Less Processed Day 3!

I’m on a roll now! Momentum is a funny thing.

This morning started off in a rush. I hit the gym early before the boys woke up and then the husband ran off to platform tennis. All I had time to grab was one of my oat and nut bars.

Recipe coming soon, I promise. I’m behind. Tonight I only had time to post my video on cooking spaghetti squash in the oven.

When I made breakfast for the boys I spit an apple with Little bean.

He’s starting to eat them! Remember, this is the kids who refused most fruits!

Lunch was more of my leftover turkey meatballs and sauce over spaghetti squash. This time I added some fresh spinach in there too.

The boys had meatball subs. I didn’t even miss the bread.

After lunch some football and grapes!

He may look like he’s gonna eat them but nope. The pattern was pick, put in mouth, make a face and then give it to Daddy. He must have done it at least 10 times.

Dinner was a crockpot meal I started in the morning.

Pork roast with potatoes, sweet potatoes, parsnips, carrots and radishes.

The only thing not pictured was some popcorn I air popped and topped with Basil Salt. Little Guy and I split it while watching The Green Lantern. His choice not mine.

Now The Husband and I are finally seeing Cowboys and Aliens. Yea, we’re pretty behind on our movie watching. I may grab a harndful of nuts too. I’m a little hungry and it’s still early.

Oh! and I took the boys on a fall hike this afternoon.

It was a gorgeous day! Check out some on the pictures I instagramed. Fall is in full force!

    I made spaghetti squash and meatballs tonight! I usually use rice pasta, but I’ve been trying to eat lower carb. So delicious, didn’t even miss the pasta! I also made an oatmeal bake. I mixed it up a bit by adding pumpkin, walnuts and dried cranberries. We eat this as an on-the-go breakfast during the week. I do a fair amount of networking for my business and always bring my own breakfast so I eat healthy AND save money. Have a great week!
