Brain Dump between Snow Dumps
I feel like it’s been forever since I just did a chatty post. This snow has got me all out of wack. Plus, I have so much going on. Specifically surrounding the FitBloggin’ conference. We are a month away and I’m in full fledged planning mode. I don’t think I anticipated how much work organizing a conference would be but I’m having a ton of fun with it. I’m seriously thinking I should have been an event planner. Maybe I’ll change careers. Again. :)
Seriously though, FitBloggin’ is shaping up nicely. The schedule is working out, the speakers are simply inspirational and you got to check out the Who’s Comin’ list. What an amazing bunch of bloggers!
Besides the conference I’ve been spending a lot of time in the kitchen recently. In the last week on GreenLiteBites I’ve posted. . .
- Curried Quinoa Stuffed Peppers
- Slow Cooked Top Sirloin with Rosemary and Thyme
- Homemade Almond Milk the Video
- Produce Pick: Kale
- Chocolate Cherry Almond Vita-Loaf
And to think I thought I was losing my creative juices. Apparently all I needed was trip to the grocery store before a big snow storm. :)
All this cooking and experimenting has me eating a bit more then I normally do and I’m feeling quite… bleh. The lack of running isn’t helping either.
The snow is really crimping my running style. Remember my 2010 Running goals? Well my February run has been rescheduled due to snow and and I’m supposed to start my half marathon training tomorrow! Umm yeah.. with 2 feet of snow on the ground and more on the way, I’m not sure when THAT will happen.
I’ve gotten a few requests to post my training schedule and I will. When I’m able to start it! I promise. :)
So besides shoveling snow and a bit of dancing around the house with the little guy I’m doing nothing in the exercise department at the moment. I don’t think it’s that big of a deal. I’ll get back in the grove again but I definitely notice a difference in how I feel when my activity level decreases. And when I say feel, I mean not only physically but also mentally. I’m so much happier in my skin when active and moving and challenging myself. What a crazy turn of events for the girl who declared her self an exercise hater not that long ago.
Let’s see… what else is going on? Not much really. I updated a few short posts on RoniNoone.com. I’ve been battling SPAM again on BlogToLose and I have a few initiatives I want to get started but they are all going to have to wait until post conference. Here’s what I’m thinking…
- 2010 will be the GreenLiteBites cookbook year. I’m tired of giving myself excuses. I just need to do it already. I have to stop being so scared of it!
- I haven’t had time to record any new Ask Roni video/podcasts and I miss doing them. I’m seriously considering doing a weekly or monthly Ask Roni live chat on USTREAM or BlogTalkRadio. This way I have sessions scheduled and I can do them live instead of taking time to pre-record, edit and upload. Anyway just something I’ve been pondering.
- Redesign! It’s time for a change. I really have an itch to redesign Roni’s Weigh and make it simpler. There are too many things going on on this page! I really want to streamline the whole layout and create a new simple theme.
Ok, I think that’s it. That’s enough, right? :) Right now my inbox is jam packed but I don’t care. I want to cuddle with the hubz, watch a little TV and get some sleep. That’s the only think on my agenda at this very moment. :)
Hope you’re week is off to a great start!
Update: Oh! and I forgot… The @Skinny_Scoopers interview me this week on their podcast this week! Click here to listen. SO fun! :)

What's Cooking in my kitchen?

I'm LOVING Pinterest! I can just scroll all day long looking at food photo after food photo. I wish I had more time to peruse! (I'm RoniNoone there by the way?) The other day I pinned a Portabello Mushroom pizza and was immediately inspired. It's such a simple idea and so light. [...] -
The other day I found myself craving an Orange Julius. Are they as popular as I think they are? Growing up we had an Orange Julius at our local mall. It was always a treat for us at the end of a family shopping trip. Once I was old enough to be [...] -
So I'm a little breakfast nutty at the moment. Little Bean LOVES eggs and I find myself cooking them more and more. This morning I decided to go super light (after last nights chocolate overload) and it was totally satisfying for just over 100 calories! The trick to making [...] -
A few weeks ago I saw Chef Michael Simon make a raw kale salad on The Chew. He sliced beets up real thin and cut the kale into ribbons. Then made a vinaigrette out of red wine vinegar and olive oil. I was immediately intrigued. So far I've only [...] -
I've had this idea for a quick creamy chicken dish for a few days now. It was time to give it a shot. The whole family LOVED it. I'm not joking. The only complaint came from Little Guy who declared his hate of mushrooms yet again BUT he ate everything around them. Fine [...] -
I made this on a total whim yesterday as I had leftover avocado after feeding the baby and leftover Spaghetti squash cooked from the weekend. I roasted the squash to serve with my Chicken tips instead of potatoes and it was AMAZING! Anyway, I'm getting sidetracked. So I'm sitting there staring [...] -
It's post holiday season. You know what that means? Leftover Crescent rolls to experiment with! Every year for Thanksgiving I buy a few canisters. It's the only time I do as I can't be trusted around them. Let's just say I'd beat you in the How-Many-Crescent-Rolls-Can-You-Eat-In-One-Sitting game and leave [...] -
Last week the kids and I tried parsnips for the first time and I've made them 3 times since. I wanted to figure out the best way to roast them. Yeah, that's it, the best way to roast them. You'll buy that right? Right? The truth is, I'm obsessed. I found myself [...] -
Yesterday just felt like a good day to stuff an acorn squash. I had one sitting on my counter for quite some time and it was just begging to be cooked. Since both husband and child don't like it I made a solo meal just for me and, well, it was DELICIOUS! [...] -
I bought a fennel bulb on a whim for the holidays not knowing quite what I would do with it. Of course I forgot about until yesterday when I was rummaging through the fridge trying to figure out what I wanted to make for breakfast. I pulled it out and stared [...] -
I probably should have warned you I was taking a holiday hiatus. I've been soaking up every moment of family time imaginable these last few days, leaving no time for anything else. Not even blogging! Shocking I know. ;) So I return not with a new recipe, per se, but to [...] -
Here's a quick idea for when you find yourself with a spaghetti squash but don't quite know what to do with it. Come on. Admit it. That's happened to you too. It's sure happened to me! I roasted this squash on Sunday... [...] -
I'm not sure if this will be a crowd pleaser, but I liked it and thought I'd share in hopes it inspires you to have some fun with kale. I loved the combination of sweet pear, earthy kale, salty bacon bits and creamy hummus. The only issue with the wrap was [...] -
I'm going on day 2 of counting Weight Watcher Points and I'm already inspired to come up with light, healthy meals for myself. It's like I needed the constraint of points to motivate me. Isn't that weird? Anyway, all morning I was brainstorming what to make for lunch. I wanted something flavorful [...] -
I have a friend who patiently cleaned, peeled and cubed a fresh pumpkin and then selflessly gave me some. Scratch that, a TON! I would have never even thought of doing something like that! But now that I have it in my fridge the ideas are flowing. First, I roasted some [...] -
CHRISTMAS COOKIES! YAY! Sorry. I'm so excited! Little Guy and I had tons of fun making and decorating cookies today. It may just be my favorite part of the holiday season. I loved it when I was a kid and now I get to do it with my own kids. [...] -
This may be my simplest idea yet, but it was so tasty and satisfying I had to share. Plus you guys know I'm a Laughing Cow Community Leader so I'm all about sharing fun ways to use their products. You guys may also know how I feel about pausing and making [...] -
I made this on Thursday. THURSDAY! I hate when I can't post something I've eaten within 24 hours. It just bugs me. Not sure why, it really doesn't matter when I post it, does it? Anyway, I did whip this up to cure a pizza craving and I couldn't be happier. [...] -
It's been awhile since I jazzed up a tilapia fillet. I've breaded them before, coated them in oats, flavored them like one of my favorite drinks and topped them with a fun salsa. It was time to bring nuts into the party. You are going to think I'm crazy but I've [...] -
Fun leftover turkey idea #2! Click here for leftover turkey idea #1. I had a little Gouda leftover from this years Harvest Salad and decided to put all the same flavors from the salad into a quesadilla. I just can't get enough of the smokey gouda/sweet craisin combo. It goes [...] -
It's the day after Thanksgiving and my refrigerator ROCKS! I have leftover turkey, mashed potatoes, stuffing, roasted Brussels Sprouts, a bunch of veggies and tons of miscellaneous fun stuff. I've already made stock from the bones (like this) and my first batch of soup, Classic Turkey Noodle. I hope to share [...] -
I'm so sorry I've been slacking in the Thanksgiving recipe department. I feel like a bad food blogger. Everyone else is posting festive ideas and here I've gone missing for a few days. Maybe it's because I'm not doing anything special for Turkey day. I finally got my holiday cooking [...] -
I just made a quick, tasty one pot meal the whole family ate without complaint! And when I say "whole" I mean WHOLE! The Baby, The Little Guy, AND The Picky Eater Husband! Here's the story…I was in NO mood to spend a lot of time on dinner. The thought [...] -
Sunday I made this sandwich on a complete whim. I just bought a bunch of red delicious apples (they were on sale.) I had 2 slices of turkey breast left in the fridge and a few wedges of The Laughing Cow Cheese just waiting to be used. As you guys may [...] -
I bought a bag of kale instead of a bag of spinach this week. My plan was to figure out ways to get this power house vegetable IN me and hopefully IN my family, although unless I hide it, they aren't game. According to NutritionData.com, Kale... [...]

I really wish I was going to FitBloggin’ this year. It just isn’t going to work. Next year!! I really want to meet you Roni~ You’ve been a great inspiration!
I, too, wish I could do Fit Bloggin’. Maybe next time.
Looks like you and the family had a lot more fun with the snow than I had a couple of weeks ago, when we had 5 feet of the stuff over about 3 days. Times like that, I wish I could:
A. Hole up inside with cocoa and watch it come down
B. Be a kid so I could enjoy playing in it. (As it is, I just have to shovel it and drive in it. No fun at all.)
Roni,
Feel free to email me if you’d like some tips on running in the snow/ice. I live in Syracuse, NY, and we have this much snow many, many times during the winter–and our “winter” can go from October to April! Despite that, I run almost every other day early in the AM. I’d be happy to share what I’ve learned!
Faith
Actually, Faith, I wouldn’t mind some tips!
When I typed in your website this morning I was thinking “It’s about time for her to re-do her page b/c it’s been a while.” Wow! Nailed that one on the head! :) I don’t think it’s too busy but you’re the expert.
I’m jealous of all your snow. We got 6″ on Friday and are getting more as I type…maybe up to 8″ this time. I’d love to see a dump like you got!! :) Can’t wait to see your half marathon training….Mine is a few weeks before yours.
Faith,
I’d love to hear them! I have run in the snow by my problem with this storm is there are is no room! I’m in a suburban area and there are no sidewalks cleared. Even the 2 lane roads are only plowed down to 1. So there’s hardly room for cars. :(
Can’t believe all that snow! I wish I was going to fitbloggin as well…
I don’t know how you do it all!!!! You must have a high reserve of energy!
I’m so excited about Fitbloggin! Can’t wait!!!
I’m excited to see the cookbook and the blog redesign!
Simply cannot wait for the cookbook! OMG, I’m so excited. =)
Wow! What an awesome job you’ve done and an awesome blog! Those recipes look so good, and recently I switched over to almond milk, now I’m in love with the stuff! I’ve lost over 40 pounds so far with diet and exercise. I just might try some of your recipes to help me out too lol Fitness Achievement
I can relate to how you find cooking stimulating. When I feel down in the dumps, cooking up an interesting but simple dish is enough to make me smile. Even if just a bit.
Hi Roni! This has nothing to do with this post but I was wondering if you picked the winners for your spice giveaway yet.. I dont know if I may have missed it.. Thanks! =]
I wish I thought of going to fitbloggin…. what was I thinking?? I’ll be thinking of you all while I am pounding away at my first half marathon on March 21st!!!
