Thursday Thoughts XIV

Heading out for a run soon, I have to hop right in…
- Ben from build-muscle-and-burn-fat.com asked if he could use me as an example in his new eBook on Self Motivation. Apparently he things I’m a good example of his 4th tip, “Tell People”. Who? … Me? *pointing to self* Naaa I’m a pretty private person, I don’t share much of anything. Do I? (ok, bad attempt at sarcasm :) If you are interested in a quick read on motivation you should check it out. Ben has some great insights.
- Since I’m on the eBook kick, have you guys visited Leigh Peele of avidityfitness.net. I linked to her once before because she has a cool video on calculating body fat. She also has recently released a new eBook package called Fat Loss Troubleshoot. It’s a jam packed collection of resources and insights on battling the bulge. I do have to say, Leigh’s program isn’t for those that need help with the emotional side weight loss. People who may need something more like Beck’s book. This eBook collection is more of a scientific approach. I just know the Roni of a few years ago would buy it thinking I’d get thin overnight and when that didn’t happen I’d go right back to my old habits becuase I wasn’t in the right mindset to loose. That being said, I thought some of you may be interested who are in the right mindset. :)
- Ok, enough of the eBooks! Here’s a link I posted on twitter a few days ago about soda and your body. Now I know most of you who drink soda drink diet but still…. too much can’t be good. Right? Swap just one of your default sodas this week for a glass of water. Just one. PLEASE I think I may make it my personal mission to spread the joys of water drinking! :)
- My other personal mission. Spreading confidence and a good body image. I still struggle myself, you guys know that, but I think by throwing it out there we can help each other on self love thing. That’s what Ellen did and I think all should read her thank you note to her body.
- Onto more FUN news! Have you heard Giyen is now FAMOUS! :) CNN is going to be following her weight loss story unfold has she does video posts for them. Congrats Giyen! Just know… you are inspiring many. More then you will ever realize!
- Speaking of inspiring, apparently I inspired Kristy to make pumpkin bread. LOL It’s so strange to see the GreenLiteBites effect spread to other video bloggers. So cool!
- Also cool… Diets in Review asked me to be this months featured blogger! I’ll be writing a post for them every Tuesday and the series started off with my take on A Day in the LIfe of a Weight Watcher.
- GreenLiteBites activity has been quite slow this New Year. Last thursday I posted a video about how I prepped for an impromptu New Years Eve party and today I just posted this weeks video, Chocolate Ricotta Rolls (my new fav snack!) In between I answered a question about cod and made chocolate pancakes. :) I also made a quick fried rice meal but haven’t had time to post it yet. Hopefully I will this weekend.
- Other news… I’m hoping to have my new techie blog launched by the end of the month. Nothing crazy just a simple outlet where I can provide help on the blogging front. I’m also getting the itch to start working on the cook book again. It really set me back when I lost my progress a few months ago. For the blog, I’m working on a food and product review, and 2 AskRoni videos! They’re recorded, I just have to get them uploaded!
Right now I’m off for a quick run. So far my training has been going well but it’s still early and I’m not into the long distances YET. I have to admit, I’m a bit scared of the weeks to come!
Ok, signing off for now! Talk to you later.
Oh! Wait! The giveaway… I almost forgot!
Stonyfield Farm, you know, the yogurt people. They have a new recipe page for all things yogurt and wanted to offer one of my readers a “YoBaker” package consisting of $50 worth of coupons for free Stonyfield yogurt with an oven mitt and spatula. Everyone who leaves a comment will be automatically entered! I’ll pick a random winner next Thursday!
Now I’m out. :)

What's Cooking in my kitchen?

I've never had a tuna melt. Is that weird? I guess that's what happens when you grow up not liking mayonnaise. I never ate tuna salad or egg salad or chicken salad. Honestly, they always kind of grossed me out. Then I realized.. hey.. why does tuna salad have [...] -
I have no idea where this idea came from. I was hungry. It was lunch. I had Brussels Sprouts. That was all the catalyst I needed.:) I decided to use a slice of real bacon to add flavor and little fat that would help sauté the sprouts. I'm trying [...] -
WOW was this good. I mean seriously good. It's not vegetarian so don't start throwing stones. I'm calling it a Garden Vegetable Burger because I use the new Laughing Cow Smooth Sensations Garden Vegetable Cream Cheese Spread. It was this recipe on Allrecipes.com that inspired [...] -
I drink water 99.9% of the time but every so often it just doesn't cut it. I want something else. Something more. Something slightly sweet. Today was one of those days. I decided to make a refreshing drink based on the famous Arnold Palmer, half lemonade and half iced [...] -
The other day I made a whole chicken on the grill in pieces. It was delicious! Just a little BBQ sauce and an open flame is all I need to make The Husband happy in the dinner department. I also picked up a few ears of corn from the grocery store. They aren't in season [...] -
Let me explain so you don't think I'm making a chili recipe and just put it on pizza. I'm calling this vegetarian Chili Pizza because chili is what inspired flavors. I think I told you. Little Bean is really into, well, BEANS! We go through a can about every 2 days. Yesterday [...] -
I've confessed my inability to follow recipes here on GreenLiteBites many, many times. I don't know why it's so hard for me. I can barely follow some of my own and I wrote the darn things! I think most of my problem stems from not having all the ingredients listed and, [...] -
Leftover brown rice and leftover sauce meet in this quick lunch idea inspired by my favorite food of all time: Pizza. I swear I can turn anything into a pizza concoction. Have you seen all my pizza ideas? I've used everything from pumpkin to zucchini, polenta to wontons. Nothing is off [...] -
This isn't a recipe just an idea I had to share. I can't believe how good it was! I've never had grilled pineapple. Can you believe it? I just never really had the desire to grill it before. When you love something raw sometimes it doesn't occur to you to cook it. [...] -
I whipped this up for lunch on a whim today because, well, I have a baby who's obsessed with three things… Cheese, Beans, and Avocado. No, really. Look... It's my go to meal for him so I find myself with beans and avocado readily available. [...] -
You know that tradition 7 Layer Mexican Dip? The one with the cream cheese, guacamole, salsa, lettuce, cheese, green onion and olives? Yea. That's the one. Well I had a craving for it the other day. Well, not exactly for it as I can never make anything the way it's suppose [...] -
If you go through the archives of GreenLiteBites I have about 5 total beef recipes. Five. Compare that to the 80+ I have tagged with chicken/turkey there's a clear winner in the meat department on my blog and in my home. I don't have a beef with beef (omg The Husband [...] -
I'm a kitchen sink smoothie maker. Whatever I have on hand goes in the blender and viola! A quick breakfast or a healthy snack. Last year I posted an "Elastic Approach" to how I make smoothies but I still like to share specific combinations that worked really well. This was one [...] -
The other night it was just the kids and I home for dinner and I decided to make what I wanted to make no holds barred. Without The Husband home it's much easier for some reason. Hmmm wonder why? Ok, not here to husband bash.. really.. I'm not! I'm here [...] -
*sigh* I was really hoping to share an awesome turkey burger idea. I had grand plans for my leftover ground turkey. The results was alright but they could have been so much better. I added diced pineapple, red pepper, green pepper, oats and soy sauce to the meat and formed 2 patties. In hindsight I [...] -
I made this on a total whim yesterday having no idea if it would work. To my surprise it did AND the husband actually said he liked it... UNSOLICITED! Here's the story. I had only 4 tilapia fillets defrosted for dinner. I knew it wasn't going to be enough for us [...] -
This is a slight reboot of a recipe I posted last year simply called Sweet Potato and Black Bean Chili. Staying true to my use-what-I-have-on-hand roots I, well, used what I had on hand and made a similar dish with a spicy twist. Topping the result with avocado added a cool creaminess that [...] -
Did you hear? The Laughing Cow recently launched Smooth Sensations a line of 5 cream cheese spreads. There's Classic Cream, Classic Cream Light, Strawberries & Cream, Garden Vegetable and my favorite… Cinnamon. It's a sweet wedge of creamy goodness! Today I decided to use my new favorite flavor [...] -
Confession time, I recorded a 30 minute video making this with both kids (partally) 2 nights ago. I miss videos. I really do but they seem so much more difficult with 2 children. I'm also having technical difficulties with my video recording and audio syncing making it VERY time consuming to edit. [...] -
A couple of years ago I shared a modified version of Sloppy Joe's I made for a party. Everyone loved it but I've been wanting to try to make something similar for the family on a smaller scale and without the pre-made canned Manwich sauce. I don't particularly have any issues [...] -
Yesterday I was dreaming about a salad. Not just any salad, but a chickpea filled, cucumber, and red onion salad with a fun, tangy dressing. Unfortunately, I had no cucumber or red onion. Well, that's a lie. I had a half of cucumber but it was a mushy mess and [...] -
Dinner meals are getting harder and harder for me to share lately. I've gone back to just whipping things up without really measuring anything (this meal was going to be one of those until I realized I still had enough light to take some photos.) I've also instituted a few brainless meal nights [...] -
Three years ago I posted a video called "Makin' Hard Boiled Eggs" where I shared my system for, well... making hard boiled eggs. Genius name, I know. I'm smart like that. Anyway, since then I've gotten tons of feedback and comments thanking me but all the information is locked in a long winded 10 minute [...] -
Yup. You read that correctly. BEET as in those red vegetables that stain your fingers pink. Honestly, I have no idea what possessed me to make this. I don't particularly like beets. I mean I like them, but I don't looove them. Two summers ago I made them for [...] -
Yesterday I decided to rediscover simple foods. Part of my cooking slump has to do with over thinking. So I did what I used to do, simply react to what I have on hand. This is what I came up with... Starting from top left around.., [...]

Thanks for a chance to WIN BIG Roni! I am definately into all things yogurt! :)
Just strolled over here from GreenLiteBites…can’t WAIT (!!!) to try the Chocolate Ricotta Rolls!! YUM!!
Great contest too!
Love your blog and would love some free yogurt!
I just discovered Stonyplain recently… love them!!
LOL red faced here… StonyFIELD… stonyplain is a name of a street in a town I used to live in.
Thanks for the info, Roni! So many links, so little time…
Finding an herbal tea I liked helped me kick the diet soda habit. I like Good Earth’s original flavor–very spicy and sweet-tasting but no sugar. There are a lot of good fruit-flavored tea mixes out there now, too, by other makers. (Stash has a pomegranite raspberry green tea with matcha that’s really yummy. Or any type of peppermint tea is good, too.) The trick with green teas is to use water that’s not TOO hot. Brewing tips here
Love yogurt. My favorite snack is Greek-style plain yogurt with fresh fruit and a mix of flax seed and wheat germ.
Stonyfield is by far my favorite yogurt! Thanks for all the links and I will definitely be checking out your weekly column on Tuesdays!
Mmmmm, yogurt! Sounds delish :)
Thanks for linking to my body love post (wait, did that come out wrong?). It is kind of nervewracking to have it out there, but also great! Your blog has made a huge impact on how my mentality is shifting. Thank you for that :) My response to your 2008 accomplishment was even along the lines of positive thinking about myself!
Oh, also, the ricotta dish you posted today? I CAN’T WAIT to make that!!!
another great post by Roni… woo contests
I love contests!!! Thanks Roni.
oh my gosh, i’m a huge stonyfield farms fan. i have major brand loyalty to them and their plain fat-free and lowfat yogurts.
so that is my comment, haha.
Count me in!
Would love to win!
I would love to win this. I’ve never tried this brand, but eat yogurt daily.I’ve heard it’s good…
Good luck to everyone. Of course, I would love to win myself.
Hey Roni,
I am very interested in buying Leigh Peele’s book. I was wondering if you were going to do a more indepth review, like The complete Beck for life book, or an interview with her.
Oh and I am crazy about stoney field strawberry fruit in the bottom yogurt.
I love your websites and I love yogurt !! I’m gonna keep my fingers crossed.
Love yogurt!
Thanks for giving me more good reasons to stay away from evil, addictive Mt. Dew!
Please enter me in your yogurt coupon giveaway. Thanks Roni.
A new reader here– lovin’ your blog. Also love yogurt, so hope I win!
We love Stonyfield! And we would love those coupons!
Love the post – love yogurt! :-)
I love yogurt! and agree with you on the diet soda….I am a huge diet soda fan, but have been trying to let myself have one every other day, instead of 5 a day….and I have been notcing the weight loss even more…..water is the best, even though the new WW plan doesnt push this.
Oh, I love yogurt! Also, I made your whole grain pancakes the other night and we loved them!
Yum! I love Stoneyfield Farm, and lucky for me, they’re local, because I’m in Massachusetts. That’s even better!!
I love Stonyfield Farms!
Yogurt is delicious!!
yogurt…duh! what a great food….I should go get some, but, my children will eat it before i even get a taste…sigh.
I’m new to your blog, and I really love it. You truly have a gift for inspiring others.
Yes, please! I would love some Stonyfield Farms! Thanks for all the great info today!
Yogurt is great. Would love to try the Stonyfield Farms kind! Thanks for all you do Roni!
I always look forward to your Thursday Thoughts posts. There’s always some great new reading material. Thanks!
Sign me up. I love Stonyfield yogurt.
Yay for giveaways. I love Stonyfield Farm yogurt. I read the soda article when you posted in on twitter and it’s been driving me crazy thinking about it. I am sure that diet can’t be much better than what they talk about.
Oooh, Random Comment!
And I have to say, water is my favorite beverage. I try to be sure I drink at least 2 liters a day (I have a liter bottle I fill up twice a day). If the water tastes bad, the sugar-free mix ins are the best thing to fight it.
So here’s to winning yogurt and drinking water. Yay!
A lot of great information…thanks. Good luck with your training…you can do it!
Hi, Roni
I am a new subscriber. Thank you for today’s email. This is my second week back on WW. I completely understand the writer’s frustration. My scale has not budged this week. I have to stop weighing myself 3 times a day too!!! So, you were dead on saying how timely her email was. Thanks again for the esupport!
~Courtney
Yummy yogurt!
I enjoy your blog and recipes!
I haven’t checked out GLB recently, but I’m going to look through your pumpkin bread recipe. My family is addicted – it appears at family events all through out the fall and winter. We even sorta have a “secret” to our recipe. But I’ve tried, to no avail, to successfully make it healthier, but it just doesn’t come out right. Thanks for all you do! And congrats on your “blind weigh-in” experiment, I think that shows real dedication to go a week without the scale… I’m addicted myself… :)
Oh I love yogurt!!
As to the scale…I agree! Don’t let it get too you now because you’ll end up obsessive about it (like me…grrr) and find yourself discouraged all the time.
I would love to win this!
Thanks!
Hi Roni-
Thanks for the constant inspiration! I always love reading your blog…and I love Stonyfield yogurt!! :)
Roni, you are such an inspiration! Thanks to you I am now on the weight watching, exercising trail! It is going good so far. I would love to be entered int your contest! Thank you!
just entering the yogurt contest! It would definitely help my wallet, as I eat yogurt (not Stonefield…yet) daily!
Love the way people come out in droves for a give away! Thanks Roni!
Hmmm…yogurt.
And it sound like these eBooks are really becoming popular these days, I think I’ll have to check out the first one you were talking about by Ben…sounds interesting, and motivation is always key to keeping up with your weightloss!
Hello Roni,
Can we enter the contest if we live in Canada? If so, count me in :-)
Chantal
I love Stonyfield and Ellens letter to her body! Count me in.
Just wanted to let you know that those Chocolate Ricotta Rolls are WONDERFUL! Fixed up my “sweet” craving perfectly. And because of your Japanese Steakhouse Strategy post (and the included sushi points page), I branched out from my normal California roll and tried a Spicy Tuna roll this week for lunch one day. I liked it! Thanks for all your inspiring ideas!
I am new to your blog, and I will say so far it has really helped me stay focused and motivated!!! Thanks so much! I am week 2 back on ww, lost 5 the first week, don’t know this week, actually had my hubby hide the scale from me!!!
