That’s right. I’m a Plain Jane. I like white. Ok? Is that so waroung? said like this…

I’m joking about my new design, of course. For me the white is a welcomed simplicity. Even I was getting overwhelmed by my old site. So yes… I cleaned everything up. P-o-s-s-i-b-l-y making it too white. So I tinted the content area a little as to not blind those with bright screens. :)

Moving on to Kale and this is just a quick tip. Tonight I made one of my favorite meals of all time… TACOS! Seriously I love love love taco night so much I even recorded a video on how I make it up real quick. taco filling with black beans and kaleWell, tonight I tried something a little different just to see if it would fly in my picky eater household and to my surprise…. it did! Both the husband and the little guy made no complaints about the bulked up taco filling with black beans AND Kale. Normally I’d save this kind of post for GreenLiteBites but I just wanted to mention it quick here in hopes to inspire you to try something new and simple, like adding chopped up kale to your taco filling. Just look how much yummier and healthier it looks! To make dinner even lighter for myself, I stuck with Taco Lettuce Wraps instead of using shells. Honestly, I’m starting to like lettuce wraps even better then traditional tacos.

Ok moving off the bulking your food soapbox and on to my running goals. yea remember those? The itsy bitsy little goals I set to run one event a month this year. So far so good except for our crazy snowy February. I even have a 6k lined up next weekend.

Anyway, one of the monthly events I registered for was the Pittsburgh Half Marathon On May 2. Honestly, when I found out I was pregnant I decided I was going to skip the 13 miles. I thought it would be a little too much running and intense training for me while carrying a child. So I eased my workouts and sort of bailed on My Crazy Half Marathon Training Schedule hoping no one would notice.

Well now that my situation has changed I went through a bit of feeling sorry for myself followed by a little I’m not good enough. But then I settled into a motivated why not? So yea… There’s no way I can prepare to run a half marathon is 2 weeks BUT who cares?! Why not still go, have fun, do my best and cross the finish line? What do I have to lose?

So THATS what I’m going to do and you know what… I’m TOTALLY psyched. Scared out of my mind but psyched. My longest run this year was 5 miles I ran on Sunday and that was tough but I’m not going to let it get to me. I’m going to do the best I can and that will be good enough. It’s not about being the fastest or the best, it’s about the experience.

Since I’m on a running kick and all pumped up I need to plea for a few more donations for the Run To Home Base 9k (my second running event for the month of May) If you remember I’m having a FitBloggin’ Prize Pack fundraiser the whole month of April. started my day with a run and some weight training
breakfast was a mommy & me omelet & 1/2 a banana muffin really the bottom of the little guys ;)
banana in the car on the way to the doctors.
just finished lunch. had some leftover salmon, rice and peas that i froze a few weeks back. surprised… the fish defrosted well!
whole wheat banana muffin and some green tea
an orange before leaving work
taco lettuce wraps
a bit of choc frozen yogurt with wild blueberries

    We had tacos tonight, too! I’m glad you’re still loving my taco lettuce wrap idea….they are SO yummy! I can’t wait to try kale in the filling next time. I tried baked kale (chips) and thought it was yucky, but I bet in tacos it would be awesome. And GOOD FOR YOU for getting right back on the running band wagon. I’m so proud of you and inspired by you. =)

    My husband LOVES tacos. He asks for them every week when we sit down and plan our dinners. I am going to grab some lettuce for myself next time! Great way to lighten up what can be a heavy meal.

    The most important thing is to cross that finish line! It doesn’t matter the time, it doesn’t matter if you finish last, all that matters is to prove to yourself that you can do it! And I bet on race day, you’ll get that extra adrenaline pumping that will fuel you the entire race. I’m rooting for ya! Go Roni Go!

    I really like the changing head pic. At the old site, you had a 2007-2009 pics and I keep thinking “well, we´re @ march now, were’is the 2010 pic!) but this idea was just brilliant! A lot of those pics I saw at your twitting, there are some dailybooth stuff going on also, and those define better your journey from fat to skinny to healthy to whatever than just 4 pics. They resemble your life, everything you had shared with us. I was actually shocked to reload 10 times and saw 3 pics of Bill, because he has been, I dont know the word (english is not my native language, sorry) maybe a “guest star” in all this public life? I mean Its you & Ryan, like he didnt wanted to be on the videos per-se. Like at the begining of the videos “hey its Roni, -and then- And Ryan” and from nowhere, he would jump on screen “AND BILL!” LOL so seeing him a lot at the changing pic was surprasing (sp?)

    I know how you feel about the half marathon. I had registered for the Marine Corps Marathon before we got pregnant and making the decision about whether or not to bail on it was excruciating. I know I wouldn’t have been able to finish (bathroom breaks alone), but I’m still sad that I didn’t try it.

    Ha!! I’m making chicken enchiladas for dinner tonight, and I have both kale and black beans on the ready to bulk up the filling. =)

    PS… Have a blast at your half-marathon!! It’s SO worth going anyway.

    When I did my marathon last year, I was ill-prepared. Oh, I had trained… I had trained hard and long with Team in Training to race in June. But about 36 hours before I was to board to plane to Seattle, my mother’s health crashed and she died. Obviously, I had to put off the marathon. By the time my big day finally rolled around again, I’d burned out. I ended up walking a big part of the mileage, finished in 6:39, HURTING. It was overwhelming and emotional and incredible, knowing that I’d pulled it off despite my personal tragedies, and I’d do it again in a heartbeat.

    So… what I’m getting at in a very roundabout way is… I know you can do it! My favorite coach once told me, it’s all in your heart. The training is important, of course, but a strong heart will carry you through no matter what. And you certainly have that!

    I love the new layout! Gorgeous like you :)

    I love the idea of adding kale to the taco meat! I can’t wait to try that next time I have taco night. I love the new layout too.

    I am really proud of you (which feels kind of weird since I don’t really know you, but that’s beside the point) for doing the half marathon. You will do great, after all, it’s just about finishing. Who cares about the rest? :)

    My thoughts on the half (with my 2nd one coming this weekend), is it’s all mental (you read my post!). So, think of it this way – you completed a marathon, you’ve done a half too, therefore you’ll kick butt on May 2 – that mental strength will get you through it no problem, so you’ll be sore for a day, no biggie, you got it !!

    I love BULKING up my food with spinach, but Kale gotta try that one, love it!
