My Weigh In and a Casting Call???
Last week I weighed in for the first time in weeks and I was happy that my weight was still within a very respectable maintainer range. I’m not quite sure why this surprised me, my clothes all fit great. I’m working out like a madwomen. I’m even training for the relay.
It’s so funny that I still grapple with the thought that somehow I’m going to gain 50lbs overnight. Like that the cheesecake I ate this weekend will translate into at least a 5 lb gain. It’s like I ignore the fact that I workout 4-5 days a week, HARD. That I can easily run 3-4 miles and that I’m consciously aware of everything I put in my mouth. I am not at all the same person I was 5 years ago. I can say confidently that I’m in the best shape of my life. I truly have changed my (sorry, I have to use it) lifestyle.
Why did all these feelings come to the surface tonight? Well, I weighed in again this morning and the scale showed a 1.2 loss. I was shocked. Then I had a long talk with myself which ended with a one statement….
Trust yourself. You are doing it and you will continue to.
OK, enough soul searching and back patting. I have a big decision to make. Well I guess it’s not "big" per say but definitely FUN. I just found out the Food Network is doing an open casting for the Next Food Network Star this friday! It’s only an hour from my house and I’m seriously considering going.
I’m not sure I have what it takes but I love working on GreenLiteBites, I’m fairly obsessed with food and I LOVE to cook, so why not, right? RIGHT? OK, I’m trying to convince myself.
The life lover in me is screaming "YOU ONLY LIVE ONCE! GO" The negative nilly is saying, "Why bother, you have so much work to do and you chances are pretty slim anyway."
I guess this is were I ask what you think. Although I have a feeling all comments will tell me to go as it’s the "nice" thing to say. Is anyone willing to be really truthful and tell me I’m crazy? If I decide to go I have a lot of work ahead of me to get ready! I better run!
I can’t focus anyway, the only thing swimming in my head right now is… "What’s my culinary point of view???" LMAO
I’ve been doing this a looong time…

I've never had a tuna melt. Is that weird? I guess that's what happens when you grow up not liking mayonnaise. I never ate tuna salad or egg salad or chicken salad. Honestly, they always kind of grossed me out. Then I realized.. hey.. why does tuna salad have [...] -
I have no idea where this idea came from. I was hungry. It was lunch. I had Brussels Sprouts. That was all the catalyst I needed.:) I decided to use a slice of real bacon to add flavor and little fat that would help sauté the sprouts. I'm trying [...] -
WOW was this good. I mean seriously good. It's not vegetarian so don't start throwing stones. I'm calling it a Garden Vegetable Burger because I use the new Laughing Cow Smooth Sensations Garden Vegetable Cream Cheese Spread. It was this recipe on Allrecipes.com that inspired [...] -

The other day I made a whole chicken on the grill in pieces. It was delicious! Just a little BBQ sauce and an open flame is all I need to make The Husband happy in the dinner department. I also picked up a few ears of corn from the grocery store. They aren't in season [...] -
Let me explain so you don't think I'm making a chili recipe and just put it on pizza. I'm calling this vegetarian Chili Pizza because chili is what inspired flavors. I think I told you. Little Bean is really into, well, BEANS! We go through a can about every 2 days. Yesterday [...] -
I've confessed my inability to follow recipes here on GreenLiteBites many, many times. I don't know why it's so hard for me. I can barely follow some of my own and I wrote the darn things! I think most of my problem stems from not having all the ingredients listed and, [...] -
Leftover brown rice and leftover sauce meet in this quick lunch idea inspired by my favorite food of all time: Pizza. I swear I can turn anything into a pizza concoction. Have you seen all my pizza ideas? I've used everything from pumpkin to zucchini, polenta to wontons. Nothing is off [...] -
This isn't a recipe just an idea I had to share. I can't believe how good it was! I've never had grilled pineapple. Can you believe it? I just never really had the desire to grill it before. When you love something raw sometimes it doesn't occur to you to cook it. [...] -
I whipped this up for lunch on a whim today because, well, I have a baby who's obsessed with three things… Cheese, Beans, and Avocado. No, really. Look... It's my go to meal for him so I find myself with beans and avocado readily available. [...] -
You know that tradition 7 Layer Mexican Dip? The one with the cream cheese, guacamole, salsa, lettuce, cheese, green onion and olives? Yea. That's the one. Well I had a craving for it the other day. Well, not exactly for it as I can never make anything the way it's suppose [...] -
If you go through the archives of GreenLiteBites I have about 5 total beef recipes. Five. Compare that to the 80+ I have tagged with chicken/turkey there's a clear winner in the meat department on my blog and in my home. I don't have a beef with beef (omg The Husband [...] -
I'm a kitchen sink smoothie maker. Whatever I have on hand goes in the blender and viola! A quick breakfast or a healthy snack. Last year I posted an "Elastic Approach" to how I make smoothies but I still like to share specific combinations that worked really well. This was one [...] -
The other night it was just the kids and I home for dinner and I decided to make what I wanted to make no holds barred. Without The Husband home it's much easier for some reason. Hmmm wonder why? Ok, not here to husband bash.. really.. I'm not! I'm here [...] -
*sigh* I was really hoping to share an awesome turkey burger idea. I had grand plans for my leftover ground turkey. The results was alright but they could have been so much better. I added diced pineapple, red pepper, green pepper, oats and soy sauce to the meat and formed 2 patties. In hindsight I [...] -
I made this on a total whim yesterday having no idea if it would work. To my surprise it did AND the husband actually said he liked it... UNSOLICITED! Here's the story. I had only 4 tilapia fillets defrosted for dinner. I knew it wasn't going to be enough for us [...] -
This is a slight reboot of a recipe I posted last year simply called Sweet Potato and Black Bean Chili. Staying true to my use-what-I-have-on-hand roots I, well, used what I had on hand and made a similar dish with a spicy twist. Topping the result with avocado added a cool creaminess that [...] -
Did you hear? The Laughing Cow recently launched Smooth Sensations a line of 5 cream cheese spreads. There's Classic Cream, Classic Cream Light, Strawberries & Cream, Garden Vegetable and my favorite… Cinnamon. It's a sweet wedge of creamy goodness! Today I decided to use my new favorite flavor [...] -
Confession time, I recorded a 30 minute video making this with both kids (partally) 2 nights ago. I miss videos. I really do but they seem so much more difficult with 2 children. I'm also having technical difficulties with my video recording and audio syncing making it VERY time consuming to edit. [...] -
A couple of years ago I shared a modified version of Sloppy Joe's I made for a party. Everyone loved it but I've been wanting to try to make something similar for the family on a smaller scale and without the pre-made canned Manwich sauce. I don't particularly have any issues [...] -
Yesterday I was dreaming about a salad. Not just any salad, but a chickpea filled, cucumber, and red onion salad with a fun, tangy dressing. Unfortunately, I had no cucumber or red onion. Well, that's a lie. I had a half of cucumber but it was a mushy mess and [...] -
Dinner meals are getting harder and harder for me to share lately. I've gone back to just whipping things up without really measuring anything (this meal was going to be one of those until I realized I still had enough light to take some photos.) Three years ago I posted a video called "Makin' Hard Boiled Eggs" where I shared my system for, well... making hard boiled eggs. Genius name, I know. I'm smart like that. Yesterday I decided to rediscover simple foods. Part of my cooking slump has to do with over thinking. So I did what I used to do, simply react to what I have on hand. This is what I came up with... Starting from top left around.., [...]

Roni, you should totally go to the casting call. You recipes are great and your personality shows through your videos. Go girl!
Go for it! Don’t make the mistake of not going and regretting it… If it’s meant to happen, it will, if not, I’m 100% sure it will be a fun experience! I think you have a great friendly presence on your videos and I think you would do great in that role! You do have a busy schedule, but I can tell you want to give this a try:) if you end up being picked – you can always just say no…
Can’t wait to find out what you’ll do!! Good luck!! :)
Go For It! You only can gain from the experience!
It would be a lot of work, but totally worth it! I’d definitely watch your show on the Food Network, if you won.

Back in early 2000, I applied for a job at Weta in New Zealand as they were ramping up production on The Lord of the Rings. I have a good combination of programming and graphic skillz, but absolutely no industry experience and didn’t have a chance in the world of actually getting on board. But I didn’t care. I sent it in anyway. Did I make it? Of course not. But I’ve lived extraordinarily happy in the fact that I tried. I’ll never, ever look back and say “what if”.

Ok Roni,
I hardly ever comment, i did once about the lavash bread but this is a must……DO IT!!! not only b/c you live once, but I check your website like i check my yahoo which is like every 15 mins lol you have AMAZING recipes and i must say your recipes are the 1st i have ever tried that doesn’t taste like “diet food” it’s practical and it’s REAL. You’re a huge inspiration. I was an overweight child my whole life (i was in 3rd grade at 130lbs!) up until my junior year in highchool i saw some pics of myself and somthing snapped. I lost 50 lbs with weight watchers and pilates and have kept it off since ( now 23) I have a 2 yr old daughter and i never want her to feel ashamed and always doing some fad diet like i always doing.
That is why i look up to you, you’re over the “skinny” thing it’s about being healthy and fit and listening to your body not about stressing over the scale and if the chick next to you in line at target has smaller thighs than you. Ok this is sounding corny but i really think you can make a difference through your food and your attitude.
You should definitely do it…at least go and try. I love that show! And you already know your culinary point of view – and you have a ‘story’ you can sell too so you just might be exactly what they are looking for! Go for it!
I think the audition is a fabulous idea, I have never posted before, but thought I’d just say: Really, what do you have to lose??? :)))

I’ll be honest with you…
I think that it’s a great opportunity, but you do have a lot of commitments (and that’s just what I know from reading your blog… ) Your son is still young & those years FLY by (TRUST ME!!) Soon enough, he will be in school all day and you will have more time to pursue other things. Doesn’t Food Network have one of those shows every year? You have a TON of talent in the kitchen (and on the internet) & that’s not going anywhere. Keep working on your cookbook, inventing new recipes & fine tuning your skills. Then when they do the casting call in another two years or so, you’ll be super ready & you won’t have sacrificed the precious time with your son that you can never get back.
All that of course assumes that you would get the job. I personally think b/c you have such a unique angle with the weight loss thing and your blog, your “following”, not to mention AWESOME recipes that it is VERY likely that you could get the job! If you want to try out, do it!! But, if it were me, at this point in life, I would only do it if I knew I could turn it down or postpone it, or find a REALLY good work around (Maybe a Mom & Me cooking show!) so that I didn’t have to give up the last of your time at home with the little man.
Probably not what you wanted to hear… but I think our sons are about the same age. He’s my last, and I just realize more and more everyday (b/c my oldest is now in 1st grade & I MISS HER!) just how quickly the time at home with my baby is slipping by and I’d hate for you to look back and regret jumping at an opportunity that you could easily have even if you waited a year or two.
HTH….
Hi Roni,
I am excited to hear that the Next Food Network Star is having a casting call in your area because I think you would be awesome for that show!
I also think I remember you dreaming about it in blog posts while the show was airing a few months ago- this is something that has been on your mind for awhile now and now the option to participate has presented itself!
They have some crazy challenges on that show but it would be an amazing adventure!
Check out Zoeys last blog post..Ants in my pants
go for it!!!! whether you make it or not (cause as a chef.. i can tell you its hard competition) its a once in a life time event.. just trying out is a big accomplishment. and the style you cook.. is something AMERICA needs. healthy foods.. i guess your show would be like Devin Alexanders.. she lost weight and has healthy FAST FOOD alternatives.. i wish you the best of luck.. if you get on tv.. i will root for you :) i hope you try out!!!!!
Roni, GO FOR IT! You might be crazy, but your right, you only live once and do you really want to think back 10 years from now and wonder “What if.”
Roni, you need to do this. your food is awesome, and you are an inspiration to everyone who reads your site. that would make a great combo for food tv network. just imagine your show…”i have lived it, i have lost it, and now i’ll show you how to do it!” the show “fixing dinner” was started my a mother of 7 who needed to organize her own household meal time. your show is going to be the same principle; that youve radically changed your health, weight and outlook on life, and you can show the viewers how to do it. north america has lost their grip when it comes to weight, health and food. you are the one that needs to show them how to get back on track. you need to show them that healthful food tastes great, and is easy to prepare. anything from how to cut a mango to how to prepare your more elaborate dishes. you have on-camera charisma and i have no doubt you would be a total asset to the food tv line up.
i dont think your lack of culinary education or formal training will be a downfall. the average person doesnt have culinary training either, and thats your audience. you know a lot about different foods and different cooking styles and i think that will take you a long way.
as for your culinary point of view…”healthful ideas that go over with the whole family.” you can call it what you want, but i think that’s a good angle to play. a lot of people think that if they are “dieting” or changing habits they have to cook multiple meals for the rest of the family. you can show them that your low cal meals please the critics.
thats what i think. i’d watch you. i DO watch you on your videos and i read your sites. i wish you the best of luck with whatever you choose to do.
Seriously? Totally go for it. You are an awesome role model and you have so much to offer. Your genuine and you could help the masses learn about “Healthy Living”.
You have my VOTE!!!!!
Go Roni!
Ok, here is my two cents. You should go, if only for the experience of it. If it doesn’t work out you will at least have some idea of what you need to do to get ready for the next one. You’ve got a wealth of video for examples, you are creative in the kitchen, and already have a product sponsor. Rachael Ray should be so lucky! Seriously though, go for it… you have nothing to lose. Pass out your business cards, promote your blog, meet new people and have fun, girl! No matter what happens you will still inspire and motivate those of us here. BEST OF LUCK!
I agree with everyone else. You HAVE what it TAKES. And the fact that your recipes helped you to lose weight should support your story and your cooking. That can be your philosophy on food/cooking. It is light, done right. It is full flavor healthy foods. You create healthy real recipes for people in need of a healthier option. Commentor #19 said it all…you need to do this. NO matter what we are still here for you.
I dont have children, and I would say it sounds like a great life opportunity if it pans out, but ask yourself, your child and your spouse, do you have time for this now? If as a family you agree that you do, then go for it, but if you are doing too much, you dont want to wake up one morning asking yourself, when did your child grow up!!!
Go ahead, try it out! You have accomplished so much already, they will definitely take you.
Check out Innys last blog post..Why didn’t I like hiking all these years?
Hi Roni!
I loved your blog entry as it shows me that despite of your giant weight loss you still have times when you think about your old ways. Well, you shouldn’t because you were successful and you will continue to be so. But I liked it because most weight loss success stories tell you nothing about those unsure moments.
And, secondly, I am a nice woman and will tell you to go because it IS a nice thing to say. But that’s not the only reason. I think that you are also smart and have thought this idea through. And to take your chances is something which takes you a step further in life, even if they hire someone else.
If you are a little afraid, think about what could be the worst thing to happen? You go back to your old pile of work and get hugged by everyone here because we love you and your blog. And you will feel a little braver because you tried. And the best thing to happen? You will get a new job which will be interesting and great, and you will get hugged by everyone here because we love you and your blog. Got it?
Your culinary viewpoint could be your favourite cuisine in combination to smart eating. But I am sure you already know it in your heart yourself.
Lots of Love,
Nina
GO FOR IT! I’m not saying that to be nice, I’m speaking the truth! Every time I watch one of your videos, I think “Man, she needs to be on the Food Network.” You already have so many of the qualities that the judges are always trying to bring out in the contestants. You’ll have an up on those people because you have the whole package! They’ll like you because you already have a fan club of guaranteed viewers! :) When you become the NFNS, you’ll probably have to put some of your projects on the back burner, but you should definitely try out and work on sorting all the details out later. You’ll always wonder “what could’ve been” (cue Tiffany!) if you don’t at least try. Have fun!!
Do it. Not saying it because it’s the nice thing, I’m saying it because you do only live once. You may have other opportunities, you may not, who knows?
You won’t regret going, but you may regret not going. At the very least, if you don’t go, you’ll always wonder “what if…?”

youre so thankful I dont have your phone number.
its way too early when I have the moment to read your blog and I so wanna call you up and say YESYESYES!!!
To quote Nike – “Just Do It” I think you would be awesome!
Roni, you’d be a fool not to go for this! As someone who works in the media, I know you’d really be in with a great shot. You have this brilliant back story that will translate really well on screen. Do. It.
Ok, so you may be crazy but why not. It will be fun experience and who knows what it can lead to. Eleanor Roosevelt said, ” Do one thing everyday that scares you.” I use this to challenge myself all the time. I say go for it.
I agree with Jynell but I also wanna say GO FOR IT! BUT then again, there will ALWAYS be cooking shows in the future you could try out for. I think that you do awesome with what you have on the internet and if there was some way to incorporate that into something that you could bring to the television would be great! Maybe you will revolutionize the way internet and TV intermix as far as cooking shows go! Either way that you decide, I know you will be successful at what ever you do! You are just cool like that! :)
You SO have to do it! It is definitely worth a shot. Everything happens for a reason and if you were to get it, you’d figure things out. I personally think you’d be perfect for the show. With your stance on cooking healthy for your family and for weight loss/maintenance. Food Network here you come!
Check out Carries last blog post..Plan A, Plan B and Finally Plan C
I think your culinary outlook is pretty unique–it is web/blog-based, and maybe the foodnet work would like to move in that direction? I think you should play up the fact that you have Roni’s weigh and pair it with green lite bytes–and that you are about family friendly, healthy food. The whole toddler thing is really cool too. I think it would be nice if the food network chefs, not only had a show, but also a blog like yours where they left video posts and daily tidbits!
Oh, Roni, you should go. This is a rare opportunity, and if you’re afraid of not getting in, then that’s no reason to not try. The worst that can happen is you don’t get in. It doesn’t make you any less of a cook or an inspiration to all of us. I really think you should try. I know it’s scary, and there’s lots to prepare, but it’s right there in your lap. Grab it!
Check out Shannans last blog post..8 Minutes!
OK,
I will be like a millionth person to add my 2 cents (which would make quiet a budget for you :), but I still have to do it.
I have just a few words for you—-Nigela from UK and her FABULOUS TV show. She makes her kids part of the show. They are not necessarily in every episode, but she makes kid-friendly and/or kid-approved food all the time. It makes her more real. We can relate to her. She seems like someone you could be friends with (unlike some other people on Food Network (hello!!!! Barefoot Coutessa!!!!)
So, I really think you should do it. It would be a wonderful experience and you would be absolutely great. I would watch your shows again and again.
Look at it this way, no great thing is ever easy… EVER….. The fact that the decision is so hard proves once more that it’s totally worth it.
Good luck
Irina
Hi Roni:
My husband’s top employee is from New York. His sister has worked for the Food Network for many years. We get the “inside” scoop on lots that happens over there, especially on the Emeril show. I know from both those folks that the schedule there is insane. Sometime our employee’s sister has to work 24/7 depending on what is going on. Looking at your life right this minute, if you think you can work another career into it and still have time for Ryan and the hubby, then go for it. At the very least, it will be a fun thing to do just to audition. Another item to add to life’s resume. If you happen to get the opportunity to be on TV, what fun. Do you have family who could help you with Ryan? While this is definitely a “what about me” choice in life, I know from personal experience, you do not want to look back years later and wish you had spent these next few years with that baby. When he gets in school, you won’t see him at all! Good luck on your decision. We’ll be waiting to hear all about it!
Oh you SOOOOOOOOOOO should do it!! I think you would be great on there — your personality is awesome. And besides just how cool would it be to say you went to the call and great people watching too! :)
PS — I’m new to the whole twitter thing and one of my “tweets” from you said tip: follow Christy49rs — so not sure if it was an auto thing or you mentioned it — but wanted to be sure to say a big thank you!! I LOVE being able to twitter my food…it makes it easy plus I got a new blackberry type phone so I’m all into doing these things with my phone! :)

Roni, It sounds like a fun experience. You never know until you try. I’m with everyone else, go for it! Your energy and enthusiasm translate so well over the internet and in your videos. You have nothing to lose by going to the casting call, but you may regret it if you don’t. If for nothing else you will have a fun and different experience to share with others. Best of luck to you and many thanks for this wonderful site.
if you’re looking at this as a once-in-a-lifetime thing, then you should do it… if you go and things don’t work out, then fine – you gave your best shot… if you DON’T go, you might always wonder what would’ve happened if you did…. can you live with that? and being it’s an hour away, that’s even more of a reason to go… :o)
you have proved to yourself, and to all of us, that you can do anything… this would just be icing on the cake, as they say, so JUST DO IT! :o)
Check out jodis last blog post..glad monday is over
I say go! You know, the worst that can happen is they say no and your life goes on just the way it is…if you get it, don’t forget us!
There’s nothing I can add that hasn’t already been said! You already know that you are going to do it so good luck!! You will be awesome
That is soo crazy that you have this opportunity. Just last week I was watching you with the toddler and I thought “he’s going to be on food network one day”. Not kidding, this is surely a sign. I think you need to market a mother son show that teaches parents how to cook with kids and get them excited about trying new things!!! I know I would watch ;)
When you do try out and when you do make it, we will SELFISHLY miss you!!!!… we will grieve the loss of our mentor. Because we do not actually see you in person, you are an inner voice projecting into each of us!
Maybe the FN channel could give you an HOUR show. The hour would give you the 1/2 hour for cooking and 1/2 hour to do kind of what you do here in this site, but live. You would be like Oprah or Ellen, with a twist.
You must at least try to get on the challenge. If you make it and decide the commitment is too much for now, you can always say thank you for the opportunity, but I have had a change of heart.
Best of luck with your decision. We all support you either way!
GO FOR IT! How many people have this opportunity? Right down the road? From my expertise…..( food junky, Home Ec teacher and a Food Networkaholic). I am tired of watching people that are experts….lets face it, most of us are on a budget, most of us have limmited time, a family to feed and the inability to run to a market that has unique food items that my market doesn’t have ( I live in IA) ha.
MY POINT IS>>>>>>> Drum roll please……that they are looking for a fresh personality who can learn when necessary, and to top it off is weight conscious! Other than Ellie Krieger, who do we got? I can’t use a stick of butter in every dish because my butt would look like aunt marion! I like to watch those shows….but NEVER download a recipe!
OKAY, done, but going to be very disappointed if you don’t try. Let me live vicariously through YOU!!!!!!
OHHHHH PLUSSSS when you do get to be a network star!!!! Don’t be puttin a small, itty, bitty, teeny, weeny little portion on a plate. Go for the gusto, we want a serving!!!!
Would I shut up already???? I think you call your show “Ronis Weigh” > I am soooo creative! I think it is the perfect title!
First off, I would say DO IT!!!!
But, make sure that you study up and be tough! There will be some hard core chefs there. If you think you can deal with it mentally, I think you can do it. You definitely have the presence and the recipes to do it!!!
Good Luck!!!

I’ve never posted a comment here before, but I think this post deserves my two cents: DO IT, Roni! What do you have to lose? Maybe a few hours of fretting and the time spent at the try-outs, but better to have lost that than to say “what if?” Good luck!
omg RONI!!!! The first video post I saw on Green Lite Bites I was like, WHY isn’t she on Food Network!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
DO IT!~ DO IT NOW!~!~ We will all be okay with the fact that you may not have as much time for your blogging…………
WE WANT TO SEE YOU ON FOOD NETWORK STAR!!!!! Do it for all of us who have struggled with weight~!
You can be an example for all of the moms out there just like us.
JUST DO IT :)
