You Guys TOTALLY Spoil Me
Seriously, you are all too nice to me. It’s kind of surreal to read all your wonderful comments and I cannot believe you guys have moved my video to the number one spot of Food Network Star Entries!
No news yet and I’m trying not to think about it. For starters, I’m nervous. I mean, me? a reality girl? Noooo That’s just weird! Second, I really don’t have the cooking chops, I have a lot to learn and (if, HUGE IF, I got on) I’d probably get demolished on the cooking side of the competition.
Anyway *trying not to think about it* *trying not to think about it* back to this "spoil" thing. I’ve had a rough couple of days. The husband and I had a little tiff, the toddler has been getting on my last nerve and some people are really pissing me off!
Excuse the frankness but boy oh boy! I really do my best to do, well… my best, in everything I do. But lately I’ve been getting so much darn resistance. Know what I mean? Like getting snippy emails when I’m trying to be honest, or going out of my way to do something nice for someone and having it blow up in my face. It really makes me want to crawl into a little hole and just stop trying.
But then I read your comments, I realize I made a difference in someone life and it makes me smile! I think this is why I’m so drawn to the blogging. I love sharing my ideas, I love connecting and I LOVE inspiring and helping people reach goals. I never really looked at it as a passion but it really is. And the great thing is here I can share, connect and help people who want to do the same. If they do want to they don’t have read. It’s really like a perfect utopia, isn’t it?
Am I making any sense? I think I may have officially gone into babble mode.
Anyway, to help shut the door on my slump, I’m going to focus on the positives (besides how cool you all are ;~P) as I found THAT is the best way to deal. So today’s positives…
- I had the BEST workout this morning. I totally splurged and hired a personal trainer at the gym. Not because I have to but because I want to. Here’s what happened…. I recently left the Y and signed up at Bally’s for a few reasons but mostly due to location. With the new membership came a free personal trainer session. Well, I totally took advantage and fell in love. Not with the guy (although he’s really nice ;~P) but with the workout. Dude, he kicked my butt! and I love having someone there to spot me, set a routine, assess my goals, and do all the things that a trainer does! We are going to meet ones a week and he’s helping with a plan for the marathon. Plus I want to work on getting some muscle tone. I can totally see muscles in my arms and back and I’m liking it! LOL I updated my workout page with a loose shedule of my training schedule (holy crap I have a training schedule!)
- I ate really good today (except I’m munching a bit too much on some pretzels right now). Not because I stayed in my points but because I made everything homemade and that felt really good. We’ve been eating out a lot and I’m trying to get us back into the habit of looking in the fridge first. So today I made the husband and I some cheese steaks out of leftovers. SO YUMMY! and I made an awesome dinner (although the husband didn’t fall for the bulgur trick. LOL I tried to make bulgur instead of rice and he tried it but he wasn’t the biggest fan)
- The husband and I totally had a great talk and worked out the problems we had this weekend. That always relieves some stress and makes me feel TONS better. :~) I just feel off and we are off. I’m sure you know what I mean.
- The toddler, albeit miserable lately (last two dinners he’s be sent to timeout) I (and the husband) have NOT given in. So I’m hoping this too shall pass. :~) We’ll see.
I have so many other things to do and tell ya about but I’m SO tired. Just to keep myself honest and the ideas fresh…. book review, coupon giveaway, VitaTop giveaway, Chicago announcement, and T-Shirts. Yikes! I have a busy week ahead! :~)
Here’s the menu…
| Food | Units |
|---|---|
| cup of green tea to help me wake up – I swear the toddler doesn’t sleep past 6AM any more! | 0 |
| experimental pumpkin oatmeal – good but I need a few more tries at it before posting the recipe | 4 |
| banana | 2 |
| cheese steak made from leftover london broil with peppers and onion on a sandwich thin with a side of carrots | 6 |
| yogurt | 2 |
| baked tilapia with a side of delicata squash fries and bulgur – awesome dinner! | 7 |
| Activity: totally forgot to add my crazy training session this morning almost 2 hours on intense lifting! | -4 |
| apple | 1 |
| Multigrain pretzels | 4 |
| Total: | 22 |

What's Cooking in my kitchen?

Finally my first Farro idea! I have to say, I love this stuff! It's chewy and yummy and, well, fun! I tossed it with what I could find in my pantry and it made a wonderfully satisfying lunch. Filling but not heavy, tasty and quite nutrient dense. According to NutritionData.com this [...] -
I've seen it mentioned in a few of my clean eating and healthy cook books but honestly, I never even thought of Farro as an option for me. I refuse to shop at specialty stores and I try to use only common products that I can keep in stock and purchase from a typical grocery [...] -
I've never had a tuna melt. Is that weird? I guess that's what happens when you grow up not liking mayonnaise. I never ate tuna salad or egg salad or chicken salad. Honestly, they always kind of grossed me out. Then I realized.. hey.. why does tuna salad have [...] -
I have no idea where this idea came from. I was hungry. It was lunch. I had Brussels Sprouts. That was all the catalyst I needed.:) I decided to use a slice of real bacon to add flavor and little fat that would help sauté the sprouts. I'm trying [...] -
WOW was this good. I mean seriously good. It's not vegetarian so don't start throwing stones. I'm calling it a Garden Vegetable Burger because I use the new Laughing Cow Smooth Sensations Garden Vegetable Cream Cheese Spread. It was this recipe on Allrecipes.com that inspired [...] -
I drink water 99.9% of the time but every so often it just doesn't cut it. I want something else. Something more. Something slightly sweet. Today was one of those days. I decided to make a refreshing drink based on the famous Arnold Palmer, half lemonade and half iced [...] -
The other day I made a whole chicken on the grill in pieces. It was delicious! Just a little BBQ sauce and an open flame is all I need to make The Husband happy in the dinner department. I also picked up a few ears of corn from the grocery store. They aren't in season [...] -
Let me explain so you don't think I'm making a chili recipe and just put it on pizza. I'm calling this vegetarian Chili Pizza because chili is what inspired flavors. I think I told you. Little Bean is really into, well, BEANS! We go through a can about every 2 days. Yesterday [...] -
I've confessed my inability to follow recipes here on GreenLiteBites many, many times. I don't know why it's so hard for me. I can barely follow some of my own and I wrote the darn things! I think most of my problem stems from not having all the ingredients listed and, [...] -
Leftover brown rice and leftover sauce meet in this quick lunch idea inspired by my favorite food of all time: Pizza. I swear I can turn anything into a pizza concoction. Have you seen all my pizza ideas? I've used everything from pumpkin to zucchini, polenta to wontons. Nothing is off [...] -
This isn't a recipe just an idea I had to share. I can't believe how good it was! I've never had grilled pineapple. Can you believe it? I just never really had the desire to grill it before. When you love something raw sometimes it doesn't occur to you to cook it. [...] -
I whipped this up for lunch on a whim today because, well, I have a baby who's obsessed with three things… Cheese, Beans, and Avocado. No, really. Look... It's my go to meal for him so I find myself with beans and avocado readily available. [...] -
You know that tradition 7 Layer Mexican Dip? The one with the cream cheese, guacamole, salsa, lettuce, cheese, green onion and olives? Yea. That's the one. Well I had a craving for it the other day. Well, not exactly for it as I can never make anything the way it's suppose [...] -
If you go through the archives of GreenLiteBites I have about 5 total beef recipes. Five. Compare that to the 80+ I have tagged with chicken/turkey there's a clear winner in the meat department on my blog and in my home. I don't have a beef with beef (omg The Husband [...] -
I'm a kitchen sink smoothie maker. Whatever I have on hand goes in the blender and viola! A quick breakfast or a healthy snack. Last year I posted an "Elastic Approach" to how I make smoothies but I still like to share specific combinations that worked really well. This was one [...] -
The other night it was just the kids and I home for dinner and I decided to make what I wanted to make no holds barred. Without The Husband home it's much easier for some reason. Hmmm wonder why? Ok, not here to husband bash.. really.. I'm not! I'm here [...] -
*sigh* I was really hoping to share an awesome turkey burger idea. I had grand plans for my leftover ground turkey. The results was alright but they could have been so much better. I added diced pineapple, red pepper, green pepper, oats and soy sauce to the meat and formed 2 patties. In hindsight I [...] -
I made this on a total whim yesterday having no idea if it would work. To my surprise it did AND the husband actually said he liked it... UNSOLICITED! Here's the story. I had only 4 tilapia fillets defrosted for dinner. I knew it wasn't going to be enough for us [...] -
This is a slight reboot of a recipe I posted last year simply called Sweet Potato and Black Bean Chili. Staying true to my use-what-I-have-on-hand roots I, well, used what I had on hand and made a similar dish with a spicy twist. Topping the result with avocado added a cool creaminess that [...] -
Did you hear? The Laughing Cow recently launched Smooth Sensations a line of 5 cream cheese spreads. There's Classic Cream, Classic Cream Light, Strawberries & Cream, Garden Vegetable and my favorite… Cinnamon. It's a sweet wedge of creamy goodness! Today I decided to use my new favorite flavor [...] -
Confession time, I recorded a 30 minute video making this with both kids (partally) 2 nights ago. I miss videos. I really do but they seem so much more difficult with 2 children. I'm also having technical difficulties with my video recording and audio syncing making it VERY time consuming to edit. [...] -
A couple of years ago I shared a modified version of Sloppy Joe's I made for a party. Everyone loved it but I've been wanting to try to make something similar for the family on a smaller scale and without the pre-made canned Manwich sauce. I don't particularly have any issues [...] -
Yesterday I was dreaming about a salad. Not just any salad, but a chickpea filled, cucumber, and red onion salad with a fun, tangy dressing. Unfortunately, I had no cucumber or red onion. Well, that's a lie. I had a half of cucumber but it was a mushy mess and [...] -
Dinner meals are getting harder and harder for me to share lately. I've gone back to just whipping things up without really measuring anything (this meal was going to be one of those until I realized I still had enough light to take some photos.) I've also instituted a few brainless meal nights [...] -
Three years ago I posted a video called "Makin' Hard Boiled Eggs" where I shared my system for, well... making hard boiled eggs. Genius name, I know. I'm smart like that. Anyway, since then I've gotten tons of feedback and comments thanking me but all the information is locked in a long winded 10 minute [...]

Doesn’t it feel great when things finally start to work out? There are days, weeks even, where nothing is going right at all… and then all of a sudden, things just start to click!
You are an absolute inspiration to me and so many other people! Keep up the great work but remember, there should be some time for just you and your family. Sometimes we can all get a little caught up in work and “other” things.
Take care! Here’s to a wonderful week!!

I am glad you can be so honest with us. I had a rough time on my blog today too. Yesterday was rough for me so I talked about it. Thanks again for the motivation you have provided me over the past year.

The gym news is awesome…when I left my old gym I realised it was time to step it up…I also fell in love with the training concept…this from a person who always was too scared that I was TOO FAT to even GO to a gym- go figure! I ended up getting personal training two times a week for about 4 months and now my trainer and I are great friends and she helps me on the side, also taking me under her wing to practice teaching new classes and my entire world work out wise has changed..Ill say it again, if you have the opportunity to do any of the les mills programs on top of training, you will be in heaven…I am a total body pump and body combat girl!
This is my first post to your site but I’ve been reading for almost two months. I truly enjoy your blog and video posts and I look to your site every day for inspiration and motivation. Thank you for doing this and know that you are making a difference in people’s lives every day. Thanks again!
I mean, me? a reality girl?
I think that’s what we like about you: you are real.
Exhibit A:
I’ve had a rough couple of days. The husband and I had a little tiff, the toddler has been getting on my last nerve and some people are really pissing me off!
Roni, you deserve to be spoilt. Sorry you’ve been having some challenges lately. You really are inspiring, and help so many people – I can’t imagine what would prompt someone to write a nasty email to you. Definitely something wrong with them. Oh and thank you, I really appreciate that you stopped by on my blog!

Hi Roni!!!
— Here is WHY you should be the next food network star (besides your cute looks and sweet on screen personality). Americans are heavier than ever, and probably consume more process food than ever. FN does not need another Paula Dean (god bless her) making deep fried chicken and mashed potatoes with 6 sticks of butter followed by double fudge cake. ha! I gain weight just watching her, I swear! I think the fact that you emphasize whole, unprocessed food without being dogmatic about it is perfect.
– I just rejoined Ballys myself! As a former member, the rejoin fee was just too good to pass up. It’s not the most glamorous gym but you can’t beat $8 bucks a month. Plus I was looking for something to do inside since it’s too cold to walk now. Please post your new training routine!
Roni you are an inspiration to so many of us! Your energy and enthusiasm helped me get up off my butt and join the Y. You always spoke so enthusiastically about your workouts and your training so I thought it must be fun, and IT IS!
Don’t waste your time or energy on snarky people. People who are like that (to you or anyone) are just envious of you on some level, and you will never be able to change them or make them happy.
We know you love us, and we love you right back!

Roni, I love your blog, and I’ve been following for about a year now. I think you should definitely be on TNFNS! I have a question: I’m sure you’ve answered this before, but the activity points you give yourself for your intense workouts seem quite low to me. Is there a reason for that? Do you cap it at a certain number, or do you only count half of them or something? I weigh about what you do, and I get one point for every 10 minutes of intense exercise… Thanks!
Petunia – Did you see this? http://ronisweigh.com/ronis-updates/workout-progress
Not sure how much more details i can give and I’m leaving the actual weight workouts to the trainer. But if he does something REALLY cool I’ll definitely post it! Maybe I’ll interview him for a post too!
Bethany – You are right, I low ball it. Honestly, I never tracked them before, while losing, because I didn’t really workout. Now that I am but also maintaining I’m not really tracking to lose, I’m tracking to stay more accountable with my eating.
So I totally disrespect the AP and kind of just go with 1-2 for every half hour. I figure it keeps me honest while still recognizing that i burned something off. In my opinion, people normally overestimate their AP.
If I was losing, I may have a different philosophy.
Hope that helps!!
I’m rooting for you Roni! You are the epitome of a beautiful, successful, healthy mom and you inspire people every day here, so there’s no doubt that you would be a success on the foodnetwork :-)

WoooHoo! We love you Roni. :o)
I’m like Jen M….I can’t imagine either, what in the world that anyone could possibly have to say to you that would be nasty!!?! I think it’s nearly every single day that I give out your website URL to someone, telling them that YOU and your websites are and have been my biggest inspiration. I went to my Dr’s office yesterday afternoon for a flu shot and pneumonia shot, and the new receptionist heard the nurse going on and on about my weight loss and how wonderful I looked, so when I was leaving the office, this new receptionist stopped me and started questioning me about how I did it, so I wrote down your URL for her, and began to brag and brag about “Roni”! I’m just…nearly speechless(well, actually not too, huh?)…..about how anyone could not LOVE you and your sites.

I SO understand the kid thing… mine is turning three this December and HOLEY CRAP is she driving me crazy. Her mood, temper, attitude everything is all different! I like you have to stop my dinner to put her in time out and the weekend… dont even get me started.
I feel your pain :)
Roni–
I just saw the pumpkin pie oatmeal picture from Green Lite Bites and I am SOOO excited. I have been needing a new breakfast idea and have been anxiously awaiting the final recipe! :)
You REALLY do make a difference in my (and my family’s) life–from the little things like pumpkin pie oatmeal for breakfast to eating healthy, major motivation, and so many other things I don’t think I can even verbalize. Thank you, thank you, thank you!
And, as for the toddler, this too shall pass. One thing I realized with my second child, as she was going through the same stages as her brother had gone through before her, is that these stages do not last. Tomorrow this stage (whether good or bad) will be gone and we will be on to the next thing. And, I am not exaggerating when I say that, within the next few months (it will seem) they are all grown up and going their grown up ways. My son is turning 21 soon and it honestly seems like a year or two since he was a toddler like Ryan.
And the husband, what can one say, they are what they are… :)
Hang in there Roni–tomorrow will be better! :)
This is my first time to comment, but I’ve been reading your blog for a while. I just wanted to wish you luck on the food network star entry. We could use someone with a healthy view on that channel. I’m sure we could all use a few healthier recipes. Thanks for your honesty and jumping right into those questions that most would just ignore. Your truly an inspiration.
