Thursday Thoughts

It feels like forever since doing a Thursday Thoughts post. I’m going to hop right into the random goodness! ;~)
- First, you guys are going to TOTALLY think I’m making this up but believe me, I’m not that clever. A few weeks ago as a joke Charlie sent me this link about age and memory after I made a comment that I can’t seem to remember anything anymore. Well… wait for it… wait for it… I FORGOT to include it in my last Thursday Thoughts post. LOL Is that ironic or what? Wait… did I use ironic right? Maybe it’s just a coincidence. Whatever, I think it’s funny. LOL
- Now for a giggle. A few weeks ago (can you tell I’m still trying to catch up) I asked everyone on twitter if they had any advice for me regarding "the cat" digging in my plants. I received a bunch of great advice and actually haven’t had a problem since (although she did kill my aloe plant. :~( Anyway, along with the great advice I received this link that cracks me up every time I watch it. What is so funny about throwing a cat of it’s guard?? It just cracks me up!
- What do you see when you look at Halle Berry? I’ll admit it, in my younger days I wish I looked like Halle. I wish I had her body, her physique, her confidence in a swimsuit. Little did I know she also struggles with body image. Revealing recently that her body image role model is Kate Winslet! WHO (is someone else I also admire) struggled with body image issues herself! Saying recently "…once a fat kid, always a fat kid." Let’s think about this people, really. Even the women we see as being the most gorgeous, thinnest, confident women in the world struggle with body image. We as "normal" folk either hate or want to look like the actresses and models we see in magazines and on TV. While the actresses and models are struggling themselves. If anything this should be eye opening. Love who YOU are. Don’t compare, don’t be jealous, don’t envy. It’s not worth it. Life is way to short.
- So let’s focus on health for a minute, instead of losing weight. Most of us are infatuated with being thinner that we forget that it has to be about getting healthier. One way I focus on healthy is by trying new and fun produce. Last year I did a pomegranate produce pick. It was the first time I tried the interesting fruit and now I’m hooked. As well, I should be, it good for me! If you are scared to try this intimating produce, check out the video the toddler and I did showing just how easy it is to clean it. We recorded this before I was made aware of the POM Fresh Fun contest! Darn it! I entered anyway but if I knew before hand I would have at least showered for the video! LOL
- Since I already made the transition to GreenLiteBite links, I have to add I barely did anything on the food front this week. Besides my healthy lite Thanksgiving Stuffing recipe and this weeks video where the toddler and I make dinner, nothing else post worthy has been going on in my kitchen. Well, that’s not entirely true, I’m almost done finalizing a new oatmeal recipe for a Quaker contest they extended to us bloggers AND tonight I’ll be experimenting with red rice for a friend (does anyone have a good red rice recipe they want to share as I research?!? I never made it before.)
- While I’m talking about GreenLiteBites I should also mention I added a new product to the store. A few people mentioned that the aprons where a little dry just having a logo on them so I designed a new kids apron using our friend the Mr. Broccoli. I also added a dark shirt with the famous broccoli on it. Yesterday I met with the designer and I have 3 more ideas in the works! I can’t wait to share them with you when they are done. Let’s just say the next few will be in honor of the toddler!
- Let’s see… other then that, I think I can honestly say, nothing else is really going on (unless I’m forgetting something, which is probably the case.) My plan is to spend the next week or 2 organizing myself, my house and getting ready for Thanksgiving. I may have 13 people over for dinner! YIKES! It’ll be the first time I’m hosting a Turkey Day at my house! Monday I will be launching a new giveaway. I’ve made no significant progress on my cookbook since losing my last version (NOT thinking about it) and right now, my stomach is growling. I think it’s time to hit the kitchen for an early lunch. Which reminds me, I have two product reviews in the works as well! Ok, so maybe my “nothing else really going on” statement was a bit premature. :~)
Have an awesome Thursday!

What's Cooking in my kitchen?

I've recently discovered the amazing combination of cheese and dried cherries. I know, it sounds weird, but seriously… good! The other day I smeared some Laughing Cow Light Swiss on Cucumber slices and then topped with a cherry. It was a fun, sweet twist on standard cheese and crackers. Well, cheese [...] -
If I was a good blogger this idea would have been published BEFORE the Super Bowl not during it. I made these today to have a little fun. Surprisingly, The Husband liked them even though he didn't eat more than one. Why? Because he's strange like [...] -
If you read my weight loss blog you know I'm battling a bit of back and neck pain right now. I'm starting to feel a little better but those first few days where rough. Being the head chef of the household, this meant we ordered in a couple of times. I'm [...] -
I'm LOVING Pinterest! I can just scroll all day long looking at food photo after food photo. I wish I had more time to peruse! (I'm RoniNoone there by the way?) The other day I pinned a Portabello Mushroom pizza and was immediately inspired. It's such a simple idea and so light. [...] -
The other day I found myself craving an Orange Julius. Are they as popular as I think they are? Growing up we had an Orange Julius at our local mall. It was always a treat for us at the end of a family shopping trip. Once I was old enough to be [...] -
So I'm a little breakfast nutty at the moment. Little Bean LOVES eggs and I find myself cooking them more and more. This morning I decided to go super light (after last nights chocolate overload) and it was totally satisfying for just over 100 calories! The trick to making [...] -
A few weeks ago I saw Chef Michael Simon make a raw kale salad on The Chew. He sliced beets up real thin and cut the kale into ribbons. Then made a vinaigrette out of red wine vinegar and olive oil. I was immediately intrigued. So far I've only [...] -
I've had this idea for a quick creamy chicken dish for a few days now. It was time to give it a shot. The whole family LOVED it. I'm not joking. The only complaint came from Little Guy who declared his hate of mushrooms yet again BUT he ate everything around them. Fine [...] -
I made this on a total whim yesterday as I had leftover avocado after feeding the baby and leftover Spaghetti squash cooked from the weekend. I roasted the squash to serve with my Chicken tips instead of potatoes and it was AMAZING! Anyway, I'm getting sidetracked. So I'm sitting there staring [...] -
It's post holiday season. You know what that means? Leftover Crescent rolls to experiment with! Every year for Thanksgiving I buy a few canisters. It's the only time I do as I can't be trusted around them. Let's just say I'd beat you in the How-Many-Crescent-Rolls-Can-You-Eat-In-One-Sitting game and leave [...] -
Last week the kids and I tried parsnips for the first time and I've made them 3 times since. I wanted to figure out the best way to roast them. Yeah, that's it, the best way to roast them. You'll buy that right? Right? The truth is, I'm obsessed. I found myself [...] -
Yesterday just felt like a good day to stuff an acorn squash. I had one sitting on my counter for quite some time and it was just begging to be cooked. Since both husband and child don't like it I made a solo meal just for me and, well, it was DELICIOUS! [...] -
I bought a fennel bulb on a whim for the holidays not knowing quite what I would do with it. Of course I forgot about until yesterday when I was rummaging through the fridge trying to figure out what I wanted to make for breakfast. I pulled it out and stared [...] -
I probably should have warned you I was taking a holiday hiatus. I've been soaking up every moment of family time imaginable these last few days, leaving no time for anything else. Not even blogging! Shocking I know. ;) So I return not with a new recipe, per se, but to [...] -
Here's a quick idea for when you find yourself with a spaghetti squash but don't quite know what to do with it. Come on. Admit it. That's happened to you too. It's sure happened to me! I roasted this squash on Sunday... [...] -
I'm not sure if this will be a crowd pleaser, but I liked it and thought I'd share in hopes it inspires you to have some fun with kale. I loved the combination of sweet pear, earthy kale, salty bacon bits and creamy hummus. The only issue with the wrap was [...] -
I'm going on day 2 of counting Weight Watcher Points and I'm already inspired to come up with light, healthy meals for myself. It's like I needed the constraint of points to motivate me. Isn't that weird? Anyway, all morning I was brainstorming what to make for lunch. I wanted something flavorful [...] -
I have a friend who patiently cleaned, peeled and cubed a fresh pumpkin and then selflessly gave me some. Scratch that, a TON! I would have never even thought of doing something like that! But now that I have it in my fridge the ideas are flowing. First, I roasted some [...] -
CHRISTMAS COOKIES! YAY! Sorry. I'm so excited! Little Guy and I had tons of fun making and decorating cookies today. It may just be my favorite part of the holiday season. I loved it when I was a kid and now I get to do it with my own kids. [...] -
This may be my simplest idea yet, but it was so tasty and satisfying I had to share. Plus you guys know I'm a Laughing Cow Community Leader so I'm all about sharing fun ways to use their products. You guys may also know how I feel about pausing and making [...] -
I made this on Thursday. THURSDAY! I hate when I can't post something I've eaten within 24 hours. It just bugs me. Not sure why, it really doesn't matter when I post it, does it? Anyway, I did whip this up to cure a pizza craving and I couldn't be happier. [...] -
It's been awhile since I jazzed up a tilapia fillet. I've breaded them before, coated them in oats, flavored them like one of my favorite drinks and topped them with a fun salsa. It was time to bring nuts into the party. You are going to think I'm crazy but I've [...] -
Fun leftover turkey idea #2! Click here for leftover turkey idea #1. I had a little Gouda leftover from this years Harvest Salad and decided to put all the same flavors from the salad into a quesadilla. I just can't get enough of the smokey gouda/sweet craisin combo. It goes [...] -
It's the day after Thanksgiving and my refrigerator ROCKS! I have leftover turkey, mashed potatoes, stuffing, roasted Brussels Sprouts, a bunch of veggies and tons of miscellaneous fun stuff. I've already made stock from the bones (like this) and my first batch of soup, Classic Turkey Noodle. I hope to share [...] -
I'm so sorry I've been slacking in the Thanksgiving recipe department. I feel like a bad food blogger. Everyone else is posting festive ideas and here I've gone missing for a few days. Maybe it's because I'm not doing anything special for Turkey day. I finally got my holiday cooking [...]

The cat info cracked me up. My latest video on my blog has a cute ‘cat moment’ where my cat thought he needed to be in the video too. Oh…I got my GLB t-shirt yesterday and I posted about it on my blog. And I took pictures in it too. I am your unofficial plus size t-shirt model…haha.
Hey Roni~
I always love the Thurs. Thoughts comment in the bubble- they totally make me laugh out loud ;)
Great thoughts post today. Loved the cat link…I also have a pre-teen cat (like Irish) who is always getting into everything!

It amazes me how the women we look at and quite honestly, envy, how they all some kind of body image issue. I heard Beyonce say in an interview how she hates her ears. Give me a break. Just goes to show that we need to be the best that WE can be and not look to compare ourselves with others.

The Engineer’s Guide to Cats
Hilarious.
Thanksgiving…That’s a lot of people, even more if you have a small place. We have never had thanksgiving at our house. Instead, it’s more of a battle choosing which family to visit this year. We try to just rotate it every other year, but one side always get’s upset.
My hubby just want’s to have an International Thanks Giving. To some that just doesn’t sound right. But hey, Americans are in a sense international. So we will be bringing sushi to Thanks Giving. =-)
OMG I love the engineers guide to cats!
Your stuffing recipe looks great! I hope you’ll post some of your other Thanksgiving meal recipes, its fantastic to see healthier versions of old favorites!

Memory problems I’m right there with you. :) I haven’t tried a pomegranate but I promise to buy one next time I grocery shop. I’ve heard good things about them.
I had 2 Roni moments today…moments when I was thinking…I gotta share this on Roni’s site…
I made beans today…You made me hungry for them on your video post yesterday. I boiled a bag of pinto’s in baking soda and water. Drained, rinsed added broth and bouillon and an onion and boiled till they were baked bean consistency. Yummo!!! They’re not baked beans of course, not the sweet kind, just a yummy concoction I came up with myself.
Today at the Amish grocery salvage store (not sure what the technical term is, it’s where they sell dented, slightly damaged, discontinued items). Well way back in the corner I found a Fiber One muffin mix…BUT I found $4 worth of Nissin Choice Ramen, both flavors for 10 cents a pack. I’m sure everyone there thought I was completely nuts for buying ALL they had…but I had to have them!!!
Anywho, that’s my day ;)
I love the broccoli shirt! Can’t wait to see the new ideas.
