What's Cooking in my kitchen?

I'm LOVING Pinterest! I can just scroll all day long looking at food photo after food photo. I wish I had more time to peruse! (I'm RoniNoone there by the way?) The other day I pinned a Portabello Mushroom pizza and was immediately inspired. It's such a simple idea and so light. [...] -
The other day I found myself craving an Orange Julius. Are they as popular as I think they are? Growing up we had an Orange Julius at our local mall. It was always a treat for us at the end of a family shopping trip. Once I was old enough to be [...] -
So I'm a little breakfast nutty at the moment. Little Bean LOVES eggs and I find myself cooking them more and more. This morning I decided to go super light (after last nights chocolate overload) and it was totally satisfying for just over 100 calories! The trick to making [...] -
A few weeks ago I saw Chef Michael Simon make a raw kale salad on The Chew. He sliced beets up real thin and cut the kale into ribbons. Then made a vinaigrette out of red wine vinegar and olive oil. I was immediately intrigued. So far I've only [...] -
I've had this idea for a quick creamy chicken dish for a few days now. It was time to give it a shot. The whole family LOVED it. I'm not joking. The only complaint came from Little Guy who declared his hate of mushrooms yet again BUT he ate everything around them. Fine [...] -
I made this on a total whim yesterday as I had leftover avocado after feeding the baby and leftover Spaghetti squash cooked from the weekend. I roasted the squash to serve with my Chicken tips instead of potatoes and it was AMAZING! Anyway, I'm getting sidetracked. So I'm sitting there staring [...] -
It's post holiday season. You know what that means? Leftover Crescent rolls to experiment with! Every year for Thanksgiving I buy a few canisters. It's the only time I do as I can't be trusted around them. Let's just say I'd beat you in the How-Many-Crescent-Rolls-Can-You-Eat-In-One-Sitting game and leave [...] -
Last week the kids and I tried parsnips for the first time and I've made them 3 times since. I wanted to figure out the best way to roast them. Yeah, that's it, the best way to roast them. You'll buy that right? Right? The truth is, I'm obsessed. I found myself [...] -
Yesterday just felt like a good day to stuff an acorn squash. I had one sitting on my counter for quite some time and it was just begging to be cooked. Since both husband and child don't like it I made a solo meal just for me and, well, it was DELICIOUS! [...] -
I bought a fennel bulb on a whim for the holidays not knowing quite what I would do with it. Of course I forgot about until yesterday when I was rummaging through the fridge trying to figure out what I wanted to make for breakfast. I pulled it out and stared [...] -
I probably should have warned you I was taking a holiday hiatus. I've been soaking up every moment of family time imaginable these last few days, leaving no time for anything else. Not even blogging! Shocking I know. ;) So I return not with a new recipe, per se, but to [...] -
Here's a quick idea for when you find yourself with a spaghetti squash but don't quite know what to do with it. Come on. Admit it. That's happened to you too. It's sure happened to me! I roasted this squash on Sunday... [...] -
I'm not sure if this will be a crowd pleaser, but I liked it and thought I'd share in hopes it inspires you to have some fun with kale. I loved the combination of sweet pear, earthy kale, salty bacon bits and creamy hummus. The only issue with the wrap was [...] -
I'm going on day 2 of counting Weight Watcher Points and I'm already inspired to come up with light, healthy meals for myself. It's like I needed the constraint of points to motivate me. Isn't that weird? Anyway, all morning I was brainstorming what to make for lunch. I wanted something flavorful [...] -
I have a friend who patiently cleaned, peeled and cubed a fresh pumpkin and then selflessly gave me some. Scratch that, a TON! I would have never even thought of doing something like that! But now that I have it in my fridge the ideas are flowing. First, I roasted some [...] -
CHRISTMAS COOKIES! YAY! Sorry. I'm so excited! Little Guy and I had tons of fun making and decorating cookies today. It may just be my favorite part of the holiday season. I loved it when I was a kid and now I get to do it with my own kids. [...] -
This may be my simplest idea yet, but it was so tasty and satisfying I had to share. Plus you guys know I'm a Laughing Cow Community Leader so I'm all about sharing fun ways to use their products. You guys may also know how I feel about pausing and making [...] -
I made this on Thursday. THURSDAY! I hate when I can't post something I've eaten within 24 hours. It just bugs me. Not sure why, it really doesn't matter when I post it, does it? Anyway, I did whip this up to cure a pizza craving and I couldn't be happier. [...] -
It's been awhile since I jazzed up a tilapia fillet. I've breaded them before, coated them in oats, flavored them like one of my favorite drinks and topped them with a fun salsa. It was time to bring nuts into the party. You are going to think I'm crazy but I've [...] -
Fun leftover turkey idea #2! Click here for leftover turkey idea #1. I had a little Gouda leftover from this years Harvest Salad and decided to put all the same flavors from the salad into a quesadilla. I just can't get enough of the smokey gouda/sweet craisin combo. It goes [...] -
It's the day after Thanksgiving and my refrigerator ROCKS! I have leftover turkey, mashed potatoes, stuffing, roasted Brussels Sprouts, a bunch of veggies and tons of miscellaneous fun stuff. I've already made stock from the bones (like this) and my first batch of soup, Classic Turkey Noodle. I hope to share [...] -
I'm so sorry I've been slacking in the Thanksgiving recipe department. I feel like a bad food blogger. Everyone else is posting festive ideas and here I've gone missing for a few days. Maybe it's because I'm not doing anything special for Turkey day. I finally got my holiday cooking [...] -
I just made a quick, tasty one pot meal the whole family ate without complaint! And when I say "whole" I mean WHOLE! The Baby, The Little Guy, AND The Picky Eater Husband! Here's the story…I was in NO mood to spend a lot of time on dinner. The thought [...] -
Sunday I made this sandwich on a complete whim. I just bought a bunch of red delicious apples (they were on sale.) I had 2 slices of turkey breast left in the fridge and a few wedges of The Laughing Cow Cheese just waiting to be used. As you guys may [...] -
I bought a bag of kale instead of a bag of spinach this week. My plan was to figure out ways to get this power house vegetable IN me and hopefully IN my family, although unless I hide it, they aren't game. According to NutritionData.com, Kale... [...]

I’m with you, Roni! I resolve to get back on track with my eating as well as regular exercise. Daily Treadmill, no “white stuff!”
Ab work!
Drink even more water!
Every day is definitely a new day.
I need to include more veggies in my daily consumption of good food. Stick to my points and get plenty of water are also on the list. I divorced my gym/trainer, so now I have to do it on my own as far as fitness. I think I’ll start hanging with Bob and Jillian again – something with them every day.
I can do it! I will do it!
I’ve already resolved to maintain. So today, I resolve to keep my previous resolution. So far, so good. Happy New Month’s Eve, everybody.
This was a very cute and inspiring post! As always, great job Roni!
Mine is to get below my redline weight which is 3 1bs after the halloween candy and Thanksgiving. Do more impact at my spinning class. Go to bed earlier would be good too as I know if you sleep more you burn off more.
Try to take a walk more now its cooler outside (I’m in south Florida).
Get the cook books out and make it intresting. Finally never lose the fight..this is FOREVER.
Lost 50 1bs and kept it off 17 mths thanks to WW and Roni.
I’m like you – I resolve to curb nighttime eating, or at least choose healthier snacks like fruit!
I never used to be that bad at it, but these days yummy Dubliner cheese and All Bran crackers have been calling my name. I tell them to be quiet but they don’t listen to me. =)
Good luck everyone!
What a great idea!
I’m not one that has a ton of parties and celebrations going on in the month of December (thank god!). The only thing I have is Christmas and work Christmas luncheon. Whew! But that’s enough. :) I resolve to stick to my water drinking habits (30 days now of no soda–diet or regular!) and my exercise with the trainer. Need to up the at home exercise and get in 4 days a week. I can do this!
LOVE this idea~I have been thinking about this for awhile. my goal is to get that FOURTH 10 pound ribbon at WW by the end of 2008!! I know i can do it! it is very exciting to be counting down to a new year and a new me!
What a cute post! It’s a great reminder that we do have a choice every day. My resolutions for December will be to:
1. Go to bed earlier so I can get up and walk or go to the gym before work.
2. Intentional exercise at least 5 times per week.
3. Journal daily.
4. Don’t skip any of my WW meetings.
Thanks again for the great reminder, Roni!
I loooove this post!! My resolutions are to begin exercising, quit caffiene, and continually improve my nutrition!
I resolve to get back to my healthy eating basics after over-indulging a bit too much this past weekend (was suffering from post-Thanksgiving trickle-down effect, I think).
I love this! My goal is to eat 3 normal meals a day and stop snacking at night. Which is what I’ve been trying to do forever, but maybe this time!!
I am already practicing today for tomorrow’s new month’s eve! I resolve to track my food and exercise at least 2 times per week. Going shopping today for good food so I can have a good fresh start.
On a semi non-weight related note, I also resolve to try to be in a better mood about work. I know that it is stressful right now but it will get better – or my husband will get a job in another state that he is eyeing and I will get to move! I think when you are unhappy in one area of life, it starts to transfer to other areas. How can I be motivated about losing weight when work is dragging my whole attitude down?
Oh, this is what I was thinking of doing, too. LOVE this!!!!
I’m excited too!
Goals:
1. Go to my Tuesday WW meetings
2. Hit the gym 3x/wk (30-45mins)
3. Make healthy night snacking options… Journal everything!
4. Enjoy the New Year celebration already on the right track!
Thank you Roni, WW & Everyone for the motivation!
I will:
Play dinners for the evenings that I spend shopping so I don’t just go out to eat. I will drink more water. I will incoporate Shred from once a week to twice a week into my workout routine. I also need to get to bed earlier!
oooo GREAT idea with a resolution each month! I wanna stay OP and NOT allow myself a more “free’ish” day only to work it off all wk.
and yay! I’ll be on BTL chat tonight then! the last one was great!
-AP
I am making these goals for December:
1) start journaling again
2) make it to the gym 4 times per week for at least 1 hour
3) stop putting myself down & comparing myself to others
4) love me as much as I love my family
JUST THINK>>>>> WE WILL ALL BE ONE MONTH AHEAD OF ALL THE OTHER RESOLUTION-MAKERS JANUARY 1st!!!!! WHOO HOO!!!
WATER
JOURNALING
PORTION CONTROL
WORK OUT
NO STRESS FOR THE HOLIDAY
HAVE FUN
REMEMBER THE REASON FOR THE SEASON!
OKAY>>>READY FOR ANYTHING!
mine is to go to bed earlier too!!
btw your tree is beeeeeeeautiful!!
My goal is “early to bed early to rise” and to exercise first thing in the morning. : )
My goals are: to add 3 days of exercise each week and to add more calcium and omega 3s to my diet.
Love this post!
Oops, forgot to add my resolutions.
1. Get off the computer earlier at night so I can get more sleep. Unfortunately, I am a night owl but I need to break that habit.
2. Earn AT LEAST 1 AP a day – I know – how lame to aim for just one but for medical reasons it’s hard for me to do. So, if I can earn just 1 per day to start, that would be a big plus for me, then work up to 2, 3, etc…
3. Continue to maintain my 63 lb. weight loss.
4. Journal EVERYTHING I put in my mouth!
Count me in too! My resolutions are:
1 – journal every bite
2 – control evening snacks
My resolution for December is to get back to tracking food after over-indulging on Thanksgiving and the several days following. I just have the one resolution, can’t handle anymore right now!!
I’m going to take a page from Roni’s playbook and resolve to do SOMETHING active every day. (Today it was the Walk Away the Pounds 4-mile challenge …)
And I want to recommit to journaling EVERY BITE, every day. (I do OK for a couple of days, then eat something I “shouldn’t” and then the tracking goes out the window for the rest of the day.)
Great reminder! For me, it is clean and healthy eating. And trying new exercises!
I resolve to measure my portions, track my food and take classes at the gym 6 days/week. I’ll weigh myself every Thursday morning.
Hi Roni! I know that this doesnt have anything to do with this post but i figured it might be easier for you to get back to me here.. I was just making up a christmas list to give to my boyfriend and i wanted to put the standard mmmm broccoli apron on it in white from Zazzle.com and it seems to be out of stock.. I was wondering if you knew when it would be back in stock.. Thanks =]
Gosh I posted yesterday about how I was planning to make December my strongest month yet and I can’t believe how many people are feeling the same way. This must be the 4th or 5th post that I read where the author is ready to give December their all!
I love that. I really think it is awesome that we can all be somehow tuned into eachothers same emotions! Certainly helps alleviate any feelings of loneliness!
For December I want to stay motivated. I don’t have any number or task goals, my one goal is to stay motivated right through the month.
December we’re coming at ya! Thanks for the great post!
I’m in!
Track everyday!
Get back to the gym. I have been sick for 3 weeks and really need to get back.
DO NOT CAVE – attending all the seasonal parties is not an excuse to eat.
We can do this!
Thanks Roni
