Quick Pregnancy Update and a St. Patrick’s Day Menu

I won’t even bother calling this a "Word-Less" Wednesday. I’m just pregnant babbling at this point and probably will be until this baby comes and I get on some kind of schedule. Which we all know won’t happen for months! Especially with the conference looming over my head.

Aaaack… I can’t think about it.

Instead I’ll focus on the fun of St. Patrick’s Day!

I’m going all out tomorrow. We invited friends over for dinner and I’m making…

Braised Cabbage
Braised Cabbage (but with green cabbage)

Mashed Potatoes
Mashed Potatoes (which I may attempt to turn green with my “secret” ingredient. ;)

And my first ever Corned Beef Brisket. I’ve never made one before so it should be a adventure!

Oh and of course I’ll be baking up another batch of….

Besides my holiday cooking plans I’ve been nesting like CRAZY! This week alone I’ve gotten the carpets cleaned, organized the junk drawers, cleaned out the fridge and changed all the air filters in the house. I also went grocery shopping today and bought more fruit then I know what to do with–papaya, star fruit, pears, grapefruits, strawberries, bananas, apples, kiwi, even a small watermelon! Seriously, I went nuts!

The way I see it.. if I’m gonna snack I might as well snack on the good stuff! ;)

Plus I’m sure the baby will appreciate it. Speaking of, I had my OB appointment this morning. All is looking well! I’m not sure if this is considered TMI but I’m 1cm dilated and 50% effaced. Doc said I’m right on schedule if not slightly ahead of the curve. According to the ultrasound estimates, the baby also gained just over a pound in 3 weeks. I only gained 2 since my last appointment. That made me feel LOADS better after my 9 lb gain over the last 2 weeks. Total I’m up 50lbs.

However, I’m NOT focusing on the number. It will be all worth it when I’m holding my new baby boy.

Ok, I’m out.. need sleep.

Oh! And don’t forget to wear green tomorrow! I actually found a green maternity shirt to record one last GreenLiteBites video–Spinach Ham Omelet Roll-Up–before baby comes. :)

    Enjoy the holiday! I’m actually using your cabbage, potato and sausage crockpot idea for tonight’s dinner – all the corned beef looked a little dodgy at my supermarket :-)

    Your menu sounds perfect! I’m not making a special meal this time, hubby is not feeling well and the son well he wouldn’t eat it so I had chili instead!

    So happy for you, Roni! The meal looked like it was going to be great, but having your baby is even better! I don’t know yet if he was born last night or early this morning though… wonder if he is a St Patty’s Day Baby.

    CONGRATULATIONS!! and i just want to add, what an awesome birthday, not only because it’s st. pat’s day but because it’s MY birthday too!! it was the big 4-0 this year for me. me and your little guy are exactly 40 years apart. :)
