Thursday Thoughts: Change!

This weeks Thursday Thoughts is all devoted to CHANGE! I have quite a few things happening and I need to fill you in but first let me share these thoughts. . .
- Let me start with food since I’m quite obsessed. I found this article about making some simple CHANGES to your diet that can pay off big time on the nutrient front. Loved that the mention sweet potatoes, kale, and papaya. Three things I’ve branched out and tried in the last couple of years. :)
- "Look at what you currently eat and then figure out how you could make small healthy CHANGES." Great advice I found in the article, The Best Diet? That Depends on You
- How about CHANGING when you’re older? Maureen Bliss proves it IS possible!
- Moving to the blog-o-shpere one of my favorite bloggers, Pastaqueen, is going through a major CHANGE moving from Indiana to North Carolina.
- I love that Jen is going through CH-CH-CHANGES on the exercise from and felt confident enough to label herself a gym rat and a running fanatic!
- Suck it up Princess is making conscious CHANGES and challenging herself. I love that!
- On GreenLiteBites this week I stuck to all dinner ideas, Fried Barley with Cilantro and Carrots, Turkey and Mushrooms over Noodles and 15 Minute Red Beans and Rice
- As for RoniNoone.com and FitBloggin’, I’ve had NO time make updates. None.. zip.. zero. There are just not enough hours in the day which leads me to the first of 2 big CHANGES in store for me.
- I will soon be self employed, yet again. I love my job and I’m glad I went back to work and gave it a chance but I just can’t continue on the pace I’m currently on. I’m EXHAUSTED. After much discussion, debating and consideration the husband and I came to the conclusion that working for myself is in our best interest. I just can’t work 2 full time jobs any longer, which is what I’ve basically been doing between day job and the blogs/conference. Plus there are so many things I want to accomplish but have no time, my cook book, for example. Plus I’d like to pursue a traditional book deal as well. So come August I will be focusing on my family, my sites, the FitBloggin’ conference and the book ideas I have. I’m excited but nervous. I like having a job, it’s safe. But I also like the freedom of working for myself. It’s rewarding. Only time will tell if this is the right decision but I’ll never know unless I try.
- My second CHANGE isn’t as life altering but it sure is fun! Saturday I will be cutting all my hair off. I’m just not made for long hair. I don’t have the time or interest in doing it every morning and I’m tired of leaving the house with wet hair and a rubber-band. So I’m going short… REAL short. Think Jaime Lee Curtis, Morena Baccarin, and Alyssa Milano. I’m leaning toward something like this which is close to my old do (this pic circa 2003)…
Of course I’ll take before and after shots.. I want to have fun with it. Like I said.. it’s time for a CHANGE… Sha na na na Sha na na na…..
Sorry. I couldn’t help myself. LMAO

What's Cooking in my kitchen?

Finally my first Farro idea! I have to say, I love this stuff! It's chewy and yummy and, well, fun! I tossed it with what I could find in my pantry and it made a wonderfully satisfying lunch. Filling but not heavy, tasty and quite nutrient dense. According to NutritionData.com this [...] -
I've seen it mentioned in a few of my clean eating and healthy cook books but honestly, I never even thought of Farro as an option for me. I refuse to shop at specialty stores and I try to use only common products that I can keep in stock and purchase from a typical grocery [...] -
I've never had a tuna melt. Is that weird? I guess that's what happens when you grow up not liking mayonnaise. I never ate tuna salad or egg salad or chicken salad. Honestly, they always kind of grossed me out. Then I realized.. hey.. why does tuna salad have [...] -
I have no idea where this idea came from. I was hungry. It was lunch. I had Brussels Sprouts. That was all the catalyst I needed.:) I decided to use a slice of real bacon to add flavor and little fat that would help sauté the sprouts. I'm trying [...] -
WOW was this good. I mean seriously good. It's not vegetarian so don't start throwing stones. I'm calling it a Garden Vegetable Burger because I use the new Laughing Cow Smooth Sensations Garden Vegetable Cream Cheese Spread. It was this recipe on Allrecipes.com that inspired [...] -
I drink water 99.9% of the time but every so often it just doesn't cut it. I want something else. Something more. Something slightly sweet. Today was one of those days. I decided to make a refreshing drink based on the famous Arnold Palmer, half lemonade and half iced [...] -
The other day I made a whole chicken on the grill in pieces. It was delicious! Just a little BBQ sauce and an open flame is all I need to make The Husband happy in the dinner department. I also picked up a few ears of corn from the grocery store. They aren't in season [...] -
Let me explain so you don't think I'm making a chili recipe and just put it on pizza. I'm calling this vegetarian Chili Pizza because chili is what inspired flavors. I think I told you. Little Bean is really into, well, BEANS! We go through a can about every 2 days. Yesterday [...] -
I've confessed my inability to follow recipes here on GreenLiteBites many, many times. I don't know why it's so hard for me. I can barely follow some of my own and I wrote the darn things! I think most of my problem stems from not having all the ingredients listed and, [...] -
Leftover brown rice and leftover sauce meet in this quick lunch idea inspired by my favorite food of all time: Pizza. I swear I can turn anything into a pizza concoction. Have you seen all my pizza ideas? I've used everything from pumpkin to zucchini, polenta to wontons. Nothing is off [...] -
This isn't a recipe just an idea I had to share. I can't believe how good it was! I've never had grilled pineapple. Can you believe it? I just never really had the desire to grill it before. When you love something raw sometimes it doesn't occur to you to cook it. [...] -
I whipped this up for lunch on a whim today because, well, I have a baby who's obsessed with three things… Cheese, Beans, and Avocado. No, really. Look... It's my go to meal for him so I find myself with beans and avocado readily available. [...] -
You know that tradition 7 Layer Mexican Dip? The one with the cream cheese, guacamole, salsa, lettuce, cheese, green onion and olives? Yea. That's the one. Well I had a craving for it the other day. Well, not exactly for it as I can never make anything the way it's suppose [...] -
If you go through the archives of GreenLiteBites I have about 5 total beef recipes. Five. Compare that to the 80+ I have tagged with chicken/turkey there's a clear winner in the meat department on my blog and in my home. I don't have a beef with beef (omg The Husband [...] -
I'm a kitchen sink smoothie maker. Whatever I have on hand goes in the blender and viola! A quick breakfast or a healthy snack. Last year I posted an "Elastic Approach" to how I make smoothies but I still like to share specific combinations that worked really well. This was one [...] -
The other night it was just the kids and I home for dinner and I decided to make what I wanted to make no holds barred. Without The Husband home it's much easier for some reason. Hmmm wonder why? Ok, not here to husband bash.. really.. I'm not! I'm here [...] -
*sigh* I was really hoping to share an awesome turkey burger idea. I had grand plans for my leftover ground turkey. The results was alright but they could have been so much better. I added diced pineapple, red pepper, green pepper, oats and soy sauce to the meat and formed 2 patties. In hindsight I [...] -
I made this on a total whim yesterday having no idea if it would work. To my surprise it did AND the husband actually said he liked it... UNSOLICITED! Here's the story. I had only 4 tilapia fillets defrosted for dinner. I knew it wasn't going to be enough for us [...] -
This is a slight reboot of a recipe I posted last year simply called Sweet Potato and Black Bean Chili. Staying true to my use-what-I-have-on-hand roots I, well, used what I had on hand and made a similar dish with a spicy twist. Topping the result with avocado added a cool creaminess that [...] -
Did you hear? The Laughing Cow recently launched Smooth Sensations a line of 5 cream cheese spreads. There's Classic Cream, Classic Cream Light, Strawberries & Cream, Garden Vegetable and my favorite… Cinnamon. It's a sweet wedge of creamy goodness! Today I decided to use my new favorite flavor [...] -
Confession time, I recorded a 30 minute video making this with both kids (partally) 2 nights ago. I miss videos. I really do but they seem so much more difficult with 2 children. I'm also having technical difficulties with my video recording and audio syncing making it VERY time consuming to edit. [...] -
A couple of years ago I shared a modified version of Sloppy Joe's I made for a party. Everyone loved it but I've been wanting to try to make something similar for the family on a smaller scale and without the pre-made canned Manwich sauce. I don't particularly have any issues [...] -
Yesterday I was dreaming about a salad. Not just any salad, but a chickpea filled, cucumber, and red onion salad with a fun, tangy dressing. Unfortunately, I had no cucumber or red onion. Well, that's a lie. I had a half of cucumber but it was a mushy mess and [...] -
Dinner meals are getting harder and harder for me to share lately. I've gone back to just whipping things up without really measuring anything (this meal was going to be one of those until I realized I still had enough light to take some photos.) I've also instituted a few brainless meal nights [...] -
Three years ago I posted a video called "Makin' Hard Boiled Eggs" where I shared my system for, well... making hard boiled eggs. Genius name, I know. I'm smart like that. Anyway, since then I've gotten tons of feedback and comments thanking me but all the information is locked in a long winded 10 minute [...]

You Go Roni! That is fabulous news and I wish you all the best. I can’t wait to see the pics of your new do~
I had that hair cut for so many years. I’ve gotten used to the longer hair but somedays it annoys me so much.
And congrats on your changes. You have a lot on your plate so hopefully this will make it easier.
Wow Roni! Lots of exciting things going on. I saw your hair post on Facebook…I’ve seen you hint at going short again for a while so I guess I’m not surprised. I used to totally have short hair myself but it was around the time I was married (not anymore, bad memories) and so I don’t think I could ever go back. I think you can totally rock it! Girl you could pull off bald with a paper bag on your head! Thanks as always for sharing…you rock and continue to inspire!
Favorite video of all time! Good luck to you Roni, you’ll blow it all out of the water. Can’t wait to read the book (s)!
Congrats on all the changes! Just think of all the nice summer days you won’t have to call in sick hehe, you can enjoy them guilt free :) Good Luck with the hair thing. I’ve always wanted to go short but I’m just too chicken, I always end up changing my mind.
good luck roni .you rock !
im sure anything you do will be great.
Dang it. Now that stupid song’s stuck in my head.
“…from who you are into who you’re gonna be!”
Hopefully my brain can replace it with the David Bowie song instead…
I’m with you Roni, no one can keep up that pace. It’s insane! I would not work of I didn’t have to either. I recently cut my days back by half and love love love it!! Money is not everything. Good luck, I’m sure you’ll succeed in whatever you do!! :)
Marcia, Marcia, Marcia!

Super cute hair! Good for you embracing the change. . . I need some changes, but X and Y and Z. :) Later it will be easier, right? Can’t wait to see the new pics!
Best wishes in your changes! And yes, I think you were doing to much in just 24 hours. It was affecting your sleeping, giving you funks… you are just human, you know! But I’m sure you are going to do great on your own. We are all witnesses of your talents. I would go solo if I could too :) Too bad I’m going to be alone in the 1-hour-trip to and from work again LOL
Good for you for knowing what is best for you and for not being afraid to just do it! You go girl….xo
the moment that you make the decision and don’t look back..is the moment that doors will fly open. Have fun walking through them. Excited to see what’s around the corner for you.
oooh Im excited for the hair change!
Im in for that too.
I wont shave it again :) but its that change or a tattoo right now and hair grows back….
Roni, I’m so mad at you! I made your sweet potato fries for my family one night and now they expect them ALL. THE. TIME. The husband even told me that he hates sweet potatos, but now I’m spending about half an hour each night cutting up slices.
Seriously, I can’t believe my family has started requesting stuff like sweet potatos, broccoli, and brussel sprouts. We even eat spinach for breakfast (although, I guess we should be eating kale)!
Some fantastic changes all around! Can’t wait to read more as things unfold….
It took me till my 30′s to decide that short hair is better on me and definitely makes the morning go easier!! Enjoy all the changes!
You go, Roni! I recently committed to a major job/life change…today is my LAST DAY. Ahhh! Ridiculously exciting. Good for you for taking the leap. Looking forward to new hair cut pictures.
Love the Brady Bunch reference!!! Good luck Roni. You are so inspirational and deserve to be able to do the things you want in your career. You will love going back to short hair. Everytime I say I am going to grow it out, two months later I am at the salon going “what was I thinking???”
ABSOLUTELY love your drive and motivation not to settle for anything less that what you’re capable of. Yes, it’s so important and healthy to realign our priorities in life and what makes us feel complete and satisfied!! Makes me wish I had done something similar when I was younger, but find myself making similar changes as I grow older and LOVE the way it makes me feel fulfilled!!!! Go girl!!!
So many exciting changes coming up! I’m happy and excited for you!
Exciting stuff, Roni!! Good for you!
Go gettem’ Roni!
Good for you! No matter what the change, as long as you and your family are happier it will be for the better.
Exciting! As someone who only recently started working for myself, I feel confident in saying that if you’re made for it, you know it. I’m excited for you! Although I don’t really know what you did at your job at the school, I know what you do at this “other” job and you are darn good at that! :)
Also, I’ve been meaning to tell you this on Twitter, but I think that haircut will look great on you! Have fun!
So many changes for you! Can’t wait to see your new hair do!
excited to see the new do! Since I’ve been reading your blog over the years you have made a lot of career changes and it always seems to work out, but good luck anyways!
AWESOME!!! Happy for you that you have the opportunity to work for yourself. And I TOTALLY can’t wait to see the new haircut!!! =)
Good for you Roni! I work out of my house also and i love it. As for the hair you have such a pretty face you could do any hair do and still look cute. Can’t wait to see the pics!!
Good luck & Congrats Roni!! I’m jealous, I wish I could work for myself!!!
Whew–and here I was worried that you may go the other way and give up the Blogs to concentrate on your other work and activities. I’ll rest easier tonight, knowing that we are somewhere up on the priority list! :) Thinking of you as you wrap up one phase of life/work and transition to another. I know anything you tackle will be approached with lots of hard work, positivity and a healthy dose of self-care–you’re an inspiration in accepting the things that can’t change, and changing the things you can!
i just grew my hair out of the jamie lee style . loved it! super easy.
oh I do not know what to say about the haircut. I like semi long hair. My husband won’t like it either what does your husband think. Oh and are you going blonde. I did and won’t go back.
Have fun with it
ps hope the job works out too.
I knew it! Good luck with the job thing.
About the hair – I love short hair and I just don’t really look that good with long hair either. Glad you’re going for it.
cannot waaaaait to see your new do :) have a fab weekend roni!
I am excited and happy for you on the changes you are making. I have always wondered how you could keep up long term with all you are doing. I wish you the best and can’t wait to see the hair do pics.
Somehow I knew you were leaving your job. You are always the planner. I know you will succeed.
Congratulations on your decisions. Can’t wait to see the pictures.
But most importantly…I DON’T remember that scene. I thought I knew them all!!
Awe I love your long hair…but I too leave the house with wet hair way to often and have been thinking about going shorter :)
Good luck on your big decision! I’m sure things will turn out fine :)
Roni — Congrats on all the changes! I know you will love going back to your time being your time for all the creative projects you have lined up! Looking forward to following!
Congrats on your changes! As for the hair…I take the clippers to my head regularly–it’s shorter than some crew cuts! I wrote a post about it. Short hair is WAY easier!
