When I first seen this pic I thought you were on a roller coaster ride. So I had to do a double take and realized it was a whole lot of zucchini!

I DO! I should have added the link to the post. Here’s a stuffed zucchini idea I had a couple of years ago…

Roni on a show they had I think cook yourself thin, they used zucchini in cakes to give them moisture and low fat.

Completely unrelated, but – you look so beautiful in this picture! Great shot.

And it reminds me of the Reader’s Digest anecdote: A woman left some of her bumper crop of zucchini on the office breakroom table with a sign, “Free Zucchini.” When she came back some time later, she saw that someone had penciled underneath, “Save the Whales.” :) :) :) (I must admit, it took me a second :) )

    Hey Roni:

I think a couple of years ago you posted a zucchini recipe that substituted zucchini strips for lasagna noodles. I love that one–it is great for larger zukes and has all the taste and texture of “real lasagna’.

Thanks for providing these new recipes–I have a bumper crop on the way!
