Note to Self…
When you’re hungry EAT but eat something worthwhile: Fruit, yogurt, veggies, nuts, etc. The crap just makes you feel crappy (coincidence? I think not!) and unsatisfied.
Oh! and don’t forget yesterday’s note…
Note to self… Dried fruit, nuts and popcorn are better pantry snacks then pretzels, graham crackers and fudge stripe cookies. der.

What's Cooking in my kitchen?
-
I've seen it mentioned in a few of my clean eating and healthy cook books but honestly, I never even thought of Farro as an option for me. I refuse to shop at specialty stores and I try to use only common products that I can keep in stock and purchase from a typical grocery [...] -
I've never had a tuna melt. Is that weird? I guess that's what happens when you grow up not liking mayonnaise. I never ate tuna salad or egg salad or chicken salad. Honestly, they always kind of grossed me out. Then I realized.. hey.. why does tuna salad have [...] -
I have no idea where this idea came from. I was hungry. It was lunch. I had Brussels Sprouts. That was all the catalyst I needed.:) I decided to use a slice of real bacon to add flavor and little fat that would help sauté the sprouts. I'm trying [...] -
WOW was this good. I mean seriously good. It's not vegetarian so don't start throwing stones. I'm calling it a Garden Vegetable Burger because I use the new Laughing Cow Smooth Sensations Garden Vegetable Cream Cheese Spread. It was this recipe on Allrecipes.com that inspired [...] -
I drink water 99.9% of the time but every so often it just doesn't cut it. I want something else. Something more. Something slightly sweet. Today was one of those days. I decided to make a refreshing drink based on the famous Arnold Palmer, half lemonade and half iced [...] -
The other day I made a whole chicken on the grill in pieces. It was delicious! Just a little BBQ sauce and an open flame is all I need to make The Husband happy in the dinner department. I also picked up a few ears of corn from the grocery store. They aren't in season [...] -
Let me explain so you don't think I'm making a chili recipe and just put it on pizza. I'm calling this vegetarian Chili Pizza because chili is what inspired flavors. I think I told you. Little Bean is really into, well, BEANS! We go through a can about every 2 days. Yesterday [...] -
I've confessed my inability to follow recipes here on GreenLiteBites many, many times. I don't know why it's so hard for me. I can barely follow some of my own and I wrote the darn things! I think most of my problem stems from not having all the ingredients listed and, [...] -
Leftover brown rice and leftover sauce meet in this quick lunch idea inspired by my favorite food of all time: Pizza. I swear I can turn anything into a pizza concoction. Have you seen all my pizza ideas? I've used everything from pumpkin to zucchini, polenta to wontons. Nothing is off [...] -
This isn't a recipe just an idea I had to share. I can't believe how good it was! I've never had grilled pineapple. Can you believe it? I just never really had the desire to grill it before. When you love something raw sometimes it doesn't occur to you to cook it. [...] -
I whipped this up for lunch on a whim today because, well, I have a baby who's obsessed with three things… Cheese, Beans, and Avocado. No, really. Look... It's my go to meal for him so I find myself with beans and avocado readily available. [...] -
You know that tradition 7 Layer Mexican Dip? The one with the cream cheese, guacamole, salsa, lettuce, cheese, green onion and olives? Yea. That's the one. Well I had a craving for it the other day. Well, not exactly for it as I can never make anything the way it's suppose [...] -
If you go through the archives of GreenLiteBites I have about 5 total beef recipes. Five. Compare that to the 80+ I have tagged with chicken/turkey there's a clear winner in the meat department on my blog and in my home. I don't have a beef with beef (omg The Husband [...] -
I'm a kitchen sink smoothie maker. Whatever I have on hand goes in the blender and viola! A quick breakfast or a healthy snack. Last year I posted an "Elastic Approach" to how I make smoothies but I still like to share specific combinations that worked really well. This was one [...] -
The other night it was just the kids and I home for dinner and I decided to make what I wanted to make no holds barred. Without The Husband home it's much easier for some reason. Hmmm wonder why? Ok, not here to husband bash.. really.. I'm not! I'm here [...] -
*sigh* I was really hoping to share an awesome turkey burger idea. I had grand plans for my leftover ground turkey. The results was alright but they could have been so much better. I added diced pineapple, red pepper, green pepper, oats and soy sauce to the meat and formed 2 patties. In hindsight I [...] -
I made this on a total whim yesterday having no idea if it would work. To my surprise it did AND the husband actually said he liked it... UNSOLICITED! Here's the story. I had only 4 tilapia fillets defrosted for dinner. I knew it wasn't going to be enough for us [...] -
This is a slight reboot of a recipe I posted last year simply called Sweet Potato and Black Bean Chili. Staying true to my use-what-I-have-on-hand roots I, well, used what I had on hand and made a similar dish with a spicy twist. Topping the result with avocado added a cool creaminess that [...] -
Did you hear? The Laughing Cow recently launched Smooth Sensations a line of 5 cream cheese spreads. There's Classic Cream, Classic Cream Light, Strawberries & Cream, Garden Vegetable and my favorite… Cinnamon. It's a sweet wedge of creamy goodness! Today I decided to use my new favorite flavor [...] -
Confession time, I recorded a 30 minute video making this with both kids (partally) 2 nights ago. I miss videos. I really do but they seem so much more difficult with 2 children. I'm also having technical difficulties with my video recording and audio syncing making it VERY time consuming to edit. [...] -
A couple of years ago I shared a modified version of Sloppy Joe's I made for a party. Everyone loved it but I've been wanting to try to make something similar for the family on a smaller scale and without the pre-made canned Manwich sauce. I don't particularly have any issues [...] -
Yesterday I was dreaming about a salad. Not just any salad, but a chickpea filled, cucumber, and red onion salad with a fun, tangy dressing. Unfortunately, I had no cucumber or red onion. Well, that's a lie. I had a half of cucumber but it was a mushy mess and [...] -
Dinner meals are getting harder and harder for me to share lately. I've gone back to just whipping things up without really measuring anything (this meal was going to be one of those until I realized I still had enough light to take some photos.) I've also instituted a few brainless meal nights [...] -
Three years ago I posted a video called "Makin' Hard Boiled Eggs" where I shared my system for, well... making hard boiled eggs. Genius name, I know. I'm smart like that. Anyway, since then I've gotten tons of feedback and comments thanking me but all the information is locked in a long winded 10 minute [...] -
Yup. You read that correctly. BEET as in those red vegetables that stain your fingers pink. Honestly, I have no idea what possessed me to make this. I don't particularly like beets. I mean I like them, but I don't looove them. Two summers ago I made them for [...]
"@Nubiancooki darn! I don't think I have any popsicle ideas although I will tell you almond milk and sugar free chocolate pudding is AWESOME!— RoniNoone

I am right there with you…thanks for the reminder!
We recently stocked up on s’mores supplies, and for awhile now I have been in the mindset that 1-2 large marshmallows (only 25 calories each!) make a great after-work snack. Doh! So stupid… only leads to more crap later in the evening.
Hey Roni… your example grocery lists are some of my favorite things (like the Trader Joe’s one). Would it be possible for you to maybe give us a quick rundown of a few quick-grab-and-go snacks that you pick up at the store? For some reason I feel at a loss lately… pretty much the only quick-grab snack I buy are the Stretch Island fruit leathers, which I LOVE, but I need more suggestions. Like, what kind of nuts do you get? Are they salted?
I’ve been snacking out of control. It usually starts with stuff that my husband and kiddo have as snack foods. Chips, 100 calorie snacks, cookies… It never stops with a little snack or few bites though. I could eat 2-3 100 calorie bags!:-o
I’m going to try and keep in my mind your little words of wisdom- “crap food just makes you feel crappy.”
Okay, hold up. I just came up with a list for myself of stuff to buy, and I figure all of us could do the same… maybe if a bunch of us post what we like to buy for “quick snacks,” (the good stuff, not the fudge stripe cook-ays) we can all help each other out. Here’s mine:
Stretch Island Fruit
Veggies to cut up (gr peppers, cukes, broccoli)
Snow Peas
Fruit
Nuts (my favorite are Blue Diamond flavored almonds)
Dried Apricots
Yogurt
Vitatops
but I need more! What do you all buy…?
I love the combination of pretzels with red grapes. Something about the sweet-salty, and I never feel the urge to overeat when I eat them together.
Doritos, on the other hand… :)
I load up on…
Light string cheese, 1pt
Archer Farms all fruit bars (Target), 3pts
Light popcorn, 1/2 bag, 3pts
I also made Ronis Berry Oatmeal cups from Green Lite Bites this week and they are YUMMY! I have been having one (2pts) with a fruit to eat with my morning coffee. Its not enough for a breakfast for me, but gets me a couple hours into the day.
I have a craving for crunch when I come home from work. Fritos and tortilla chips need to go! I like:
Roni’s popcorn in a bag (less salt and additives)
Veggies w hummus
hard boiled egg (going for protein)
string cheese
Good point. I thought of you the other day when my husband and I were grocery shopping and he went for the Tostitos like they were staple. We typically don’t keep chips in the house, but the last few weekends, I’ve been away and he bought a bag. Then we’ve both finished it during the week. I needed to stop the madness, and we found some salty, crunchy substitutes – Pirate’s Booty and 100 Calorie Baked Cheetos. Not health food, but better than Tostitos!
I love Laura’s idea. My “go to” snacks are hummus with veg or crunchmaster crackers, individual bags of pop chips (if they’re on sale) and individual portions of cheese. Hmm…I apparently prefer salty snacks over sweet. Have a great day Roni! Love the note to self!
That mindless munching is such a bad habit! It is apple and pear season so enjoy one of those with a little nut butter or a string cheese and a handful of nuts. Delicious and it won’t send you looking for more.
I read once that we crave the foods we eat on a regular basis and I have found that to be true. If I am eating the healthy stuff then that is what I think of to eat when I get hungry. When I throw in some junk here and there then that is what I crave.
I have run an entire marathon on fudge and flapjack so don’t put yourself down lol

Not to be argumentative, but I’m not sure this is the big deal you’re making it into. If you binge on certain foods then, no, you should find alternatives. But “fruits are healthy” absolutely, but at some point it’s overkill. There’s only so much vitamin whatever that you can absorb in one day. At that point, whether you’re getting your calories from an apple or a pretzel, who cares? You might disagree with me on this, but I doubt anyone got fat on graham crackers and pretzels. Especially if they keep you away from the doritos and fudge things. Just my opinion.
It’s a big deal to me and that’s all that matters since it is a “note to self.” :)
When I eat pretzels and graham crackers (processed carby stuff) I feel off. Eating those things don’t work for me. I’m much better off skipping them and choosing a piece of fruit. Again, that’s what works for me. I agree with you a calorie is a calorie but I simply eat more and am less satisfied when I eat something like pretzels.
Have you thought about making your own veggie chips? Slice up veggies very thin (potatoes obviously, but also sweet potato, beetroot, turnip, parsnip, fennel, carrot – any hard veggie), turn the oven on as low as you can, put the veggies in a tray with a tiny bit of spray oil and whatever spices/flavouring you want (or can add salt etc afterward) and dehydrate them in the oven. You can either leave them in for an hour or so (I think, check on this) or after a while turn the oven off and let them gradually dehydrate in the remaining warm, usually overnight. And that was a terrible sentence, but oh well. I think you’d like them.
Recently I’ve changed my between meal approach. I either have something to drink. Or a protein/fat item. That seems to hold me better then the carbs. Carbs just make me want more. What got me through the summer was my iced chai tea latte. With the dairy in it it seemed to hold me. Between meal snacks are tough
um, yeah. i need to lay off the carbs too. i just threw away a box of half-eaten pastries that were really carby and not even filling. that way i won’t eat half a day’s worth of points at breakfast time before i’m even awake. sugar dependence is the worst, and the only way i’ve found that works for me is to wean myself off of large amounts of sugar … which i think i will have to do again this fall.
I always keep some low cal, high fiber foods on hand for mindless munching. if I’m stressed I try and understand where its coming from. Emotional eating is no fun!
The hardest time i have is after work, before dinner or when dinner is cooking.. I want to eat everything!!
