I Took the Video Leap!

I’ve been thinking about it for a long time and finally decided to give it a try. Check out my video on cutting butternut squash. A few people emailed asked how I do it and to be honest it’s much easier to show then to write out. So there ya go!
I don’t have an official food journal tonight. I spent most of the evening toying with a new project idea and experimenting with brownie recipes. So here is the super abbreviated version.
- Morning Weigh in: 144
- Turkey soup
- Granola bar
- Panera Lunch (soup, salad, whole wheat bead)
- 2 Kashi cookies
- Pork chop, Butternut Squash Fries
- Steamed broccoli

The video was great! I have never been able…for the life of me…to cut a butternut squash without making a huge mess or wanting to throw it at the wall! I’ll have to try this today since I happen to have one lying around :-)

Thanks for the video. I will try your method next time I do butternut squash fries. The way I’ve been doing it, I end up with a sore hand from holding the knife. I also never realized you could pre-cut it. How long can you leave it in the fridge before cooking it?

I like the video a lot! So do my kids, who happened to be in the room as I watched it and they all ran over to see who was talking to me about butternut squash from the computer.
