A few months ago Little Guy and I had a blast reviewing the new Vitalicious VitaCakes. Check us out…

As you can see, my favorite VitaCake pairing is Hot Cocoa. I love, love, LOVE a frozen VitaCake dipped in a hot cup of chocolate.

This gave me an idea. What if I hosted a VitaCake Date Mate contest where you share your favorite or most creative way to eat a VitaCake.

Never had a VitaCake? No fear! You just need to leave an idea to enter. How fun and creative can you get with a 50 calorie piece of chocolate cake? Maybe a little frozen yogurt on the side for an a la mode? What about cut in slices and made into a parfait with berries and whip cream? The possibilities are endless!

We are looking for the most creative idea while still being in the lighter/healthier realm. No smothering the VitaCake in butter and topping with decadent ganache. Think fruit, yogurts, granola, nuts, etc.

The most creative idea (as judged by Vitalicious) will be featured on the Vitalicious Facebook page and the winner will receive a 24 pack of VitaCakes and 3 additional packs for 3 of their friends. This contest is all about sharing the love. Share your VitaCake ideas and then share your prize with your friends! It’s a win-win-win-win-win!

    Maybe a healthy better then sex cake, the cake being thinly sliced lengthwise with a drizzle of light chocolate sauce, a thin layer of light whipped cream (homemade or from a can-and the can stuff is not bad for you! make sures its real cream (none of that oil business) and check the stats! you will be surprised! ), and a few health bar chips…done with the right proportions, this could be an out of this world treat without breaking the bank!

    Enjoy your Vitacake with some fresh rasberries, since rasberry and chocolate pair so well with one another and it’s also a great on-the go snack! Nuke your vitacake for about 30 seconds in the microwave to get it nice and hot, mash up some rasberries until juicy and spread over the top of the Vitacake! Enjoy!

    Mix 1 oz of softened FF cream cheese, a tad of vanilla flavoring, and 1 tsp of brown sugar together. Spread on to of the VitaTop that has been microwaved for about 20 seconds. Then top with fresh sliced strawberries and maybe even a tiny drizzle of LF or SF chocolate syrup… chocolate cheesecake, anyone?

    I would make a trifle using the vita cakes. Break them up and layer with fat free or low fat whipped cream, fresh fruit, and repeat!

    I love a vanilla vita-sundae! 6 ounces vanilla yogurt of your choice topped with sliced strawberries, a crumbled vita cake, and a little dab of whipping cream on top.

    I like cut one in half lengthwise after having toasted it for a few seconds. Then spread one tablespoon better n peanut butter in the middle with some slices of bananas. Then add about three tablespoons of cool whip lite to the top. Add the remainder of the banana to that. Such a decadent but low calorie dessert.

    4 ideas:
    1: slice in half lengthwise. Spread light cool whip in the middle, add a mint leaf, and put back together and freeze for a light, refreshing dessert.
    2: slice in half lengthwise. Spread one teaspoon of Nutella or almond butter. Eat right away or freeze.
    3: Chop VitaCake in small pieces. Add brewed coffee (or espresso), VitaCake, splash of light almond milk (or half and half) and some ice….blend for a frozen treat
    4: Chope VitaCake in small pieces. Place in a small bowl and top with your favorite flavor of sugar free pudding. Add strawberries to the top and enjoy!

    I love a warmed vitatop with plain Greek non fat yogurt and a little cinnamon sprinkled on top, or apple pie spice sprinkled on top. Also warm a vitatop, slice, and make a delicious “sandwich” with a Laughing Cow cinnamon or strawberry cream cheese wedge spread between the layers, yum!

    Here’s one the kids love too! Top the vitacake with some sugar free vanilla pudding and lite or sugar free cool whip. Drizzle this yummy goodness with a little chocolate topping!! I like to add slivered almonds for the adults! Yum! Yum!

    I bet that these would be really outstanding sliced and dipped in an beaten eggs and grilled like french toast. Top that with some sliced strawberries and some reduced fat whipped cream and OMG. That sounds like a breakfast I’d really enjoy.

    I would slightly toast the VitaCake (maybe even 2), add a dollop of cold fat free whipped cream on top of each cake, and sprinkle a tiny bit of toasted ground flax seed on top of the cream. If I wanted to make it slightly more decadent, I’d fold just a tad bit (maybe 1 or 2 tsp.) of melted peanut butter into the whipped cream and sprinkle the flax seed on top. Yum, yum, yum!


    I would make a trifle. I would first toast the VitaCake(s), cut it into cube-like pieces, and put it aside. Then, I’d take a wine glass or any other clear serving vehicle, add some fat/sugar-free pudding (any flavor, although right now I’m envisioning vanilla) to the bottom of the glass, sprinkle some fresh berries (blueberries or blackberries are my faves), add a dollop of fat free whipped cream, dump the cubes of toasted cake in, add more fat free pudding on top, fresh berries, another tiny dollop of fat free whipped cream, and add a light sprinkle of toasted ground flax seed as a finishing touch!

    I have never had a VitaCake but after reading all these comments I think I need to go get some.

    I think a they would taste good with some light Cool Whip, cut up banana & some strawberries. Slice the cake lengthwise layer the bananas & strawberries on the cake & then top with some Cool Whip.

    I think I would take a Vitacake, cut it into chunks, and place it in a small bowl. Then I would take some fat free Cool Whip and mix it with some Polaner All Fruit Seedless Raspberry preserves, and place a dollop (or 2 or 3) on top of the cut up cake pieces. Polaner has many flavors too so you could do this with whatever flavor tickled your fancy at the time.

    I used to LOVE Vitamuffins and cakes, and they were a big help when I was losing/maintaining my weight. Now that I’ve been diagnosed as gluten sensitive, I can’t enjoy them any more. I think it’s time the Vita peeps came out with a gluten free variety, don’t you?

    I bet these would be great paired with some banana “ice cream” which I make by pureeing a frozen banana and some dark chocolate almond milk. I was always thinking how it would be good on top of brownies and this is even better than brownies!

    For each cake, beat together a light cream cheese wedge, about 1/4 c greek yogurt and a teaspoon lemon curd, slice cake down the center and fill, refrigerate until ready to serve. When ready to serve, top with generous portion of sliced strawberries (or blueberries) and drizzle the top with approximately 1 tsp warmed reduced sugar raspberry or strawberry jam. Eat with a teeny tiny fork.

    I love taking the chocolate vitacake and breaking it apart with a 1/2 cup of plain Greek yogurt, about 1/2 cup blueberries, and topping it with a couple tablespoons of low fat cool whip. Sometimes I even add a little chocolate syrup.

    1. Cut vita top lengthwise and spread laughing cow cinnamon cream cheese on it. Top with whipped cream!

    2. Cut the vita top and put Arctic Zero ice cream in the middle. Makes a great light ice cream sandwich. YUM!

    I have been lurking on your blog for a while, and just wanted to tell you that you are such an inspiration. In a few weeks I will be running a half marathon. Saturday I did a 12 mile long run and was amazed at how far I have come since I began training in January. Anyway, since January 1 I have lost 21 pounds and plan to lose about 25 more.

    I would recommend slicing the vitacake long ways, and spreading some sugar free raspberry or strawberry jelly on it.

    I find a simple approach is best since the product is so tasty to begin with. Just top the Vitacake with fat free redi whip, berry of your choice, & top it off with a little sugar free chocolate syrup! Enjoy!

    Love keeps things alive and moving…

    A recipe for two seniors in love that desire to keep trim and add more fiber to their diet, I recommend:

    Vanilla/Orange Delight (A taste treat that helps lovers stay regular).

    Recipe is for two to share:

    Place two Fudgy Chocolate Mini VitaCakes in a small microwave safe bowl.

    Heat for 20 seconds.

    Cover with an ample portion of cold creamy non fat vanilla yogurt.

    Sprinkle on two teaspoons of orange-flavored fiber powder.

    Looking into each other’s eyes, take two spoons and enjoy a little bit of heaven.

    Make a yonanas ice cream using bananas and raspberries. Slice vitacake thinly in half. Top the fist half with yonanas banana & raspberry mixture. Place the other half of vitacake on top. then spikle fresh raspberries on. Top it all with a dollop of low fat whipped topping.

    I’m obsessed with anything s’mores flavored so I would do the following:

    1. Cut VitaCake in half lengthwise.
    2. Cut two marshmallows in half lengthwise and place halves middle side down on top of the cake halves.
    3. Place under the broiler until browned and gooey.
    4. Sprinkle graham cracker crumbs on top to finish!

    I like to keep things simple and make stuff my 3 year old will eat. We cut the vitacake in half lengthwise and just put a light layer of peanut butter in there (I know, great already) and then we slice fresh banana and layer that in there too! If this is dessert, we plop a small scoop of ice cream (vanilla is my fave) right on the side!! Low fat of course!!

    You can take one Vitacake. Warm it in the microwave for 1 minute. Then, put low-fat ice cream on it together with some, some sliced banana, and fat-free whipped cream. You have a delicious low-fat dessert.

    Share with someone this summer ~ Just in time for bikini season A PB&J VitaDip = A Healthy SkinnyDip

    Blend 2 vitacakes with approx 2/3 cup peanut butter and add a touch of milk to depending how thick you’d like your dip
    Slice fresh strawberries, bananas, peaches, blueberries any kind depending what you like for fruit jam

    Thanks for such a great giveaway! I love all of the Vitalicious products and I would love to share my favorite way to enjoy the VitaCakes:
    1. Place a VitaCake on a plate
    2. Top with two mini Peppermint Patties (or two snack-size versions of your favorite candy bar)
    3. Place in microwave for 30 seconds or until the candy is almost melted
    4. Spread the melted candy evenly over the top of the VitaCake
    5. Immediately freeze until candy hardens into a yummy topping or enjoy ooey and gooey straight from the microwave – (I love to freeze when using Peppermint Patties since they taste like better Thin Mints, but caramel-filled candy bars are yummy nice and hot!

    And since these use the 50-calorie VitaTops and snack-size candy bars with only 30-50 calories each, they are a low calorie yet completely decadent treat! Enjoy!

    Take a bunch of the VitaCakes, cut in half.Heat 1/2 cup of water and mix two table spoons of instant expreso power until it desolves. Mix the expreso with one tub of cool whip. Take a flat pan and layer the VitaCakes with the Cool Whip, alternating. Put in refrigerator for 2-3 hours. Voila, Taramissu.

    I have the winner…hands down! This has been a huge hit…I have a picture if needed…it’s beautiful and easy…a work of art!

    Chocolate Covered Cherry Vitacake Trifle:


    24 vitacakes
    2 large containers cool whip free
    2 cans comstock light cherry pie filling
    2 packages jello sugar free chocolate pudding (prepared as instructed on the box)

    Fill the trifle bowl with layers of each ingredient starting with vitacakes on the bottom. On top of the vitacakes, add a layer of pie filling, then pudding, then cool whip. Repeat until you reach the top of the bowl. I always love the top layer to be the cherries (looks beautiful) with a dollop of cool whip on the top.

    A fabulous and healthy dessert!

    A High Protein High Vitamin Morning Booster!

    1. Whisk 3 eggs together with a tablespoon of milk
    2. Coat the Vitacakes in the mixture & let the liquid soak through
    3. Butter a skillet and heat to grill the VitaFrenchCake
    4. Flip to cook both sides to desired doneness
    5. Top with cinnamon and powdered sugar
    6. Serve warm with berries and fruit jam to drizzle & dip your VitaFrenchCake!

    my only problem with vitatops is that they have so much added sugar – its one of those things, cut the fat but increase the sugar for taste i think the banana nut has like 10g or something :| this is exactly why i cut all things processed because sugar lurks everywhereee unless your eating whole foods
