I just thought of pita bread and hummus.. I bet you could do the oven baking with those mmmm! 
Thank you for saying that you eat before bed:) Honestly if I try not to eat before bed I will get up at night. Sometimes I am awake but not always. I am known to sleepwalk and eat in my sleep.. Yep its possible, my hubbie finds the wrappers in the morning. My uncle does the same thing we theorize a drop in blood sugar.

Here are a couple more ideas for the person who will be traveling:
-Pretzels (pre-portioned out)
-Dry cereal (seperated into single servings)
-Make your own chex mix - cereal, pretzels, goldfish - portion it out into individual servings
-Make your own trail mix - mix up some nuts for protein, plus pretzels, plus a couple chocolate chips or m&amp;ms, gold fish, cereal, etc.
-crackers with low fat peanut butter
-fiber 1 bars

If you can pack stuff in a cooler - bring some cheese, yogurts, cottage cheese - these may be messy for the kids, but you could eat these with a throw away spoon.
