A Salady Kind of Day

I don’t have much tonight. It was a typical busy day.

Actually, it was an atypical busy day. For some odd reason I was craving…

Salads.

This is not normal.

Normally I crave pizza or a burger or french fries or chili or CHOCOLATE!

But salad?

It was weird.

Anyway, I gave into the cravings making a raw kale salad (pictured above) and my go-to Harvest Salad for dinner. I can’t get enough of that one!

The boys? They got leftovers. Lord knows what would happen if I even attempted to serve a big salad for dinner. I won’t go there. *eye roll*

Besides eating my crazy salads, I played with Little Bean and got lots of work done!

Speaking of Mr. Cute, he turned 10 months today! I can hardly believe it myself. I have to new posts on Baby’s First Year… Click here and watch him grow through pictures. It’s amazing! And Click here for his new giggling video. He cracks up at Big Brother.

What I didn’t do was work out. I didn’t get up early enough for the gym and there was just no way I could squish it in during the day. Right now I’m contemplating getting up tomorrow morning for an early spinning class.

More and more I’m realizing the best thing I can do for myself is wake up early for my workouts. During the day is possible as the gym has daycare, but classes and nap schedules are just not lining up at the moment. Evenings are also possible but it’s tough getting homework done and dinner made in time to get to class. Oh. and I’m a class girl all the way. I just don’t like going to the gym to workout unless I’m with a friend or taking a class.

So mornings it is! That means I gotsta go and get some sleep!

    My boys used to be the same. I made a baked coconut chicken last week and they were all over it. We had Thai beef salad tonite. I make a huge green salad with a lot of veggies and a homemade honey lime dressing. Yum. They love it. For my youngest, I just give him cut up veg and the meat. It’s a salad… Lol

    I love how that kale salad looks & I feel you on that, some days I actually CRAVE a big salad for dinner. Luckily i’ve convinced my husband I am NOT making more than one dinner so I tend to maybe throw in a baked potato for him and he just works with it! We will see what happens when kids come along :p

    Before seeing your recipe, I’ll relate my experience.I had always thought that kale was too “tough” to eat raw. That is, until I heard about cutting it into thin ribbons and “massaging” it with lemon juice, which breaks down the fibers and tenderizes it. Add other desired ingredients for a salad—olive oil, veggies, etc. Looking forward to your spin on kale salad.

    Exciting to see FitBloggin’ shaping up & names I recognize and some who are new to me, too! Sad that I most likely won’t be in the U.S./area around then otherwise I would totally be there!

    I have been a vegetarian for over 15 years and just love Kale,there are so many things you can do with it and it is so good for you. You can be so creative with salads. They can be filling or light,all depends on what you want.

    I totally go through phases where I just want to eat salads. It’s a good choice for dinner. I like doing taco salads too. YUM

    I crave salads frequently. Before I ate so many veggies, I’d get cravings for a bowl of raw red cabbage. BTW, I’m a class girl, too, won’t go to the gym unless I like the classes. It restricts and inconveniences me, but that’s what I enjoy. Otherwise, I go for a walk, or a bike ride.

    Roni,
    Have you considered workout dvds as back up? I know, they’re not as fun… but I have learned to just do one, just like I would take a shower or do laundry, etc…, to get my exercise in on days when I can’t get out or and/or don’t have time. Variety is key, b/c it is easy to burn out on them, and it’s normal to get tired of one after a while! I have both 60 min. workouts, and 30 min. workouts, so that on my busiest (or laziest!) of days, I have no excuse.
    On the other hand, though, I have found that when I really eat mindfully and healthfully, I end up with lower total calorie counts on the days that I am unable to work out at all. Since it was a salad day for you, you probably consumed fewer calories anyway (and maybe b/c you didn’t exert the energy), so don’t beat yourself up about it. ;)

    I have been eating lots of salads lately and craving citrus!

    Your morning exercise plan sounds like a good one and that seems to work best for me as well.

    I know what you mean.. the only reason I crave salads is if I have eaten terrible haha… Thanks for sharing your blog is so inspiring!

    I just had one like this…. Craved for green veggies whole day long. Made myself a broccoli, cauliflower, carrot salad with hard boiled eggs.
