Tree – Hmmmm well, I think if you added a bit of coarse corn meal to grit them up you’d be fine! The sweetness is good but the texture is off.

I am a huge fan of your site. I love to see others losing weight and but find it so difficult to lose my own and stay consistent. If you have any suggestions or advice I am open to listen. Also I’m a country girl and we are REAL particular about corn bread. Do you think these muffins will stand the test? If its not homemade I usually eat Jiffy. Would you say its similar?

I LOVE LOVE LOVE corn muffins! I’ll definitely have to give these a try. I definitely like the gritty texture but if the flavor is good I think it would be worth it. I am glad to hear you are recovering well and that the outcome looks good!
