I’m giving myself 15 minutes to post this as I need to go to bed. Little Bean sleeps his longest stretch before midnight and I need to start taking advantage.

Breakfast was this ugly western omelet…

2 eggs, onion, peppers and ham. What can I say? Sometimes they stick. Still tasty!

I also had half an orange the Little Guy didn’t finish before school

I had a busy morning so I grabbed a Larabar quick to hold me over until I had a bit more time.

For lunch I hit my leftovers from PF Changs. It was a couple of chicken lettuce wraps and a bit of fried rice.

A few hours later I grabbed a banana.

Dinner was a new salmon idea I had. Just a simple glaze but it turned out great!

I pared it with mixed veggies and some quick fried rice using the brown rice we took home from PF Changes. I started doing this anytime we get Chinese. I always ask for brown rice on the side and then use it in recipes. Gets me more bang for my going out buck. ;)

For dessert I made some banana soft serve using a splash of chocolate soy milk and a handful of cocoa almonds. It may not look like much…

But it was DIVINE! This will cure my ice cream craving all summer. I need to start stocking up on bananas!

That was my day in food. Time for fall asleep watching Nurse Betty and the United States of Tara. My new Monday night TV obsession!

In other news… My Baby is a Poop Bandit and I’m stereotyping my Twitter Friends.

    You are doing awesome with food choices considering how busy you are-way 2 go! One of these years I’m going to come to fitbloggin… Looks like a great time! Do you have plans to return to the video/podcast updates? I know how busy you are with 2 children, blogging, planning fit blogging,etc.. Im Just missing those updates:-) Take care

  2. I love seeing the food journal. Glad to know that your omelets don’t always turn out perfectly beautiful either. I make omelets regularly and definitely have ended up with something more like scrambled eggs on many occasions.

    Leah – Once the conference is over I’ll be back with podcasts. COnsider this my maternity leave. ;) I’m also hoping to get some new equipment so the quality is a little better.

    We have auctions/flea markets here in PA that sell bananas 3lbs for $1! I know! I rarely buy because even a family of 5 can’t go through that many bananas in a week!

    I was just about to say I love food journals too … and especially food photos. Yummy and healthy ‘ice cream’ idea, Roni. Not sure if I can stay away from Dairy Queen all summer, but so glad I discovered their “kid size” vanilla, chocolate and dipped cone sizes. About 200 calories and totally hits the spot.

  6. Great eats Roni! I forgot to mention how thin you look in the photo you posted yesterday! The baby weight is falling off!

    I love chocolate banana soft serve and make it with cocoa and a little Greek yogurt. Fabulous and so low cal. Yum!
