Thursday Thoughts XIV

Heading out for a run soon, I have to hop right in…
- Ben from build-muscle-and-burn-fat.com asked if he could use me as an example in his new eBook on Self Motivation. Apparently he things I’m a good example of his 4th tip, “Tell People”. Who? … Me? *pointing to self* Naaa I’m a pretty private person, I don’t share much of anything. Do I? (ok, bad attempt at sarcasm :) If you are interested in a quick read on motivation you should check it out. Ben has some great insights.
- Since I’m on the eBook kick, have you guys visited Leigh Peele of avidityfitness.net. I linked to her once before because she has a cool video on calculating body fat. She also has recently released a new eBook package called Fat Loss Troubleshoot. It’s a jam packed collection of resources and insights on battling the bulge. I do have to say, Leigh’s program isn’t for those that need help with the emotional side weight loss. People who may need something more like Beck’s book. This eBook collection is more of a scientific approach. I just know the Roni of a few years ago would buy it thinking I’d get thin overnight and when that didn’t happen I’d go right back to my old habits becuase I wasn’t in the right mindset to loose. That being said, I thought some of you may be interested who are in the right mindset. :)
- Ok, enough of the eBooks! Here’s a link I posted on twitter a few days ago about soda and your body. Now I know most of you who drink soda drink diet but still…. too much can’t be good. Right? Swap just one of your default sodas this week for a glass of water. Just one. PLEASE I think I may make it my personal mission to spread the joys of water drinking! :)
- My other personal mission. Spreading confidence and a good body image. I still struggle myself, you guys know that, but I think by throwing it out there we can help each other on self love thing. That’s what Ellen did and I think all should read her thank you note to her body.
- Onto more FUN news! Have you heard Giyen is now FAMOUS! :) CNN is going to be following her weight loss story unfold has she does video posts for them. Congrats Giyen! Just know… you are inspiring many. More then you will ever realize!
- Speaking of inspiring, apparently I inspired Kristy to make pumpkin bread. LOL It’s so strange to see the GreenLiteBites effect spread to other video bloggers. So cool!
- Also cool… Diets in Review asked me to be this months featured blogger! I’ll be writing a post for them every Tuesday and the series started off with my take on A Day in the LIfe of a Weight Watcher.
- GreenLiteBites activity has been quite slow this New Year. Last thursday I posted a video about how I prepped for an impromptu New Years Eve party and today I just posted this weeks video, Chocolate Ricotta Rolls (my new fav snack!) In between I answered a question about cod and made chocolate pancakes. :) I also made a quick fried rice meal but haven’t had time to post it yet. Hopefully I will this weekend.
- Other news… I’m hoping to have my new techie blog launched by the end of the month. Nothing crazy just a simple outlet where I can provide help on the blogging front. I’m also getting the itch to start working on the cook book again. It really set me back when I lost my progress a few months ago. For the blog, I’m working on a food and product review, and 2 AskRoni videos! They’re recorded, I just have to get them uploaded!
Right now I’m off for a quick run. So far my training has been going well but it’s still early and I’m not into the long distances YET. I have to admit, I’m a bit scared of the weeks to come!
Ok, signing off for now! Talk to you later.
Oh! Wait! The giveaway… I almost forgot!
Stonyfield Farm, you know, the yogurt people. They have a new recipe page for all things yogurt and wanted to offer one of my readers a “YoBaker” package consisting of $50 worth of coupons for free Stonyfield yogurt with an oven mitt and spatula. Everyone who leaves a comment will be automatically entered! I’ll pick a random winner next Thursday!
Now I’m out. :)

What's Cooking in my kitchen?

Finally my first Farro idea! I have to say, I love this stuff! It's chewy and yummy and, well, fun! I tossed it with what I could find in my pantry and it made a wonderfully satisfying lunch. Filling but not heavy, tasty and quite nutrient dense. According to NutritionData.com this [...] -
I've seen it mentioned in a few of my clean eating and healthy cook books but honestly, I never even thought of Farro as an option for me. I refuse to shop at specialty stores and I try to use only common products that I can keep in stock and purchase from a typical grocery [...] -
I've never had a tuna melt. Is that weird? I guess that's what happens when you grow up not liking mayonnaise. I never ate tuna salad or egg salad or chicken salad. Honestly, they always kind of grossed me out. Then I realized.. hey.. why does tuna salad have [...] -
I have no idea where this idea came from. I was hungry. It was lunch. I had Brussels Sprouts. That was all the catalyst I needed.:) I decided to use a slice of real bacon to add flavor and little fat that would help sauté the sprouts. I'm trying [...] -
WOW was this good. I mean seriously good. It's not vegetarian so don't start throwing stones. I'm calling it a Garden Vegetable Burger because I use the new Laughing Cow Smooth Sensations Garden Vegetable Cream Cheese Spread. It was this recipe on Allrecipes.com that inspired [...] -
I drink water 99.9% of the time but every so often it just doesn't cut it. I want something else. Something more. Something slightly sweet. Today was one of those days. I decided to make a refreshing drink based on the famous Arnold Palmer, half lemonade and half iced [...] -
The other day I made a whole chicken on the grill in pieces. It was delicious! Just a little BBQ sauce and an open flame is all I need to make The Husband happy in the dinner department. I also picked up a few ears of corn from the grocery store. They aren't in season [...] -
Let me explain so you don't think I'm making a chili recipe and just put it on pizza. I'm calling this vegetarian Chili Pizza because chili is what inspired flavors. I think I told you. Little Bean is really into, well, BEANS! We go through a can about every 2 days. Yesterday [...] -
I've confessed my inability to follow recipes here on GreenLiteBites many, many times. I don't know why it's so hard for me. I can barely follow some of my own and I wrote the darn things! I think most of my problem stems from not having all the ingredients listed and, [...] -
Leftover brown rice and leftover sauce meet in this quick lunch idea inspired by my favorite food of all time: Pizza. I swear I can turn anything into a pizza concoction. Have you seen all my pizza ideas? I've used everything from pumpkin to zucchini, polenta to wontons. Nothing is off [...] -
This isn't a recipe just an idea I had to share. I can't believe how good it was! I've never had grilled pineapple. Can you believe it? I just never really had the desire to grill it before. When you love something raw sometimes it doesn't occur to you to cook it. [...] -
I whipped this up for lunch on a whim today because, well, I have a baby who's obsessed with three things… Cheese, Beans, and Avocado. No, really. Look... It's my go to meal for him so I find myself with beans and avocado readily available. [...] -
You know that tradition 7 Layer Mexican Dip? The one with the cream cheese, guacamole, salsa, lettuce, cheese, green onion and olives? Yea. That's the one. Well I had a craving for it the other day. Well, not exactly for it as I can never make anything the way it's suppose [...] -
If you go through the archives of GreenLiteBites I have about 5 total beef recipes. Five. Compare that to the 80+ I have tagged with chicken/turkey there's a clear winner in the meat department on my blog and in my home. I don't have a beef with beef (omg The Husband [...] -
I'm a kitchen sink smoothie maker. Whatever I have on hand goes in the blender and viola! A quick breakfast or a healthy snack. Last year I posted an "Elastic Approach" to how I make smoothies but I still like to share specific combinations that worked really well. This was one [...] -
The other night it was just the kids and I home for dinner and I decided to make what I wanted to make no holds barred. Without The Husband home it's much easier for some reason. Hmmm wonder why? Ok, not here to husband bash.. really.. I'm not! I'm here [...] -
*sigh* I was really hoping to share an awesome turkey burger idea. I had grand plans for my leftover ground turkey. The results was alright but they could have been so much better. I added diced pineapple, red pepper, green pepper, oats and soy sauce to the meat and formed 2 patties. In hindsight I [...] -
I made this on a total whim yesterday having no idea if it would work. To my surprise it did AND the husband actually said he liked it... UNSOLICITED! Here's the story. I had only 4 tilapia fillets defrosted for dinner. I knew it wasn't going to be enough for us [...] -
This is a slight reboot of a recipe I posted last year simply called Sweet Potato and Black Bean Chili. Staying true to my use-what-I-have-on-hand roots I, well, used what I had on hand and made a similar dish with a spicy twist. Topping the result with avocado added a cool creaminess that [...] -
Did you hear? The Laughing Cow recently launched Smooth Sensations a line of 5 cream cheese spreads. There's Classic Cream, Classic Cream Light, Strawberries & Cream, Garden Vegetable and my favorite… Cinnamon. It's a sweet wedge of creamy goodness! Today I decided to use my new favorite flavor [...] -
Confession time, I recorded a 30 minute video making this with both kids (partally) 2 nights ago. I miss videos. I really do but they seem so much more difficult with 2 children. I'm also having technical difficulties with my video recording and audio syncing making it VERY time consuming to edit. [...] -
A couple of years ago I shared a modified version of Sloppy Joe's I made for a party. Everyone loved it but I've been wanting to try to make something similar for the family on a smaller scale and without the pre-made canned Manwich sauce. I don't particularly have any issues [...] -
Yesterday I was dreaming about a salad. Not just any salad, but a chickpea filled, cucumber, and red onion salad with a fun, tangy dressing. Unfortunately, I had no cucumber or red onion. Well, that's a lie. I had a half of cucumber but it was a mushy mess and [...] -
Dinner meals are getting harder and harder for me to share lately. I've gone back to just whipping things up without really measuring anything (this meal was going to be one of those until I realized I still had enough light to take some photos.) I've also instituted a few brainless meal nights [...] -
Three years ago I posted a video called "Makin' Hard Boiled Eggs" where I shared my system for, well... making hard boiled eggs. Genius name, I know. I'm smart like that. Anyway, since then I've gotten tons of feedback and comments thanking me but all the information is locked in a long winded 10 minute [...]

Thanks for the links Roni, I’m working on drinking more water and I’m excited to try your new recipe! I also love yogurt so this is a great post!
Confession. I am addicted to greenlitebites and ronisweigh. I think it is because you are a normal person who struggles just like me. Trying to work, raise a family and actually take care of yourself. Thanks for all you do and your inspiration and support.
I used to only allow myself one diet soda per day and the rest had to be my milk servings, then water. I fell off the wagon. But for you, I will get back on it!
Yogurt…yum! That is defiantly one way I enjoy getting my daily consumption of milk in
Ooh! Ooh! Pick me! I love yogurt! (I also love your blog!)
i puffy heart yogurt!!
I love Stoneyfield Yogurt and the Oikos Greek Yogurt is also a fave of mine when I can find it!
I love cooking with yogurt! Please count me in!
Well, I have a few comments to make…on soda…I agree with what others have said about it not quenching your thirst after no dirinking it that frequently. And to Lynn C who says that water just tastes nasty to her I ask…can you buy bottle water at the grocery store? They should taste better than tap water…and you could try a Brita water filter system. I live in a town with water that tastes bad but my Brita takes care of that.
As for yogurt, well, I eat it daily and usually buy on sale or with a coupon, so if the coupons come my way they will definately be used. Maybe having all that yogurt will inspire me to try cooking with it. I’ve made yogurt cheese (kind of a spread), and liked that, but I enjoy cooking your recipes…so this would be just another step in my journey.
Happy New Year Roni and EVERYONE!
Oooh! Count me in! I’m a new convert to Stoneyfield Organic lowfat yogurt with real sugar. It is so delicious! It’s usually my lunch with some fresh berries and homemade granola. YUMO!
Please include me in the Stoneyfield contest…….
I only eat Stoneyfield yogurt, none of those icky additives that I can’t pronounce. Pick me!!!
I’d love to enter the giveaway contest!
On soda: I don’t drink coffee, so I drink 1 diet cola a day between breakfast and lunch just for a bit of a pick-me-up. But I also drink lots of water–I fill my bottle at work with 20 ounces at least 3 times a day, plus I drink water and skim milk in the evenings at home.
I feel like I”m doing a lot better than when I just drank diet soda all day long! but it is hard to give up that last bit…
I love yogurt for breakfast! Yum!
count me in! I’m always up for trying to win something!
Thanks Roni!
Stonyfield is what I feed my baby!! Count me as #115!

Love the site & love stoneyfield!
Thank you for all of the great info! I love Stonyfield yogurt!
I agree with you about switching to water. Even though most sodas have caffeine, I feel like I have more energy when I stick with water. Must be the drop after the caffeine high that makes me feel sluggish.
I love Stoneyfield!

I eat yogurt every morning in my on-the-way-to-school smoothies. This is a great give-away!
I love Stonyfield Farms! It’s my favorite yogurt. I’ve also been trying to nix the diet soda and focus more on water… not quite as tasty or exciting to me, but better for my health, I know….
I’m inspired by your 1.6 weight loss…..congratulations.
I am going to look for the stonyfield yogurt when I am in the store.
Thanks for the great information!
