Updates Updates and oh Heck.. Why Not? More Updates..
Not a very creative title but all these thoughts in my head are otherwise unrelated except for the pure fact that they are updates. :)
Update 1
I can’t believe I forgot! Along with the Weight Watchers 3 Month random drawing I have an issue of Weight Watchers Magazine autographed by Jenny McCarthy to give away. Now let me warn ya… it’s a little beat up. But Jenny signed right in the address box so it’s super easy to see.

If you’d like to be in the running for this giveaway let me know in the comments. I’ll pick a winner Monday when I announce the 3 month winners.
Update 2
Yesterday I officially started "the Challenge" I’m taking the site’s advice and using Monday, Wednesdays and Fridays to do my push ups, sit ups and squats. So far so good but I have to admit I’m a little sore! :)
Here’s my Week 1 Day 1 numbers….
- 100 Pushups: Week 1 Day 1
- 10, 12, 7, 7, max: 10
- 200 Squats: Week 1 (started on Week 3) Day 1
- 19, 24, 19, 19, max: 85 (I swear I get bored before anything)
- 200 Sit-Ups: Week 1 Day 1
- 15, 18, 10, max: 17
Update 3
I just need to vent for a minute so if you don’t want to hear it move on to Update 4.
Still here? ok, cover you’re ears…
I’M SICK OF EATING OUT! We are spending money we really shouldn’t be spending. I’m eating things I really shouldn’t be eating but it’s just so darn appealing after a long day of work when presented with a kitchen with barely any pantry items (I’ve been letting my stock run out) and less then half my pots, an electric stove (gas is just my preference) a dishwasher that doesn’t work and shallow sink with no where to dry dishes. Not to mention our table is never clean as we don’t have any place to.put.anything.
Ugh.
Ok, I feel better.
I’ll find my groove again. It’s going to be a busy three weeks as we move into the house. I need to take my own advice and make the best choices I can while planning as much as possible.
Update 4
FitBloggin’10 is open for registration! FitBloggin is a conference I’m organizing for those that blog or want to blog about fitness, wellness, good food and a healthy lifestyle. It’s a place to connect, learn, grow and network.
I’m (somehow — really I’m not sure how) organizing this while moving and working full time. Again, taking my own advice and doing what I can when I can. :)
Keep an eye on FitBloggin.com for updates and click here to see the tentative schedule.
Update 5
DUDE! I have a lot going on over at Divine Caroline…
First someone, I have NO idea who, nominated Roni’s Weigh for a Love This Site award. Very cool and I’m honored. I normally have to nominate my self for those kinds of things. ;)
I’m also still "coaching" on the You.Propelled site. My current article is called 5 Ways to Start Shifting Your Body Image Toward the Positive and I’ve also started a Chit Chat about inspirations. And don’t forget… just by entering a proclamation on the main page you are entered to win $5000!
I’m proud to be working with Propel® as a sponsor of the You.Propelled program.
Update 6
The house. Ahhh the house. It’s Pretty much done! I forgot to take a new pick since Monday. Thursday is closing. I’m scared, nervous, excited, overwhelmed, ecstatic and grateful I was able to sell my old house to make this happen. At this point I’m crossing my fingers that no crazy, insane snags happen in the final days. Sometimes I can’t stop my brain from imagining the worst case scenario. Bad I know.
*phew* enough updates for ya? :)
Right now I’m ready to relax with hubby and watch a little tv. The kid’s lunch is made, my running clothes are on and I’m ready for a few miles before work tomorrow. Only 40 days until the marathon *nail biting* YIKES!

What's Cooking in my kitchen?

I've recently discovered the amazing combination of cheese and dried cherries. I know, it sounds weird, but seriously… good! The other day I smeared some Laughing Cow Light Swiss on Cucumber slices and then topped with a cherry. It was a fun, sweet twist on standard cheese and crackers. Well, cheese [...] -
If I was a good blogger this idea would have been published BEFORE the Super Bowl not during it. I made these today to have a little fun. Surprisingly, The Husband liked them even though he didn't eat more than one. Why? Because he's strange like [...] -
If you read my weight loss blog you know I'm battling a bit of back and neck pain right now. I'm starting to feel a little better but those first few days where rough. Being the head chef of the household, this meant we ordered in a couple of times. I'm [...] -
I'm LOVING Pinterest! I can just scroll all day long looking at food photo after food photo. I wish I had more time to peruse! (I'm RoniNoone there by the way?) The other day I pinned a Portabello Mushroom pizza and was immediately inspired. It's such a simple idea and so light. [...] -
The other day I found myself craving an Orange Julius. Are they as popular as I think they are? Growing up we had an Orange Julius at our local mall. It was always a treat for us at the end of a family shopping trip. Once I was old enough to be [...] -
So I'm a little breakfast nutty at the moment. Little Bean LOVES eggs and I find myself cooking them more and more. This morning I decided to go super light (after last nights chocolate overload) and it was totally satisfying for just over 100 calories! The trick to making [...] -
A few weeks ago I saw Chef Michael Simon make a raw kale salad on The Chew. He sliced beets up real thin and cut the kale into ribbons. Then made a vinaigrette out of red wine vinegar and olive oil. I was immediately intrigued. So far I've only [...] -
I've had this idea for a quick creamy chicken dish for a few days now. It was time to give it a shot. The whole family LOVED it. I'm not joking. The only complaint came from Little Guy who declared his hate of mushrooms yet again BUT he ate everything around them. Fine [...] -
I made this on a total whim yesterday as I had leftover avocado after feeding the baby and leftover Spaghetti squash cooked from the weekend. I roasted the squash to serve with my Chicken tips instead of potatoes and it was AMAZING! Anyway, I'm getting sidetracked. So I'm sitting there staring [...] -
It's post holiday season. You know what that means? Leftover Crescent rolls to experiment with! Every year for Thanksgiving I buy a few canisters. It's the only time I do as I can't be trusted around them. Let's just say I'd beat you in the How-Many-Crescent-Rolls-Can-You-Eat-In-One-Sitting game and leave [...] -
Last week the kids and I tried parsnips for the first time and I've made them 3 times since. I wanted to figure out the best way to roast them. Yeah, that's it, the best way to roast them. You'll buy that right? Right? The truth is, I'm obsessed. I found myself [...] -
Yesterday just felt like a good day to stuff an acorn squash. I had one sitting on my counter for quite some time and it was just begging to be cooked. Since both husband and child don't like it I made a solo meal just for me and, well, it was DELICIOUS! [...] -
I bought a fennel bulb on a whim for the holidays not knowing quite what I would do with it. Of course I forgot about until yesterday when I was rummaging through the fridge trying to figure out what I wanted to make for breakfast. I pulled it out and stared [...] -
I probably should have warned you I was taking a holiday hiatus. I've been soaking up every moment of family time imaginable these last few days, leaving no time for anything else. Not even blogging! Shocking I know. ;) So I return not with a new recipe, per se, but to [...] -
Here's a quick idea for when you find yourself with a spaghetti squash but don't quite know what to do with it. Come on. Admit it. That's happened to you too. It's sure happened to me! I roasted this squash on Sunday... [...] -
I'm not sure if this will be a crowd pleaser, but I liked it and thought I'd share in hopes it inspires you to have some fun with kale. I loved the combination of sweet pear, earthy kale, salty bacon bits and creamy hummus. The only issue with the wrap was [...] -
I'm going on day 2 of counting Weight Watcher Points and I'm already inspired to come up with light, healthy meals for myself. It's like I needed the constraint of points to motivate me. Isn't that weird? Anyway, all morning I was brainstorming what to make for lunch. I wanted something flavorful [...] -
I have a friend who patiently cleaned, peeled and cubed a fresh pumpkin and then selflessly gave me some. Scratch that, a TON! I would have never even thought of doing something like that! But now that I have it in my fridge the ideas are flowing. First, I roasted some [...] -
CHRISTMAS COOKIES! YAY! Sorry. I'm so excited! Little Guy and I had tons of fun making and decorating cookies today. It may just be my favorite part of the holiday season. I loved it when I was a kid and now I get to do it with my own kids. [...] -
This may be my simplest idea yet, but it was so tasty and satisfying I had to share. Plus you guys know I'm a Laughing Cow Community Leader so I'm all about sharing fun ways to use their products. You guys may also know how I feel about pausing and making [...] -
I made this on Thursday. THURSDAY! I hate when I can't post something I've eaten within 24 hours. It just bugs me. Not sure why, it really doesn't matter when I post it, does it? Anyway, I did whip this up to cure a pizza craving and I couldn't be happier. [...] -
It's been awhile since I jazzed up a tilapia fillet. I've breaded them before, coated them in oats, flavored them like one of my favorite drinks and topped them with a fun salsa. It was time to bring nuts into the party. You are going to think I'm crazy but I've [...] -
Fun leftover turkey idea #2! Click here for leftover turkey idea #1. I had a little Gouda leftover from this years Harvest Salad and decided to put all the same flavors from the salad into a quesadilla. I just can't get enough of the smokey gouda/sweet craisin combo. It goes [...] -
It's the day after Thanksgiving and my refrigerator ROCKS! I have leftover turkey, mashed potatoes, stuffing, roasted Brussels Sprouts, a bunch of veggies and tons of miscellaneous fun stuff. I've already made stock from the bones (like this) and my first batch of soup, Classic Turkey Noodle. I hope to share [...] -
I'm so sorry I've been slacking in the Thanksgiving recipe department. I feel like a bad food blogger. Everyone else is posting festive ideas and here I've gone missing for a few days. Maybe it's because I'm not doing anything special for Turkey day. I finally got my holiday cooking [...]

Hey Roni! What a cool giveaway!
I am thinking about doing the sit-ups and the squats challenge (just found out they existed when you did – like a week or so ago, I think). I did the 100 push-up one, and really liked it.
Also checked out the schedule for FitBloggin. Looks really good! Want to take a minute to remind everyone that its a Co-Ed event, so encourage my fellow men folk to get on the bandwagon and show up!
Divine Caroline: Well deserved.
I know Thursday will come as a big relief. :)

I’d love to win the magazine. It would be sooo cool to read a US issue of WW magazine. I live in the UK and have done WW since Jan 15th. Lost 51,5 pounds so far. Keeping my fingers crossed that I’ll be lucky with this giveaway LOL!

Don’t know if I can wait for the autographed copy of WW magazine..not that I would win it anyways… so think I’m gonna go buy me one..

…and I thought I had a lot going on!… Ive got my final year of University coming up which is going to be hectic as it is!.. but Im also teaching myself photoshop, flash, css and html on the side! on top of a part time job!.. All I have to say is that well done and keep at it!
In regards to your rant – the crock pot should be your BEST FRIEND right now!
Here is an easy recipe that can get you through two meals…sorry, no ww points…I’m sure you can make it healthier tho. Regardless, it’s still better than fast food.
Crock pot chicken fajitas to quesadila pie
Day 1:
Put 3-4 boneless skinless chicken breasts into crockpot. Pour a jar of salsa on top. Cook on low 6-8 hours. After cooking, shred chicken with a fork. Serve in flour tortillas with other tortilla toppings/sides. Also good with some spanish rice and/or cornbread muffins on the side.
Day 2:
Take leftover tortillas, chicken, rice, and other fixings, especially shredded cheese. Spray a pie plate with cooking spray, place tortilla in plate. top with chicken, rice, other fixings and cheese. Repeat three more times, ending with a tortilla on top. Spray top tortilla with cooking spray.
Bake at 350 for about 30 minutes – just to warm things up and melt the cheese. Slice like a pie and enjoy!
This couldn’t be any easier and will keep you from eating out!!!
Enter me in for the magazine please.
Congrats on your new house. I know you cannot wait to make it a home and start back on all those wonderful recipes you provide.
I understand about the eating out. We got into a rut a while ago. Now I made a weekly menu and surprisingly it is freeing. However, it always has me on edge whether the toddler will eat it!
Oh, love love the hair… toodles
Luvin your Update 3!
Just proves that once you reach maintenance, not a whole lot changes. You still have to deal with the same baggage you did while losing weight. You just get to eat a tad more.
Enter me please!
Wouls love to read the WW mag and therefore would love to win it :)
Jenny Mcarthy!!! REALLY…did you get to meet her?
That seems like a lot of stuff to be going on at once! Make sure you continue to exercise. That will help to alleviate some stress.
Roni! I can’t tell you how excited I am for the FitBloggin! Conference. It took me about thirty seconds to decide I wanted to register, immediately. I’ve already posted about it, blipped it in my sidebar, and had a workout party with my best pal about it. I cannot wait!
Love,
Allyson
