Thursday Thoughts XIX

Not sure what’s up with me this week. I’ve been very unmotivated. I’ll muster up some energy to go and run only to quit early. I’ll keep a good food journal all day just to ditch it at dinner and pig out on evening snacks. I’m entering the "I’ll just start tomorrow" stage. Bleh. That’s how I feel.
I know it’s a phase. I’ve been making an effort to go to bed a little earlier this week, hoping that will help. I’m a bit stressed with tax season, having a house on the market, keeping my blogs going, and just being a wife/parent. *sigh* such is life, I’ll get over it. I always do. In the meantime I have a few "thoughts" to share. :)
- A friend shot me this link in an instant message a few days ago with the message "You have to see this." I had no idea what to expect. Then when I saw the… the… heart attacks on a plate? (no idea how to describe it) in a strange way it made me feel a little better. Like a wake up call that even though I’m feeling a bit down now I’ll never be who I once was. And yes I was once someone who would totally go for stuff like the Double Bacon Hamburger Fatty Melt and the Brick Of Cheese. I mean pizza in a vending machine… Come ON! Thank GOD my dorm floor wasn’t equipped with that or the 60lbs I gained in college would have easily been 120.
- Looking for other (ok, ok, better) motivation, especially on the running front, I found Robins Story. I feel as if I hit a roadblock in my training. I can’t seem to get passed the 4 mile mark. So after reading about Robin I headed over to MapMyRun to find some new routes. I’m hoping it helps get motivated to run again.
- Speaking of what motivates me John, from John is Fit just posted some bloggers favorite fitness gadgets. Take a guess what mine is (although it hasn’t worked that well for me this week.)
- Need a giggle? Are are you a Trader Joe’s fan? Check out the unofficial commercial. I totally think Trader Joe’s should air it. :) Thanks everyone who sent it to me!
- I had a slow week on GreenLiteBites. Today I posted Bread-End Crumb Chicken Nuggets, this weeks video and I finally got around to sharing my Old Fashioned Blueberry Oatmeal idea.
- RoniNoone.com also saw a slow week (although I have SO many ideas and tutorials to get out of my head!) I did just post the winners of the blog header contest and a few things I picked up at the Blissdom Conference last weekend.
- As for other things… I”m chipping away at my new to do list. Yes I started one after reading all the fabulous advice given on the Question of the Week.
- RIght now I going to post this and then go to bed. I’m really trying to make an effort to get more sleep. I really think all the late nights working are catching up with me.
So on that note.. Good Night! :)

What's Cooking in my kitchen?

I've recently discovered the amazing combination of cheese and dried cherries. I know, it sounds weird, but seriously… good! The other day I smeared some Laughing Cow Light Swiss on Cucumber slices and then topped with a cherry. It was a fun, sweet twist on standard cheese and crackers. Well, cheese [...] -
If I was a good blogger this idea would have been published BEFORE the Super Bowl not during it. I made these today to have a little fun. Surprisingly, The Husband liked them even though he didn't eat more than one. Why? Because he's strange like [...] -
If you read my weight loss blog you know I'm battling a bit of back and neck pain right now. I'm starting to feel a little better but those first few days where rough. Being the head chef of the household, this meant we ordered in a couple of times. I'm [...] -
I'm LOVING Pinterest! I can just scroll all day long looking at food photo after food photo. I wish I had more time to peruse! (I'm RoniNoone there by the way?) The other day I pinned a Portabello Mushroom pizza and was immediately inspired. It's such a simple idea and so light. [...] -
The other day I found myself craving an Orange Julius. Are they as popular as I think they are? Growing up we had an Orange Julius at our local mall. It was always a treat for us at the end of a family shopping trip. Once I was old enough to be [...] -
So I'm a little breakfast nutty at the moment. Little Bean LOVES eggs and I find myself cooking them more and more. This morning I decided to go super light (after last nights chocolate overload) and it was totally satisfying for just over 100 calories! The trick to making [...] -
A few weeks ago I saw Chef Michael Simon make a raw kale salad on The Chew. He sliced beets up real thin and cut the kale into ribbons. Then made a vinaigrette out of red wine vinegar and olive oil. I was immediately intrigued. So far I've only [...] -
I've had this idea for a quick creamy chicken dish for a few days now. It was time to give it a shot. The whole family LOVED it. I'm not joking. The only complaint came from Little Guy who declared his hate of mushrooms yet again BUT he ate everything around them. Fine [...] -
I made this on a total whim yesterday as I had leftover avocado after feeding the baby and leftover Spaghetti squash cooked from the weekend. I roasted the squash to serve with my Chicken tips instead of potatoes and it was AMAZING! Anyway, I'm getting sidetracked. So I'm sitting there staring [...] -
It's post holiday season. You know what that means? Leftover Crescent rolls to experiment with! Every year for Thanksgiving I buy a few canisters. It's the only time I do as I can't be trusted around them. Let's just say I'd beat you in the How-Many-Crescent-Rolls-Can-You-Eat-In-One-Sitting game and leave [...] -
Last week the kids and I tried parsnips for the first time and I've made them 3 times since. I wanted to figure out the best way to roast them. Yeah, that's it, the best way to roast them. You'll buy that right? Right? The truth is, I'm obsessed. I found myself [...] -
Yesterday just felt like a good day to stuff an acorn squash. I had one sitting on my counter for quite some time and it was just begging to be cooked. Since both husband and child don't like it I made a solo meal just for me and, well, it was DELICIOUS! [...] -
I bought a fennel bulb on a whim for the holidays not knowing quite what I would do with it. Of course I forgot about until yesterday when I was rummaging through the fridge trying to figure out what I wanted to make for breakfast. I pulled it out and stared [...] -
I probably should have warned you I was taking a holiday hiatus. I've been soaking up every moment of family time imaginable these last few days, leaving no time for anything else. Not even blogging! Shocking I know. ;) So I return not with a new recipe, per se, but to [...] -
Here's a quick idea for when you find yourself with a spaghetti squash but don't quite know what to do with it. Come on. Admit it. That's happened to you too. It's sure happened to me! I roasted this squash on Sunday... [...] -
I'm not sure if this will be a crowd pleaser, but I liked it and thought I'd share in hopes it inspires you to have some fun with kale. I loved the combination of sweet pear, earthy kale, salty bacon bits and creamy hummus. The only issue with the wrap was [...] -
I'm going on day 2 of counting Weight Watcher Points and I'm already inspired to come up with light, healthy meals for myself. It's like I needed the constraint of points to motivate me. Isn't that weird? Anyway, all morning I was brainstorming what to make for lunch. I wanted something flavorful [...] -
I have a friend who patiently cleaned, peeled and cubed a fresh pumpkin and then selflessly gave me some. Scratch that, a TON! I would have never even thought of doing something like that! But now that I have it in my fridge the ideas are flowing. First, I roasted some [...] -
CHRISTMAS COOKIES! YAY! Sorry. I'm so excited! Little Guy and I had tons of fun making and decorating cookies today. It may just be my favorite part of the holiday season. I loved it when I was a kid and now I get to do it with my own kids. [...] -
This may be my simplest idea yet, but it was so tasty and satisfying I had to share. Plus you guys know I'm a Laughing Cow Community Leader so I'm all about sharing fun ways to use their products. You guys may also know how I feel about pausing and making [...] -
I made this on Thursday. THURSDAY! I hate when I can't post something I've eaten within 24 hours. It just bugs me. Not sure why, it really doesn't matter when I post it, does it? Anyway, I did whip this up to cure a pizza craving and I couldn't be happier. [...] -
It's been awhile since I jazzed up a tilapia fillet. I've breaded them before, coated them in oats, flavored them like one of my favorite drinks and topped them with a fun salsa. It was time to bring nuts into the party. You are going to think I'm crazy but I've [...] -
Fun leftover turkey idea #2! Click here for leftover turkey idea #1. I had a little Gouda leftover from this years Harvest Salad and decided to put all the same flavors from the salad into a quesadilla. I just can't get enough of the smokey gouda/sweet craisin combo. It goes [...] -
It's the day after Thanksgiving and my refrigerator ROCKS! I have leftover turkey, mashed potatoes, stuffing, roasted Brussels Sprouts, a bunch of veggies and tons of miscellaneous fun stuff. I've already made stock from the bones (like this) and my first batch of soup, Classic Turkey Noodle. I hope to share [...] -
I'm so sorry I've been slacking in the Thanksgiving recipe department. I feel like a bad food blogger. Everyone else is posting festive ideas and here I've gone missing for a few days. Maybe it's because I'm not doing anything special for Turkey day. I finally got my holiday cooking [...]

Hang in there Roni! I know you have a lot on your plate right now, but its all good!
You are doing what you love to do, right? You have a supportive husband (while not a regular reader of your blog) but understands why you do it.
And cute little Ryan who eats the peppers before you can make anything with them!
It’s almost the weekend – have a glass of wine tomorrow!
I loved the unoffical tj’s commerical I thought it was funny and so true. I really miss chocolate covered soy nuts though! Thats one thing about tj’s that drives me nuts, how can they just get rid of your favorite products! Living in pa does stink though because we cant get wine at our tj’s and I really like 3 buck chuck!
Thanks for sharing Roni!
Ahh, the Fatty Melt. Bask in its glory. Sorry for pimping links back to my site two posts in a row. I’ll be good next week.
http://www.backtothefridge.com/blog/the-fatty-melt/
Hang in the Roni. Maybe I’ll tell you about my week later…
3 Buck Chuck…that’s funny because it’s only 2 buck chuck here in Cali =)
Roni you should listen to your body…if it tells you to sleep than do it…if it says “Hey…I just need a little break” Take it and don’t feel bad about it. We all need to recharge once and awhile so go with it.
Take just a little break we will all be here when you get back =)
Loved the commercial! Also just re-discovered mapmyrun last weekend when I was out of town. I spent an evening mapping different new routes – am excited to try them!
My dear, you’re not the only one who’s in a funk. I’m drafting a post right now about the exact same thing. At least I can tell myself that I’ve been through these periods in life before, and at some point it’ll pass. (Hopefully sooner rather than later…)
LOVED the TJ commercial – thanks for sharing!
“this is why you’re fat” was gross and intriguing at the same time, like a train wreck. Also loved the TJ’s vid. Hilarious. Hang in there, Roni…spring is on the way and you’ll probably feel better then. =)
You know, don’t get down on yourself if you can’t live up to everything that’s on your mind. That happens a lot, but the trick is to look at your victories as opposed to your defeats in this area. Personally I think you’re just a little burned out. Sure, any idiot can make that assumption, but I used to talk like that when I was feeling the strain.
Just don’t stress so much over things beyond your control. And even some of the stuff that’s in your control.
Hi Roni! I know how you feel. We all go through those phases of sometimes saying “there is too much on my plate!”
As far as the running goes, I went through that phase a bunch of times each time I trained for the marathon. Some weeks, I could run 14 miles no problem and others I could barely run 1 and feel like quitting. Just keep going and you will make it!
And I agree with my sister Biz, have a glass of wine, rent a funny movie, and you’ll be back to your normal self!
Loved the commercial Roni! Hang in there…. is that site not crazy – ” this is why you’re fat” unreal!
zesty
hi Roni – Remember me? I ran with you in Nashville. I’ve been really tired since I returned from that trip and still don’t have my mojo back. I think my adrenaline was really pumping on that trip and now that I’m back I feel kind of deflated. I weighed in at ww today am up 1 pound. Bleh. Anyhoo, we are prolly going through the same thing. Travelling always upsets my bio-rhythms or something like that. Hang in there. Your mojo will return.
