It’s amazing how much better I feel about myself when I’m eating good, healthy food.

Today, I made an effort to eat light and unprocessed. Coming off a week of eating out on vacation, I NEEDED it. I already feel better, almost lighter. It’s unbelievable how much difference a day can really make.

In other news…

Food Notes
1 egg/2 egg white omelet with zucchini and tomaote plus side of fresh blueberries I’m going back to 1 egg/2 whites for my omeletes. It helps save a bit of calories and fat. This is how I made my eggs when I orignally lost the weight.
The Simplest, Lightest, Easiest Tuna Salad Ever! served on cucumber slices Such a fun light summer lunch. I love it!
watermelon LOVE watermelon season. Little Guy and I had fun cutting it up.
That’s it Bar This is the bar I tried on vacation (click here to see one) It’s basically dried apple and pear. So good. I needed something before heading to the store. I didn’t want to be too hungry while shopping.
1 Mini Babybel Light I was putting the groceries away and almost broke into the deli cheese, something I used to do on a regular basis. Instead, I grabbed a round. It totally hit the spot.
Grilled chicken, Corn on the Cob, Purple Cabbage Salad Hoping to post the cabbage salad on GreenLiteBites tomorrow. I loved it!
Took Yoga today. Going to switch my Monday/Tuesday workouts.
Did great on the water and took my vitamins with Little Guy this morning.

    You’re so right, a day can make a huge difference. On Sunday I was lamenting all my poor decisions lately, and how it’s affected my self-esteem (and the scale), so Monday I just decided to change what I was doing. Logged ALL the food I ate yesterday, skipped late night dessert, and got up to continue Couch to 5k training again today with my dog. He loves it! We’re going to do a 5k together in August, maybe September. You look great in the bathing suit, by the way!

    I LOVE a 1 egg/2 egg white scramble with turkey bacon in the morning. Lots of protein to keep me full AND an energy boost for my workouts! I eat it almost every morning. SO GOOD!

    I LOVE this time of year. We’ve been eating A LOT of cucumbers, green bell peppers and watermelon! Delish!

    Nice choice of foods. Yeah, after eating more ‘serious’ stuff your body will thank you for the easier to digest foods you’re giving it now.

    Sometimes we forget that there is a direct correlation between what we eat and how we feel. The “fuel” we choose to give our bodies makes such a huge difference in our energy level as well as our mindset! It’s always good to get back on track!

    I need to get some of those mini bell cheese wheels!
