So Much to Say, So much to say…
I had a movie moment in the car today. It’s been awhile since I posted a journal entry. I’ve been busy, traveled to my moms, had some technical problems and my GreenLiteBites ideas tend to take up my posting time lately. Plus you know, I’m a mom, have clients, a husband and a house to tend. So the first thing that I end up taking of my to do list is a journal post when I get back logged.
Anyway, I was thinking what I would post about and what my title would be. Yes, I actually TRY to be clever although I rarely succeed. So last night when I was going to attempt to post but got too tired, the words So Much to Say popped into my head. You know, the song by Dave Matthew’s Band. I thought I’d use it as my post tittle. Then when I went to write the post I found I didn’t have really anything to say at all. Well, I did have stuff to say but I didn’t know how to say it. This “bloggers” block happens to me sometimes. So I decided to walk away and wait until I was inspired.
Well on my way home from the gym this morning don’t I hear So Much to Say on the radio. It made me laugh out loud, like the blog gods where trying to tell me something.
So here I am, posting with so much to say!
- Labour Day weekend was a food fiasco! I had SO much fun but I ate WAY too much. I’m not beating myself up over it. I’m not quite sure why I ate that much but it was the holiday, it’s over and I’m moving on. Oh wait, I DO know why I ate so much, my Uncles from Brooklyn brought Italian Cookies. They are one of my all time favorites. Thankfully I do NOT live near a New York Bakery!
- Marathon Relay Training is going well. I ran 5 times last week, 2 – 30 min runs, 2 at boot camp and my first 40 minutes! This week so far I ran one 30 minutes and a boot camp run this morning. I don’t think I’m going to hit my goal of 3 – 40 minute runs this week. I’m shooting for 1 tomorrow and 45 minutes on Saturday. So I guess I’m fine tuning my training schedule taking some of the advice I’ve been getting (all by the well helpful AND appreciated!). I’m still attempting to increase my time 5 minutes a week and I would like to get at least one 60 minute run in before the Marathon. Preferable early in the week. I’m also shooting for 4 weight training sessions and boot camp classes during the week AND I’m going to give Zumba a try this weekend! It’s a dance class. Now that I wrote all that out I have NO idea who has possessed this lazy body of mine! I feel like work-out-aholic girl! LOL but I really love it! It’s totally my outlet now.
- I hinted in my 40 Min run post that I had to say goodbye to my “baby”. Well what I meant by that was WeightWatcchen is no longer online. If you try to go there you will be redirected here. In doing so I lost a lot of revenue and some blog posts that didn’t get transferred but it was being severely targeted by Hackers and I just couldn’t keep up anymore. I was sad to see it go but at the same time I really want to focus my energy here (most of my posts are here anyway) on GreenLiteBites and BlogToLose. I don’t have time to manage and debug an archived site. That being said Blogs.WeightWatchen.com is still live and people are still blogging. Please show them some support if you have time. Oh and a note to the hackers…. MY AUDIENCE IS NOT INTERESTED IN VIAGRA!!!
- Speaking of focusing my energy I’m working on getting a new chat system in place on BlogToLose so you may see some weird stuff happening over there in the next few days. I am also uploading a new video as I type this so that should be posted by tonight along with the podcast and two additional sessions throughout the week and I’m still pumping out recipes ideas on GreenLiteBites, including a new produce pick, related recipe for okra and this weeks video of Beer Chicken in the Oven. I feel like a “well oiled machine!” But if you can’t tell, I’m loving every minute of it and I TRULY love what I do!
- Things I’m working on… 2 new food finds (although they might be old), another quick lunch idea, a new blog contest and I’m still working on a cook book review!
- Things I’m behind on, email, blog reading, my cook book and sleep. :~) In all seriousness I’m desperately behind blog reading, I’ve basically conceded to it this week. I just don’t know how I can keep up!
Ok, I think that’s all the updates I had. I guess I really did have so much to say. I’ll be back with a video later! Have a good “hump” day!

What's Cooking in my kitchen?

Finally my first Farro idea! I have to say, I love this stuff! It's chewy and yummy and, well, fun! I tossed it with what I could find in my pantry and it made a wonderfully satisfying lunch. Filling but not heavy, tasty and quite nutrient dense. According to NutritionData.com this [...] -
I've seen it mentioned in a few of my clean eating and healthy cook books but honestly, I never even thought of Farro as an option for me. I refuse to shop at specialty stores and I try to use only common products that I can keep in stock and purchase from a typical grocery [...] -
I've never had a tuna melt. Is that weird? I guess that's what happens when you grow up not liking mayonnaise. I never ate tuna salad or egg salad or chicken salad. Honestly, they always kind of grossed me out. Then I realized.. hey.. why does tuna salad have [...] -
I have no idea where this idea came from. I was hungry. It was lunch. I had Brussels Sprouts. That was all the catalyst I needed.:) I decided to use a slice of real bacon to add flavor and little fat that would help sauté the sprouts. I'm trying [...] -
WOW was this good. I mean seriously good. It's not vegetarian so don't start throwing stones. I'm calling it a Garden Vegetable Burger because I use the new Laughing Cow Smooth Sensations Garden Vegetable Cream Cheese Spread. It was this recipe on Allrecipes.com that inspired [...] -
I drink water 99.9% of the time but every so often it just doesn't cut it. I want something else. Something more. Something slightly sweet. Today was one of those days. I decided to make a refreshing drink based on the famous Arnold Palmer, half lemonade and half iced [...] -
The other day I made a whole chicken on the grill in pieces. It was delicious! Just a little BBQ sauce and an open flame is all I need to make The Husband happy in the dinner department. I also picked up a few ears of corn from the grocery store. They aren't in season [...] -
Let me explain so you don't think I'm making a chili recipe and just put it on pizza. I'm calling this vegetarian Chili Pizza because chili is what inspired flavors. I think I told you. Little Bean is really into, well, BEANS! We go through a can about every 2 days. Yesterday [...] -
I've confessed my inability to follow recipes here on GreenLiteBites many, many times. I don't know why it's so hard for me. I can barely follow some of my own and I wrote the darn things! I think most of my problem stems from not having all the ingredients listed and, [...] -
Leftover brown rice and leftover sauce meet in this quick lunch idea inspired by my favorite food of all time: Pizza. I swear I can turn anything into a pizza concoction. Have you seen all my pizza ideas? I've used everything from pumpkin to zucchini, polenta to wontons. Nothing is off [...] -
This isn't a recipe just an idea I had to share. I can't believe how good it was! I've never had grilled pineapple. Can you believe it? I just never really had the desire to grill it before. When you love something raw sometimes it doesn't occur to you to cook it. [...] -
I whipped this up for lunch on a whim today because, well, I have a baby who's obsessed with three things… Cheese, Beans, and Avocado. No, really. Look... It's my go to meal for him so I find myself with beans and avocado readily available. [...] -
You know that tradition 7 Layer Mexican Dip? The one with the cream cheese, guacamole, salsa, lettuce, cheese, green onion and olives? Yea. That's the one. Well I had a craving for it the other day. Well, not exactly for it as I can never make anything the way it's suppose [...] -
If you go through the archives of GreenLiteBites I have about 5 total beef recipes. Five. Compare that to the 80+ I have tagged with chicken/turkey there's a clear winner in the meat department on my blog and in my home. I don't have a beef with beef (omg The Husband [...] -
I'm a kitchen sink smoothie maker. Whatever I have on hand goes in the blender and viola! A quick breakfast or a healthy snack. Last year I posted an "Elastic Approach" to how I make smoothies but I still like to share specific combinations that worked really well. This was one [...] -
The other night it was just the kids and I home for dinner and I decided to make what I wanted to make no holds barred. Without The Husband home it's much easier for some reason. Hmmm wonder why? Ok, not here to husband bash.. really.. I'm not! I'm here [...] -
*sigh* I was really hoping to share an awesome turkey burger idea. I had grand plans for my leftover ground turkey. The results was alright but they could have been so much better. I added diced pineapple, red pepper, green pepper, oats and soy sauce to the meat and formed 2 patties. In hindsight I [...] -
I made this on a total whim yesterday having no idea if it would work. To my surprise it did AND the husband actually said he liked it... UNSOLICITED! Here's the story. I had only 4 tilapia fillets defrosted for dinner. I knew it wasn't going to be enough for us [...] -
This is a slight reboot of a recipe I posted last year simply called Sweet Potato and Black Bean Chili. Staying true to my use-what-I-have-on-hand roots I, well, used what I had on hand and made a similar dish with a spicy twist. Topping the result with avocado added a cool creaminess that [...] -
Did you hear? The Laughing Cow recently launched Smooth Sensations a line of 5 cream cheese spreads. There's Classic Cream, Classic Cream Light, Strawberries & Cream, Garden Vegetable and my favorite… Cinnamon. It's a sweet wedge of creamy goodness! Today I decided to use my new favorite flavor [...] -
Confession time, I recorded a 30 minute video making this with both kids (partally) 2 nights ago. I miss videos. I really do but they seem so much more difficult with 2 children. I'm also having technical difficulties with my video recording and audio syncing making it VERY time consuming to edit. [...] -
A couple of years ago I shared a modified version of Sloppy Joe's I made for a party. Everyone loved it but I've been wanting to try to make something similar for the family on a smaller scale and without the pre-made canned Manwich sauce. I don't particularly have any issues [...] -
Yesterday I was dreaming about a salad. Not just any salad, but a chickpea filled, cucumber, and red onion salad with a fun, tangy dressing. Unfortunately, I had no cucumber or red onion. Well, that's a lie. I had a half of cucumber but it was a mushy mess and [...] -
Dinner meals are getting harder and harder for me to share lately. I've gone back to just whipping things up without really measuring anything (this meal was going to be one of those until I realized I still had enough light to take some photos.) I've also instituted a few brainless meal nights [...] -
Three years ago I posted a video called "Makin' Hard Boiled Eggs" where I shared my system for, well... making hard boiled eggs. Genius name, I know. I'm smart like that. Anyway, since then I've gotten tons of feedback and comments thanking me but all the information is locked in a long winded 10 minute [...]

I can see why you’d love those cookies! They look delightful.
Saw the oven beer chicken video. Thanks for the lesson on cutting up the chicken. I don’t normally cook meat in its original form like that, but now I’m less intimidated and might try it. Ryan is cute as ever!
Sorry you had so much trouble with WeightWatchen. I know how much work can go into a site, and to have that happen stinks. I liked your note to the hackers. So true!
Anywho, happy running this week! I finished my second workout of the C25K today and I think I’m already getting hooked on running. It’s kind of early to tell, but the fact that I even got onto that treadmill today to do it is quite a feat in my world. :)
Have a great evening!
Can’t wait for the new podcast! I need something to listen to on my walk tomorrow (other than the 80s tunes that lurk on my iPod!).
I still don’t know how you do it all. You’re always so busy.
I’ll miss the Weight Watchen site too! It was a great source of motivation when I first started my weight loss journey.
You amaze me Roni. Love your energy and creativity. I’m so appreciative of what you do. thanks for all of this.
Roni –
Just started running….been walking forever, started adding some strength training…and now I am doing the walk/run…..lol. kind of 2 minutes of each for about 30-40 minutes….
I was also push up challenged for a long time…fell on my nose as a kid trying to do them, and never could get my arms to bend after that…(ok…you can stop laughing now!!!) I can do two sets of 10 now…:-)))))
Anyhow…I’ve been working the WW plan for about 2 years now….am about 5 lbs shy of goal for about a year…but happy…the exercise is key.
Saw some of your music, thought I’d share one of my mixes…some old, some new….some graphic. I am more into the old alternative – you seem to be into the new – but give it a whirl. You may even recognize one of the songs from ‘so you think you can dance’…;-)
Brass Monkey – Beastie Boys
Check it Out – Beastie Boys
Wonderful Night – Fatboy Slim
Groove is in the Heart – DeeLite
Stupify – Disturbed
Suicide Blonde – INXS
Are you Gonna go my Way – Lenny Kravitz
American Boy – Estelle
You can’t, You won’t – Beastie Boys (Great last song for a run)
Have fun!

Not that you do not have enough to do, and we really do appreciate you, but don’t forget about the Aldi list that you were going to make for us. :o) Thank you for posting Roni – you are now added on my list of things to read daily.

Kelly – I’m trying to get a camera so I can record in store. If I don’t make it happen I’ll just write it up the “old fashioned way” I’m not sure why it’s taking me SO LONG! It’s not forgotten, I promise!
Mmmm, Italian cookies. My Italian family makes their own cookies for every special occasion and Christmas. At least I burn some calories while making them (they take FOREVER and have multiple steps) and I’ve learned to only eat one or two at a time, whereas I used to eat a plateful! We also give most of them away as gifts at Christmas. I know why you couldn’t resist them, though. YUM!
