I broil a portabella mushroom cap and some sliced tomatoes while I am sauteeing fresh spinach. When everything is cooked, I spread a laughing cow light swiss on the mushroom, then layer the spinach and tomatoes on top. Awesome!!

I just used laughing cow cheese on a low carb torillia wrap with eggs. My children wanted the egg burrito for breakfast I had no cheese at all in the house...mmm wondered if this would work! I lightly very lightly spread it added an egg, wrapped gave it and they loved it! :) new fav in our house

My favorite way to use laughing cow cheese is in a hungry-girl recipe. It is their spinach dip. It says to use so many ounces of fat free cheese but I use 5 triangles laughing cow cheese, then the fat-free mayo, fat-free sour cream, reduced fat parmesan, some garlic, and defrosted/squeezed dry frozen spinach... It tastes just as good as the restaurant but only has about 75 cal for 3 large Tablespoons, which is plenty for one serving for me.

My favorite way to enjoy the wedges is so simple, I wonder if it's worth posting. I just spread small amounts on grape tomatoes individually as I pop them into my mouth! About 16-20 tomatoes to 2 wedges is my perfect ratio. I don't know anything about points, but it seems like a healthy snack, is quite filling, and helps me get my veggies in.
