Weight Loss Week 1 Day 4 – An Unexpected Day
This morning I felt like Kelly Bundy. Remember the episode of Married with Children when Kelly said, every new piece of information pushes an old one out? Well it’s true, it happens. I think I have hit my maximum brain capacity.
This morning went off without a hitch. I ate breakfast with the toddler, packed a great lunch, hopped in car and headed to the day care on the way to work. It was a normal, happy morning until…
We arrived at the daycare and it was closed! Yes, CLOSED!
As soon as I made the discovery, it hit me. “OH! YEA!” I was told they would be closing many times over the course of the last two weeks. It just didn’t stick!
So, we turned around, headed back home and had a unexpected day. Not a good day, not a bad day, just unexpected.
The toddler and I decided to take a short shopping trip and hit the kitchen for a ton of cooking!
I experimented with a whole wheat pizza dough recipe, again. All of my attempts have been just OK so I’m not ready to post it yet. I’ll get it one of these days, I promise. I’ve been trying a few variations, some with yeast, some with out, some 100% whole wheat flour, some mixed with soy and/or oat flour. To be honest, I’m just having fun with it, hoping one of my attempts with be “it”.
Not being at work also gave me a bit more time for dinner so I tried a recipe I wanted to for a couple of weeks now and paired it with an old favorite of ours, Balsamic Dijon Chicken Tenders.
So all in all it really was a good day. I’m just feeling “off” now that my schedule was blown out of the water and I’m super behind at work. When I feel “off” I tend to eat more. How about you?

Wow, way to recover and have a great day. When I feel “off” I tend to eat more. How about you?
What a good question. Do you think it’s because we give ourselves permission to be “off” just because our schedule wasn’t as planned? Whatever it is, the answer for me is, yes and no. Sometimes I tend to eat more when things don’t go as planned. Especially if I am planning on going to a certain restaurant and plans get changed. I panic and sometimes blow it big time. However, on the other hand when I’m thrown a curve ball I tend to eat less. I also think it depends on who I’m with at the time. Anyway, it looks like you really didn’t handle it all that badly. Remember vegetables are your friend if you run out of flex. lol
I remember a few years back making homemade whole wheat pitas and they were so good I didn’t want to stop eating them! That’s why I’m not experimenting with a pizza crust recipe myself…I just can’t resist eating the lab results…lol! In the meantime, I’m just splitting a supermarket whole wheat pita and using it as uber-thin crust when we want pizza. Not inspired, but safe.
My month of quinoa recipes is at an end and I’m trying to decide what to try in February. Maybe all the different forms of tofu…or bulgar wheat. Maybe I just need to explore the shelves at the Natural Foods Market.
Roni, Thanks so much for all your great recipes and video posts! I found a pizza dough recipe on ww. I’m not sure how to figure points. I used calorie king and here’s what I got.
1/2 cup warm water
1 TLBS olive oil
1/2 tsp salt
1 package active dry yeast
1 cup whole wheat flour
3/4 cup all purpose flour
84.5 calories
.05 g fat
2.25 g fiber
Can you tell me if I figured correctly at 8 servings?? Thanks so much!

You know, Roni… it’s nice to see that you are only “human” like the rest of us! It is only expected that with the kind of pace you keep, some of the details have to get shuffled to the back of the pack!
Congrats on getting your hubbie to eat cauliflower! That definitely counteracted any “speed bumps” in your day!

(And I gotta say–welcome to my world! I was a space-cadet even before I hit middle age and now I’m even more hopeless about remembering things).
Have you tried winter wheat for whole wheat recipes? You probably have–King Arthur makes a good one. Anyway, it’s still genuinely whole wheat, but tastes much lighter than the normal kind.

Totally that way, when I feel off I have a tendency to eat more. I’m a very scheduled person, and just hate anything out of the normal routine.
