Quick Food Journal with a Snack Idea!
I don’t have much time tonight. My site was hacked again! This time it wasn’t as invasive but still. Some Jackass interjected Viagra ads into all of my files! WTH? I mean seriously!
*deep breath*
I’m not going to focus anymore energy on it. Anyway, here’s my quick food journal today. I’m returning to my simple format. I want to track but doing a full week in loss mode is too much for me right now. I have a lot going on.
So on to this snack idea!
Tonight I just wanted something. You know, “something”. So I took a VitaTop out of the freezer and let it defrost on the counter for a few minutes. Then I and cut it in half. Not in half, like in half but in half so I ended up with two full circles. Does that make sense? Then I proceed to top one of the halves with ¼ cup of Breyer’s Free and squished it down with the other half of muffin. TADA! 2 point Ice cream sandwich!! How COOL is that?! Yea, yea I could have bought a skinny cow or something, but I didn’t have any on hand and this was a nice substitute.
Sorry no picture, I’m a bit lazy tonight. I’ll snap next time I make it. OK, Gotta run.

that’s awful about the hacker! Some people really need to get a life! The ice cream sandwich sounds yummy and easy. I am always looking for a quick snack like that for the kiddos or me or whoever just happened to drop by. Today all I had for my nieces was healthy pb cookies I made on Sat. and some cheese ;) I will have to keep the freezer stocked with supplies for summer treats!
I was wondering what was going on. I went to the site and there was a bunch of file folders showing with a bunch of code.
It’s so unfair – in the US you have soooooo much choice when it comes to food for healthy eating. In the UK you have to go to 5 different supermarkets or just eat fruit and vegetables. You would be so disappointed with food over here
It makes life so much harder for us british wannabe-slims.

Hi Roni,
Another good low fat “ice cream” sandwich idea. Take the chocholate flavored graham crackers (not chocholate covered!) pot fat free or low fat whip cream in between to make a sandwich and freeze for several hours. It is very good! I usually make them in the morning if I am going to have them in the afternoon/evening. My son has always liked them.

The summer bake sounds wonderful and light! I wonder how it would taste with Fiber One, or maybe that would be too sweet. I’ll have to experiment.
In a dish like that, a little cheese goes a long way, especially if you go with a mixture of moz. with parmesan or something. The “tang” of the parm allows you to use much less.

That is a fantastic idea! Unfortunately, I lack the will power to keep ice cream in the house, so I may try this with a little Cool Whip Free. :)

Also, I realize my advice here is completely unsolicited, but your menu doesn’t look very full to me. I realize you weigh a lot less than I do, but it doesn’t look like you’re eating very much, especially if you’re working out a lot. And you’re not meeting the GHGs. It’s just something I noticed.

Hehe, I kept reading the line “Not in half, like in half but in half so I ended up with two full circles.” and wouldn’t let myself move on until I got it. Then yes, finally it clicked (I never said I was a geometry expert…or even novice!). Then I read further on and it makes complete sense. I wasted all that brain power. :)
