Thursday Thoughts

I’m FULL of thoughts today so consider yourself warned…
- First let me update you on my injuries. I swear this is the first time in a long time I just feel OLD! First there was the knee pain after the 10 miler a few weeks ago. I hear you on shoes and I will be getting my feet measured for new long distant sneaks. In the mean time I did a bit of research and found this article about runners knee. I have cut back a bit on my running as the pain doesn’t usually start until around the 3-4 mile. I’m also trying to get on the bike and even in the pool now and then at the gym. As for my back it’s FINALLY getting better. There’s still a tinge of discomfort but I’ve been able to run and workout the last few days without much discomfort. The only thing that made me feel better was this massager that the trainer let me borrow. I’m really hoping he doesn’t ask for it back!
- Another thing that’s been helping my back is yoga. I’m trying to get to at least 1 yoga class a week and let me tell ya, last night’s class was AWESOME! It’s just another thing I wish I tried a long time ago. An hour to stretch and breath with no distractions is just what I need to make it through my week. I’m not sure I’d want do it with my dog BUT I can see why some would like to. I mean, is it really that different then all those baby workouts
?
- On a "You’ve GOT to be kidding me" note – Thinner is better to curb global warming, study says – does this kind of story irk you or what? I’m not sure if I’ll explain my position on this clearly and I don’t want to rant BUT there are things thin and healthy people do daily that hurt the environment too. I know there’s a ton more I, myself, can do better. Instead of wasting our time researching a correlation between obesity and environmental issues can’t we be educating people on how to live the best life they can, regardless of their size. No pointing fingers, no ridiculous claims that weight is the root of all evil. I feel like all it does is give fuel to the fiery debate of fat acceptance vs. overly health conscious. It feels very propagand-ish to me. No? What do you think?
- More healthy food choices lead to less healthy eating: study – I’m not going to say much about this one except, I CHOSE THE SALD EVERY TIME! and so does Julie ;~)
- Man! I just remembered it’s been 2 weeks since posting a thoughts post. That means I have to back track on GreenLiteBites updates. I made a few dinners including a new fav of mine, Golden Corn Muffin Topped Turkey Chili, a new family fav, Peppered Pork with Peppers and a new toddler fav that he didn’t want to eat for some strange reason, Lo Mein-ish Angel Hair. I also made a new smoothie, Mango Banana and whipped a dish up for just me using couscous and pumpkin seed kernels. Funny, I had the feeling I wasn’t posting enough over there but now that I listed it all out, HOLY CRAP, I cook a lot. lol Tonight I’m planning on making a healthier lighter version of THIS. I’ll let you know how it turns out.
- On SkinnyMinnyMedia I posted a video that intrigued me about WordPress and web usability. I also wrote a Reality Check About Blogging For Dollars. This weekend I have a twitter poll planned, so stay tuned for that.
Other news….
- I recorded a podcast yesterday and should have it ready tomorrow. I have two product reviews coming and I’ve been making progress on the cook book! I decided on the 35 recipes and the designer and I met. We are working on a fun personal touch kind of book design. I’m super excited.
- In a strange turn of events I have a "REAL" job interview next week. An opportunity presented itself and although I wasn’t looking, I decided to throw my resume into the mix to learn more about it. "It" being as Online Interactive Media and Information Designer position and local state college. I’ve made it to the final round of interviews and will be getting a tour and presenting to them Tuesday. I’m not sure I want a full time gig at this point, I sort of spoiled myself with this whole professional blogging thing. :) BUT the group there seems to be very much like me, enterpernual (is that a word?) self-starter geeks who just love what they do. Don’t worry, I don’t plan to stop blogging, it’s in my blood! But I may cut back a bit IF (and that’s a BIG IF) this job is right for me. As others may tell you, blogging is a labour of love. And I love it. :)
- Finally, one more thing and then I’ll let you go. I’ve been toying with the idea of organizing a conference for all those interested in blogging for health, wellness, food, weight loss and overall fitness. I’m this *pinching fingers closely* to committing to a date and making the announcement. I just couldn’t keep it a secret any longer (I’m REALLY bad with suprises.) I’m hoping to make the official announcement next week with WAY more details.
- OH!! I forgot… AGAIN. In honor of Charlie’s Book Tour, he’s giving away a copy of his book. Simply leave a comment on any one if his book tour posts here on Roni’s Weigh. They are… (if you already commented you are in the running! I’ll pick a winner next Thursday.)
ok, I’m OUT! Later. :)

What's Cooking in my kitchen?

I've recently discovered the amazing combination of cheese and dried cherries. I know, it sounds weird, but seriously… good! The other day I smeared some Laughing Cow Light Swiss on Cucumber slices and then topped with a cherry. It was a fun, sweet twist on standard cheese and crackers. Well, cheese [...] -
If I was a good blogger this idea would have been published BEFORE the Super Bowl not during it. I made these today to have a little fun. Surprisingly, The Husband liked them even though he didn't eat more than one. Why? Because he's strange like [...] -
If you read my weight loss blog you know I'm battling a bit of back and neck pain right now. I'm starting to feel a little better but those first few days where rough. Being the head chef of the household, this meant we ordered in a couple of times. I'm [...] -
I'm LOVING Pinterest! I can just scroll all day long looking at food photo after food photo. I wish I had more time to peruse! (I'm RoniNoone there by the way?) The other day I pinned a Portabello Mushroom pizza and was immediately inspired. It's such a simple idea and so light. [...] -
The other day I found myself craving an Orange Julius. Are they as popular as I think they are? Growing up we had an Orange Julius at our local mall. It was always a treat for us at the end of a family shopping trip. Once I was old enough to be [...] -
So I'm a little breakfast nutty at the moment. Little Bean LOVES eggs and I find myself cooking them more and more. This morning I decided to go super light (after last nights chocolate overload) and it was totally satisfying for just over 100 calories! The trick to making [...] -
A few weeks ago I saw Chef Michael Simon make a raw kale salad on The Chew. He sliced beets up real thin and cut the kale into ribbons. Then made a vinaigrette out of red wine vinegar and olive oil. I was immediately intrigued. So far I've only [...] -
I've had this idea for a quick creamy chicken dish for a few days now. It was time to give it a shot. The whole family LOVED it. I'm not joking. The only complaint came from Little Guy who declared his hate of mushrooms yet again BUT he ate everything around them. Fine [...] -
I made this on a total whim yesterday as I had leftover avocado after feeding the baby and leftover Spaghetti squash cooked from the weekend. I roasted the squash to serve with my Chicken tips instead of potatoes and it was AMAZING! Anyway, I'm getting sidetracked. So I'm sitting there staring [...] -
It's post holiday season. You know what that means? Leftover Crescent rolls to experiment with! Every year for Thanksgiving I buy a few canisters. It's the only time I do as I can't be trusted around them. Let's just say I'd beat you in the How-Many-Crescent-Rolls-Can-You-Eat-In-One-Sitting game and leave [...] -
Last week the kids and I tried parsnips for the first time and I've made them 3 times since. I wanted to figure out the best way to roast them. Yeah, that's it, the best way to roast them. You'll buy that right? Right? The truth is, I'm obsessed. I found myself [...] -
Yesterday just felt like a good day to stuff an acorn squash. I had one sitting on my counter for quite some time and it was just begging to be cooked. Since both husband and child don't like it I made a solo meal just for me and, well, it was DELICIOUS! [...] -
I bought a fennel bulb on a whim for the holidays not knowing quite what I would do with it. Of course I forgot about until yesterday when I was rummaging through the fridge trying to figure out what I wanted to make for breakfast. I pulled it out and stared [...] -
I probably should have warned you I was taking a holiday hiatus. I've been soaking up every moment of family time imaginable these last few days, leaving no time for anything else. Not even blogging! Shocking I know. ;) So I return not with a new recipe, per se, but to [...] -
Here's a quick idea for when you find yourself with a spaghetti squash but don't quite know what to do with it. Come on. Admit it. That's happened to you too. It's sure happened to me! I roasted this squash on Sunday... [...] -
I'm not sure if this will be a crowd pleaser, but I liked it and thought I'd share in hopes it inspires you to have some fun with kale. I loved the combination of sweet pear, earthy kale, salty bacon bits and creamy hummus. The only issue with the wrap was [...] -
I'm going on day 2 of counting Weight Watcher Points and I'm already inspired to come up with light, healthy meals for myself. It's like I needed the constraint of points to motivate me. Isn't that weird? Anyway, all morning I was brainstorming what to make for lunch. I wanted something flavorful [...] -
I have a friend who patiently cleaned, peeled and cubed a fresh pumpkin and then selflessly gave me some. Scratch that, a TON! I would have never even thought of doing something like that! But now that I have it in my fridge the ideas are flowing. First, I roasted some [...] -
CHRISTMAS COOKIES! YAY! Sorry. I'm so excited! Little Guy and I had tons of fun making and decorating cookies today. It may just be my favorite part of the holiday season. I loved it when I was a kid and now I get to do it with my own kids. [...] -
This may be my simplest idea yet, but it was so tasty and satisfying I had to share. Plus you guys know I'm a Laughing Cow Community Leader so I'm all about sharing fun ways to use their products. You guys may also know how I feel about pausing and making [...] -
I made this on Thursday. THURSDAY! I hate when I can't post something I've eaten within 24 hours. It just bugs me. Not sure why, it really doesn't matter when I post it, does it? Anyway, I did whip this up to cure a pizza craving and I couldn't be happier. [...] -
It's been awhile since I jazzed up a tilapia fillet. I've breaded them before, coated them in oats, flavored them like one of my favorite drinks and topped them with a fun salsa. It was time to bring nuts into the party. You are going to think I'm crazy but I've [...] -
Fun leftover turkey idea #2! Click here for leftover turkey idea #1. I had a little Gouda leftover from this years Harvest Salad and decided to put all the same flavors from the salad into a quesadilla. I just can't get enough of the smokey gouda/sweet craisin combo. It goes [...] -
It's the day after Thanksgiving and my refrigerator ROCKS! I have leftover turkey, mashed potatoes, stuffing, roasted Brussels Sprouts, a bunch of veggies and tons of miscellaneous fun stuff. I've already made stock from the bones (like this) and my first batch of soup, Classic Turkey Noodle. I hope to share [...] -
I'm so sorry I've been slacking in the Thanksgiving recipe department. I feel like a bad food blogger. Everyone else is posting festive ideas and here I've gone missing for a few days. Maybe it's because I'm not doing anything special for Turkey day. I finally got my holiday cooking [...]

I must admit, I only choose the salad about half the time. That’s why I still have 20 pounds to go to get to my goal weight after doing WW for nearly TWO years! :D
Roni, just thought you’d like to know that there are some other food bloggers who are putting together a “blog summit.”
Here’s a post about it: http://carrotsncake.com/2009/04/portable-breakfasts.html
AWESOME! Thanks!
Best of luck on the interview!! Working in something I truly love has kept me “sane” (well, my version of sane)!!
Speaking of running, is there one reliable site that lists races per state? Also, how do you choose which race you run? Is one more prestigious than another?
Thanks!
BigTickles – Most the races I’ve run were recommended to me be friends. I do search on active.com and there is a local running store that advertises them on their site. I just pick it based on date and distance. Prestige is nothing that has ever entered my mind. Actually I may run a 5k this weekend just for the heck of it because someone mentioned it to me, never heard it before, it’s just an excuse to run. :)
Ohhh a workout, good food, weight loss blog conference type event sounds like fun! I hope it’s close enough to go to. :)
Hey Roni,
How are things. 1. Have you tried yogadownloads.com? I love this website. It gives you the yoga class and it’s cheap along with pose guides. There’s another group of bloggers which I follow who are also putting together a blogging summit as well: Jenna @ eatliverun.com and Caitlin @ thehealthytippingpoint.com. Just spreading the info.
Happy knee recovery!
Michelle
I have to start doing yoga again… It makes me feel sooo good! :)
coolrunning.com – great resource for runners, tons of great articles as well as state by state race listings
Thanks for sharing so many great links Roni! Wow! :)
Thanks Michelle!
I am doing half marathon training for a race at the end of May as well (Boston’s Run to Remember) and, coincidentally, have also diagnosed myself with runner’s knee. Interestingly, my knee only really hurts when I run on a treadmill and never when I run outside. I’ve read a lot about it and the consensus seems to be that it has something to do with my quads not being strong enough, so I’ve started doing some quad-strengthening exercises such as wall-sits, squats and leg lifts. I also plan on getting new sneakers this weekend since I, apparently, am an over-protonator (i.e. flat-footed). Stretching helps so much, as well as reminding myself to not over-do it and to cross train frequently. Hope this helps and good luck with the job interview!
In the Chicago area there is a very established runners organization (www.cararuns.org). It lists all of the certifed races. I’m sure if you google race orginazations by state/city/area, you might have luck with finding local races.
