AAACCCKkkkk
Remember how confident and cocky I was when I posted the weekend quote. Yea, well, I sure enjoyed myself this weekend. I enjoyed the stuffed shells, fresh Italian Bread, Chocolate Cheesecake, meatballs, pizza a-n-d ice cream. Mixed in with all the indiscretions was a lot of healthy stuff too, whole wheat pancakes, papaya smoothie, salmon, a ton of veggies and more then my fair share of water.
*sigh*
On top of the food, It was a CRAZY weekend all around. Friday night the husband and I took the toddler out, Saturday morning I had a bit of a fiasco (more in a bit) then the in-laws came, I cooked ALL day for dinner, when out to a Poker tournament that night, woke up early this morning for a run, went shopping with "the girls" (and the toddler) and attended a jewelry party with some friends from the gym. Needless to say NOTHING got done around the house and now I feel like I’m starting my week behind but it was worth it. I had a great weekend!
OK, so on to this "fiasco". Saturday morning I gear up and get ready for a boot camp class. It’s raining. I remember that I haven’t checked the mail the day before. So I place the ipod on the roof of the car so it doesn’t get wet when I walk to the mailbox. I grab the mail, hop in the car and head to the gym. When I arrive, it hits me, I FORGOT THE IPOD ON THE ROOF!
I call the husband frantically, have him run out into the rain and check the drive-way. No luck. So I *try* to decide it will be OK and I head into the gym only to discovered they canceled the class. Side note: Who cancels a boot camp class because it’s raining. IT’S BOOT CAMP!! Anyway, I hop back in the car and start to look for the ipod on my ride home.
No luck.
I come home completely devastated as the iPod and the Nike+ are one of my biggest motivators. Not to mentioned I just left $180 on the roof of the car. I was SO mad at myself that I started to clean. Do you do that? When I get mad I clean and try to get organized, it’s my way to deal. Anyway, the poor husband felt so bad for me he went searching in the rain all through the community thinking it had to fall off rather quickly.
No luck.
I pretty much conceded that it was gone. My in-laws were on the way and I needed to get some groceries for dinner. I hop in the car and on my way out of our community, don’t you know, I spot it! There, lying in the wet grass getting pelted with rain is my iPod Nano in tact! Unbelievable! And it worked! However, I fried the Nike+. But hey, I’d rather replace a $30 gadget then $150 mp3 player!
Needless to say I could not record my run this morning but thankfully Carrie had hers and she recorded for me. We didn’t make our 55 minute goal but it’s no big deal. We ran our butts off on some crazy hilly terrain for 4.76 miles! Carrie sent me the stats.

OK, I’m heading to bed early. I want to start the week of with a good night sleep. I am going to start keeping a running food journal on twitter, I think I need to change up my approach a bit. I do that every couple of months, if you haven’t noticed. ;~)

What's Cooking in my kitchen?

Finally my first Farro idea! I have to say, I love this stuff! It's chewy and yummy and, well, fun! I tossed it with what I could find in my pantry and it made a wonderfully satisfying lunch. Filling but not heavy, tasty and quite nutrient dense. According to NutritionData.com this [...] -
I've seen it mentioned in a few of my clean eating and healthy cook books but honestly, I never even thought of Farro as an option for me. I refuse to shop at specialty stores and I try to use only common products that I can keep in stock and purchase from a typical grocery [...] -
I've never had a tuna melt. Is that weird? I guess that's what happens when you grow up not liking mayonnaise. I never ate tuna salad or egg salad or chicken salad. Honestly, they always kind of grossed me out. Then I realized.. hey.. why does tuna salad have [...] -
I have no idea where this idea came from. I was hungry. It was lunch. I had Brussels Sprouts. That was all the catalyst I needed.:) I decided to use a slice of real bacon to add flavor and little fat that would help sauté the sprouts. I'm trying [...] -
WOW was this good. I mean seriously good. It's not vegetarian so don't start throwing stones. I'm calling it a Garden Vegetable Burger because I use the new Laughing Cow Smooth Sensations Garden Vegetable Cream Cheese Spread. It was this recipe on Allrecipes.com that inspired [...] -
I drink water 99.9% of the time but every so often it just doesn't cut it. I want something else. Something more. Something slightly sweet. Today was one of those days. I decided to make a refreshing drink based on the famous Arnold Palmer, half lemonade and half iced [...] -
The other day I made a whole chicken on the grill in pieces. It was delicious! Just a little BBQ sauce and an open flame is all I need to make The Husband happy in the dinner department. I also picked up a few ears of corn from the grocery store. They aren't in season [...] -
Let me explain so you don't think I'm making a chili recipe and just put it on pizza. I'm calling this vegetarian Chili Pizza because chili is what inspired flavors. I think I told you. Little Bean is really into, well, BEANS! We go through a can about every 2 days. Yesterday [...] -
I've confessed my inability to follow recipes here on GreenLiteBites many, many times. I don't know why it's so hard for me. I can barely follow some of my own and I wrote the darn things! I think most of my problem stems from not having all the ingredients listed and, [...] -
Leftover brown rice and leftover sauce meet in this quick lunch idea inspired by my favorite food of all time: Pizza. I swear I can turn anything into a pizza concoction. Have you seen all my pizza ideas? I've used everything from pumpkin to zucchini, polenta to wontons. Nothing is off [...] -
This isn't a recipe just an idea I had to share. I can't believe how good it was! I've never had grilled pineapple. Can you believe it? I just never really had the desire to grill it before. When you love something raw sometimes it doesn't occur to you to cook it. [...] -
I whipped this up for lunch on a whim today because, well, I have a baby who's obsessed with three things… Cheese, Beans, and Avocado. No, really. Look... It's my go to meal for him so I find myself with beans and avocado readily available. [...] -
You know that tradition 7 Layer Mexican Dip? The one with the cream cheese, guacamole, salsa, lettuce, cheese, green onion and olives? Yea. That's the one. Well I had a craving for it the other day. Well, not exactly for it as I can never make anything the way it's suppose [...] -
If you go through the archives of GreenLiteBites I have about 5 total beef recipes. Five. Compare that to the 80+ I have tagged with chicken/turkey there's a clear winner in the meat department on my blog and in my home. I don't have a beef with beef (omg The Husband [...] -
I'm a kitchen sink smoothie maker. Whatever I have on hand goes in the blender and viola! A quick breakfast or a healthy snack. Last year I posted an "Elastic Approach" to how I make smoothies but I still like to share specific combinations that worked really well. This was one [...] -
The other night it was just the kids and I home for dinner and I decided to make what I wanted to make no holds barred. Without The Husband home it's much easier for some reason. Hmmm wonder why? Ok, not here to husband bash.. really.. I'm not! I'm here [...] -
*sigh* I was really hoping to share an awesome turkey burger idea. I had grand plans for my leftover ground turkey. The results was alright but they could have been so much better. I added diced pineapple, red pepper, green pepper, oats and soy sauce to the meat and formed 2 patties. In hindsight I [...] -
I made this on a total whim yesterday having no idea if it would work. To my surprise it did AND the husband actually said he liked it... UNSOLICITED! Here's the story. I had only 4 tilapia fillets defrosted for dinner. I knew it wasn't going to be enough for us [...] -
This is a slight reboot of a recipe I posted last year simply called Sweet Potato and Black Bean Chili. Staying true to my use-what-I-have-on-hand roots I, well, used what I had on hand and made a similar dish with a spicy twist. Topping the result with avocado added a cool creaminess that [...] -
Did you hear? The Laughing Cow recently launched Smooth Sensations a line of 5 cream cheese spreads. There's Classic Cream, Classic Cream Light, Strawberries & Cream, Garden Vegetable and my favorite… Cinnamon. It's a sweet wedge of creamy goodness! Today I decided to use my new favorite flavor [...] -
Confession time, I recorded a 30 minute video making this with both kids (partally) 2 nights ago. I miss videos. I really do but they seem so much more difficult with 2 children. I'm also having technical difficulties with my video recording and audio syncing making it VERY time consuming to edit. [...] -
A couple of years ago I shared a modified version of Sloppy Joe's I made for a party. Everyone loved it but I've been wanting to try to make something similar for the family on a smaller scale and without the pre-made canned Manwich sauce. I don't particularly have any issues [...] -
Yesterday I was dreaming about a salad. Not just any salad, but a chickpea filled, cucumber, and red onion salad with a fun, tangy dressing. Unfortunately, I had no cucumber or red onion. Well, that's a lie. I had a half of cucumber but it was a mushy mess and [...] -
Dinner meals are getting harder and harder for me to share lately. I've gone back to just whipping things up without really measuring anything (this meal was going to be one of those until I realized I still had enough light to take some photos.) I've also instituted a few brainless meal nights [...] -
Three years ago I posted a video called "Makin' Hard Boiled Eggs" where I shared my system for, well... making hard boiled eggs. Genius name, I know. I'm smart like that. Anyway, since then I've gotten tons of feedback and comments thanking me but all the information is locked in a long winded 10 minute [...]

OMG Roni! What a weekend! I totally clean when I’m upset also! It rarely has anything to do with the situation at hand but it makes me feel more in control of the situation.
I’m glad you found your Ipod!
I’m glad you had a Ipod happy ending! I would have a tough time at the gym without mine, I know!

Well I am glad to hear that you found your iPod. Congrats on your run. Sorry you were just sort of your running goal. My weekend was crazy fast. It was like it started and stopped all in the same 10 minutes. I did a lot of cooking (I made your berry oatmeal cups) and tried several new recipes.

at least it wasn’t a BABY. every once in a while – I read a news story where someone leaves a carseat on the roof top and drives away – so far some have had other drives frantically waving or when the baby has falled off – I think every one of those dropped babies has not had a mark on it. . .

Glad to hear you recovered your ipod. I am sure you searched the internets but it should be fine if you let it dry out. My husband dropped his in a swimming pool (yes, a swimming pool) we let it dry (according to our research) and it works like a charm 2 years later.
I tend to get mad when I lose something (because I consider myself a person usually on top of things), which leads to me having to look for it, thereby reorganizing things in the process most of the time, so it covers all of the above. I’m glad you found the iPod. I know how bad you must have felt that you lost it. Hopefully, there were no hard feelings on your hubby’s part. I tend to feel guilty when something like that happens.
I agree about the boot camp needing to be open, but maybe it’s a liability issue with insurance or something, and if you fell and got hurt in the rain (is it outside?) there would be a problem. At least you did get your run in, and I APPLAUDE you for saving the worm (clap! clap! clap!). I would have done the same thing! :)

Roni, I so love that you are a real person, who eats chocolate cheesecake & ice cream and so on!! I’m going to start counting points again & get back on the horse. I may even start a new blog.. we’ll see!
Too funny about BC being cancelled because of a little RAIN! Some of our best BC sessions were in pouring rain- or SNOW!! I think you should complain- LOL!! :D
Wow, your feed fest sounds just like my week last week, except that I was kidding. (For the reference, click on my last blog post.)
Glad you got the pod back. :)

I did well this weekend except yesterday the hubby made fresh apple turnovers. I figured at 12 points each so I had a half…..but so wanted more. I am wanting to hit goal this week….only half a pound left. I left bills on the top of the car the other day….had them all ready for the post office and my hands were too full to open the door. I got in and forgot them….had to come back around and found them all over the neighborhood. I feel for ya!
Today is a new day…..The great part about you and anyone who is a maintainer knows that we always get a fresh start and it it likely all of that won’t make one bit of difference on how you look, what you eat today, what your goals are. It was yesterday..done..finished..and yippee you get a fresh new day today. Take a step back and realize that you are a person, sometimes we indulge and that my friend is okay….because tomorrow you have trained your mind and body to know that it won’t happen every day.
Boy, how great that you found your ipod. That happened once to me and the thing was in the snow, and apparently I had run over it several times, and it still worked!
I really like that you are someone who is so very successful at weight maintainance, and yet you have the same problems of going off and eating too much and the wrong stuff sometimes. That you are confident, and you fail, and you are willing to share it with us. Thanks, Roni!
BTW, I love your video posts, and look forward to each one. I usually watch them when I take my afternoon snack break!

If you bought your Nike+ less than a year ago, send it back to Apple and tell them it’s broken and they’ll send you a whole new one. They have a year unconditional warranty. I had to do this with a whole iPod, not just a Nike+, and it was my fault it was broken because I dropped it! But they replaced the whole thing and even redid my laser engraving on the back! Anyway, you get on the website, tell them your thing is broken, they’ll send you a prepaid DHS box or envelope with packing instructions and less than a week later you should have a new one.
Sorry to hear about the Nike+ but hopefully like Ashley said they will replace it and you will have a brand new one!
I’m glad you found your iPod! I don’t know what I would do without mine!

I can’t believe it worked after spending time in the rain. Mine crashed and burned after I ran in the rain with it on. I heard this crack pop in my and then …..nothing ever again. I lasted about 2 runs without it and then called it an early birthday present and got a new one. I use the shuffle just for ease but am thinking about going up to the nano for more space and the ability to use the nike+.
