Golden Corn Mix

Date June 23, 2008

Last week, when I had a house full of guest for the toddlers birthday I made breakfast for everyone. It’s one of my absolute favorite things to do! Made to order omelets and this year, corn muffins!

Golden Corn MixI chose to make Golden Corn VitaMuffin Mix instead of my own recipe. With 8 made to order eggs it seemed like a logical choice to ease my time in the kitchen. Well, I’m glad I did, what a hit! The muffins were gone by the next day. Everyone LOVED them!

A nice sweet corn muffin made with whole grains and low fat, you really can’t beat it. Plus SO simple to make with just a few egg whites and water. Oh! and did I say they are only 1 point! You really can’t go wrong.

Now, I do have to mention that the muffins did not have that gritty corn muffin texture. Don’t get me wrong, they are GOOD but for some who were raised corn muffins made from coarsely ground corn meal, you may be in for a surprise and I wanted to let you know. My mom, was expecting them to be a bit “grittier” but liked them all the same. (I sent her home with her own box of mix) :~P

Has anyone else tried them? I know they are fairly new.

  1. I LOVE LOVE LOVE corn muffins! I’ll definitely have to give these a try. I definitely like the gritty texture but if the flavor is good I think it would be worth it. I am glad to hear you are recovering well and that the outcome looks good!

  2. Im wanna try these now too.

I can NOT do the vitatops.

    I mean I can.
    I freakin love them.
but one? makes me want 20.
    and then I CRASH.

    these might work perfectly.

  3. Thanks for the tip! I’ve been looking for tips cuz I’m losing weight too…

I was just wondering if you had an opinion on this: http://www.pastoreformulations.com/product_p/005.htm.

My friend showed it to me, and it’s supposed to be all natural. I don’t use diet pills, but I was wondering if you recommend stuff like this??????

  4. I am a huge fan of your site. I love to see others losing weight and but find it so difficult to lose my own and stay consistent. If you have any suggestions or advice I am open to listen. Also I’m a country girl and we are REAL particular about corn bread. Do you think these muffins will stand the test? If its not homemade I usually eat Jiffy. Would you say its similar?

  5. Sara - Not a fan.

Tree - Hmmmm well, I think if you added a bit of coarse corn meal to grit them up you’d be fine! The sweetness is good but the texture is off.

  6. Have you tried Miracle Muffins http://www.miraclemuffins.com
? They have 7 grams of fiber, 3 grams of fat and only 87 calories per muffin. They come in 7 flavors - banana, blueberry, black cherry, chocolate black cherry, cinnamon green tea, chai spice black tea and gingerbread!
