion of a lasagna.
    3. Freeze for 15 minutes


    Per slice:
    170 calories
    2 grams of fat
    4 grams sugar

    Make a greek yogurt “icing”
    1 cup of greek yogurt (any fat content that works for you. some people believe that full fat dairy helps you lose weight, some don’t want to use the calories)
    1 tsp vanilla
    2 tbs Honey ( could use something else-I like honey)

    Fresh rasberries or cherries
    and shaved dark chocolate

    Layer the cake and berries/cherries in a cake pan
    Top with a bit of shaved dark chocolate

    Take a vitacake and cut into cubes, place in a bowl.

    Use 1 med frozen banana and 2oz raspberries to make “ice cream” and top cake with this mixture. Then top this will fresh/frozen raspberries, 1T chopped almonds and 2T Light whipped cream. Delicious ice cream brownie sundae!

    Wake up to French Toast ala Mini Vita Cake!

    Cut Vitacake in half lengthwise. Then soak it in a mix of 2 egg whites, cinnimon and a dash of vanilla. Spray a pan lightly with cooking spray and drop slices in gently. Turn.Remove when browned.

    Top with fresh raspberries or low sugar raspberry preserves, a dash of powdered sugar or some sugar free coolwhip. Finish with a flourish of light chocolate syrup! Can I get a yum yum?

    I would make a Vita Cake trifle!

    Cube up enough vita cakes to cover the bottom of a trifle bowl.

    Arrange a layer of raspberries on top.

    Create a 3rd layer by mixing greek yogurt and Truwhip (or RF Cool whip)

    Repeat these layers two or three times depending on how big your bowl is! For the top, artfully arrange with dollops of whipped topping and raspberries with just a drizzle of chocolate (or raspberry) syrup.

    Packed with a serving of fresh fruit and a protein punch from the yogurt, this is what healthy desserts should all taste like!

    Ice cream sandwich! Cut a Chocolate Raspberry Mini VitaCake in half. Add a scoop of your favorite (softened) low fat ice cream or yogurt. Roll the sandwich in colorful sprinkles. Freeze for an hour and CONSUME!

    I love to make VitaCake “sundaes.” Here is my recipe!

    1 small banana
    1 mini raspberry VitaCake
    2 TBS thawed frozen raspberries
    1 tsp chocolate syrup
    1 TBS TruWhip Light

    Using a frozen banana with either a Yonanas or a food processor, create your “ice cream” base. Top with a crumbled or cubed raspberry VitaCake, crushed, thawed frozen raspberries, and chocolate syrup, then add TruWhip.

    Nutritional Totals:

    176 calories
    2 g. fat
    3 g. protein
    43 g. carbs

    PB&J Vitacake style- Split lengthwise, spread 1 T PB and 1 T Raspberry All-Fruit Jam, stack sides back together. Yum!

    I dont really have a name for it but this is how I like to have it for desert now and again, and I usually have these items on hand:

    In a small pan I put a can of sliced pears (canned in pear juice) add about 1/2 the juice to the pan, add 2 tablespoons of raspberry low sugar jelly or preserves or Strawberry (if you don’t have raspberry). Add a teaspoon of cinnamon and simmer until the jelly/preserves have melted in and the juice is slightly thicker. Heat 1 Chocolate Raspberry Mini VitaCake in a bowl in the microwave as directed on package. Pour 1/2 the pear mixture over the VitaCake and enjoy. Don’t forget to make one for your loved one for the other half of the pear yummy goodness!

    I eat 2-3 Vitatops daily – so yes, I am obsessed. This is my favorite way to eat it and would be awesome with the raspberry mini vitacake for a snack:

    Raspberry vitacake toasted

    1/2 cup Fage Greek yogurt

    2 teaspoons chia seeds

    sweetener packet

    2-3 teaspoons dark cocoa powder

    Put all ingredients in a bowl except for vitacake and mix well

    Put toasted vitacake on top and break up, mixing into yogurt

    Voila! Amazing snack!!

    Prepare two packages of sugar free instant chocolate pudding using 2% milk (don’t use 1% or skim/fat free milk because it wil not set properly) Break up the VitaCakes into small pieces-enough to cover the bottom of a large clear trifle bowl. Layer the VitaCakes, pudding, and fat free frozen whipped topping (thawed) Repeat layers ending with whipped topping.Garnish with fresh raspberries and chocolate curls if desired.

    I love to take some lite cool whip and add some pb2. I then cut the vita top in half, smear the cool whip on it and place on the second half. Freeze it for a bit and you have a fantastic homemade ice cream sandwich!!

    Thank you and Vitalicious for such a generous giveaway! I’ve always loved the combination of white chocolate with raspberry, so my creation is White Chocolate Raspberry Torte! The recipe is:
    1 Chocolate Raspberry Vitacake
    1 Tbsp. white chocolate chips
    6 raspberries
    1. Place the Vitacake on a microwave-safe plate
    2. Evenly sprinkle the white chocolate chips over the Vitacake
    3. Melt in the microwave on a medium or low setting until the white chocolate chips begin to lose their shape
    4. Remove the Vitacake from the microwave and gently spread the melting chips with a knife
    5. Top your creation with the raspberries
    6. Serve immediately for a gooey, chocolatey treat or let stand for a minute to allow chocolate to firm up and enjoy a decadent-tasting 126-calorie fudgy bar!

    I’m really excited about finally entering one of your contests! This is one of my favorite ways to eat the chocolate vita-cakes but I think it will taste even better with the chocolate raspberry vita-cake. Here’s what I do: I take mandarin oranges without any added sugar and add them to a small bowl of rasberries. I do add some of the juice depending on how many rasberries I use. I eyeball this and use about equal amounts of oranges and rasberries. Then I take about a teaspoon of orange marmalade and spread that over the vita-cake. Then I take about 1-2 tablespoons of lite cool-whip and add a drop of rum extract. I mix this together until its fully incorporated. I take about 2 tablespoons of the orange and raspberry mixture and spoon it over the marmalade covered vita-cake and then top it off with the cool whip mixture. Sometimes if I have it in the house I’ll add a layer of the strawberry laughing cow cheese before I add the cool whip and then sprinkle some crushed graham cracker crumbs on top or a few more berries and oranges. It looks really pretty if it’s served in a small clear glass.
