So it’s time for day 2 of my unprocessed food journal but it’s also weekend quote time. Appropriately, I came across this gem today…

Good thing I’m having a blast! ;)

My 2nd less process day totally rocked. I’m saying "less" instead of "un" because I don’t want to give anyone the wrong idea. I’m not claiming any of my choices to be perfect. I’m just trying my best to eat more yummy whole foods.

Breakfast was a hard boil egg and some orange segments.

Little guy enjoyed the same. Although he’s not the biggest orange fan.

After breakfast we experimented with a granola bar idea.

It turned out great! Not quite a granola bar but yummy all the same! I’ll post the recipe as soon as possible.

Lunch was Warm Cabbage Salad with Carrots and Thyme that I added some homemade turkey meatballs too.

It was turned out pretty good even though it look like a mess.

A few hours later I was stuck at Little Guy’s swim class with nothing but a vending machine. This was the best choice I could come up with.

Not bad, right?

Later, I was prepping some of the vegetables I picked up the farm and just had to sneak a few bites of this kohlrabi.

Dinner was spaghetti squash topped with homemade sauce and turkey meatballs.

Side Note: I recored a quick video on how I made the squash. More soon!

When the kids went to bed I grabbed one more of my "granola bars" I was hungry and I wanted to see how they tasted.

Yum-my! :)

    I’m totally cheering you on for the unprocessed eating. Hands down, eating unprocessed ( think mainly primal/paleo) has been the very BEST maintenance strategy EVER! Lets face it, eating unprocessed foods has been the ONLY weight maintenance way of eating that has ever worked for me. And I’ve been looking for 40 years,

    Anyhoo- you’ll find a lot of people who eat unprocessed will stick to a “template of foods” that are say 90% unprocessed and maybe 10% processed. But we pick the other 10% carefully and mindfully. There is no perfect way, only the way that works for you and your body.

    Fabulous and keep up the good work. The less processed food you eat, the less often you’ll crave it and weight maintenance becomes easier- IMO.

    Looking forward to your recipes. I’ve found a bunch of family friendly recipes that are totally unprocessed in Sarah Fragoso’s -Everyday Paleo Family Cookbook. (Costco or Barnes and noble or amazon) Oh, yummy-ness that my Jr. Family member loves, too.

    Less processed is my goal every day, too. I don’t think I’ll ever go completely unprocessed. Like with the vending machine, I just do my best to pick the best prepackaged food I can. Good job and HOORAY for Kohlrabi. : )

    You are doing good! Can’t wait to see day 3. Got a question for you about the spaghetti squash…what does it taste like? Looks so yummy and there are tons of recipes just scared to try it!!!!

      It’s a very mild, slightly sweet taste. I really love it. It totally takes on the flavor of whatever you cook it with and gives a nice hearty texture without being too heavy. Here’s some of the ways I use it… http://greenlitebites.com/tag/spaghetti-squash/
