The Laughing Cow Light Cheese Wedges
This is an old food find that I would like to resurface. I realized today how much I use Laughing Cow but I always do the same two things with it. Use it either as a dip for crackers or as the cheese on a sandwich. I know there has to be other interesting applications so I thought I would throw the question out there.

Toast a muffin, spread Laughing Cow Cheese on it, add some lettuce, a tomato slice, and a couple slices of turkey bacon for a low point BLT.
I put it in a bowl and get it nice and soft. Add in a tiny bit of brown sugar splenda and mix. Spread it on an english muffin or a bagel–OH MY!!! It’s like sweetened cream cheese.

Put it in a bowl and add some chopped broccoli thats room temp and season to taste. Spread it on boneless skinless chicken breast that have been flattened. Roll up to resemble chicken cordon blu. seanson chicken and bake OR you roll in egg beaters and crushed garlic melba toast and bake for crispy baked chicken with broccoli and cheese filling..YUMMMYYYYY
On cauliflower! I never liked cauliflower before I had it like this… steam cauliflower in microwave with small amount of ff chicken broth and garlic salt and pepper. Then add the lcl (flavored is great) and kind of mush it up. It is awesome for 1 point!
I spread it on a 0 point tortilla and add my bean salad (check my site) and some roasted chicken. Oh Lord it’s so good!

12 Wedges Laughing Cow Light Cheese
2 Cups Skim Milk
2 Tablespoons Butter Bud Granules
1/4 Cup Kraft Reduced Fat Parmesan Style Grated Topping
1/4 teaspoon Garlic Powder
In a medium saucepan, combine all of the ingredients and cook over medium low heat until the cheese is melted and the sauce is smooth. Serve immediately.
Serves: 9 (1/3 cup each)
Per Serving: 85 Calories; 3g Fat (39.4% calories from fat); 5g Protein; 7g Carbohydrate; trace Dietary Fiber; 16mg Cholesterol; 471mg Sodium. Exchanges: 0 Grain (Starch); 0 Non-Fat Milk; 0 Other Carbohydrates.
Points: 2
I haven’t even tried laughing cow before, but you can very easily throw it in a pan with some skim milk and whatever spices and make a great cheese sauce.
You could also take the different flavors (garlic and herb) and mix it up with spinach for a yummy filling to stuffed shells or use it as a substitute when making lasagna.
If you like the chinese food favorite Crab Rangoon – you can use some of it with whatever spices and whatever meat or fish you like and use it as a filling in wonton wrappers for a yummy chinese food renovation or if you are making your own tortellini.
You can use it in quiches or frittata’s for breakfast. I love cheese, so I can think of million things.
Again, I haven’t tried it yet, but all this recipe brainstorming is making me want to go out and try it!
I put mine on melba toast or melba rounds. Nothing fancy. I love all of the flavors they have in the light version.
How funny…I was just sharing this fabulous find last night at my meeting! I took an idea from Roni and spread it out on a plate, pour balsamic vinegar over it and dip All Bran Crackers in it. Or, same idea with the cheese and vinegar, but spread it on a tortilla with your fav. veges as a 2 point wrap! What a GREAT idea to use it to make alfredo or crab rangoons! Let’s all cheer for laughing cow cheese!!

I like making individual crab dip “muffins.” Randomly threw this together one time and have been making it for people ever since.
crab
a few wedges of light laughing cow cheese
mayo (i use the low fat kind)
lemon juice
garlic, pepper, salt
articokes
diced up onion
parmasan cheese
mix all together, scoop mixture into muffin tins, and sprinkle parmasan cheese on top, pop into 350 oven until tops are browned.
Delicious, low fat but tastes sinful!

Cauliflower Cheese Soup
14 oz. fat free chicken broth
1 head of cauliflower, split into rough pieces
1/4 cup of minced onion or shallots
2 or 3 wedges of Laughing Cow cheese or 2 or 3 TBSP of low fat cream cheese
1 or 2 cups of fat free milk
salt and pepper to taste
Sauté onion in a Pam sprayed pot. When soft, add cauliflower chunks and broth. Simmer until cauliflower is soft. Remove from heat and in batches, blend in food processor with fat free milk and cheese. Season with salt and pepper to taste.
I put mine in a frsh baked baked potatoe instead of butter. Yummy.
i just had some tonight for dinner, on my english muffin and egg samich – yum yum… its hard to find the french onion and garlic & herb around here though, my giant only has 2 flavors… :o(
I just used a wedge tonight. I ground some chicken breast using the meat grinder attachment from my Kitchaid mixer and shaped the chicken into a patty and stuff a little bit into each patty. It was very good.
I use mine in a Wasa cracker . Crunchy and tastey
Spread it on a tortialla that has some salsa and a hot dog, wrap it up and Ole.
Use in on a English Muffin with fresh tomatoes and broil it
Spread on some celery! One of my very favorite snacks EVER.

Wow these are great ideas. All I do is put it on a Wasa cracker. I never thought of all you could do with it. All these recipes sound so good.
Try melting it over 2 oz of cooked noodles and a splash of skim milk -add some seasonings and it’s kind of a poor man’s alfredo!

I use Laughing Cow to satisfy my craving for my favorite dessert, cheesecake. I mix one wedge with a packet of splenda and spread it on a graham cracker. Yum!

Stuffed Mushrooms
Serving Size : 16
3 cup mushrooms
12 wedges Laughing Cow Cheese — Light – Garlic & Herb flavored
1/2 cup Italian bread crumbs
Clean mushrooms and remove stems. Chop stems.
Unwrap cheeses and place in microwave for 30 seconds to 1 minute to soften. Combine crumbs, mushroom stems and cheese. Take spoonfuls and fill mushroom caps.
Place mushroom caps filling side up on ungreased cookie sheet. Cook 20 minutes at 400 degrees Farenheit or until stuffing is lightly browned on top. Let cool, then serve. Mushrooms will be juicy.

Help! Help! To Anonymous CRAB DIP MUFFINS ~ would you post the portions per ingredient? I tried this but obviously didn’t have the magic combination. I used my creation with fresh spinach, it was very tastie, but definately not a muffin.
We put it in with the eggs before we scramble them, I also put it on a baked potato instead of cream cheese.
I like it with TJ’s Melba rounds, Ak-Mak or on toast. I love LC cheese!
I use it for breakfast. I spread it on a 1 point English muffin, I add 1/2 cup of cooked egg beaters (I add chives and sun dried tomatoes to mine), and I add a slice of turkey bacon. I end up with my version of a Dunkin donuts sandwich but only 4 points. It is very, very, filling because of all the protein. Sometimes I don’t use the bacon if I’m in a hurry and it is still filling and only 3 points.

I put laughing cow light herb flavor in my egg whites every morning for breakfast. 1/2 of a wedge works perfect for me to add flavor and creamy texture to 3 egg whites!

I just tryed laughing cow cheese about a week ago for the first time. I must say I have found my new favorite snack. I have been eating them w/ either wasa crispbread, melba garlic toast or the new harvest garden chips. My fav l.c cheese is the french onion, even my boyfriend loves this stuff.
Love the laughing cow cheese. I put in on a w.w. toasted bagel for breakfast sometimes or on melba toast as a snack. Tonight I was thinking of adding some to my mashed potatoes to give them a little cheesy flavor we’ll see how it goes.

I just discovered this post as well. In fact, I just discovered this site. I took the idea Amanda posted. I used one wedge of LC cheese and 1/2 T regular brown sugar. After I mixed it up, I put it on 1/2 of a whole wheat bagel. The points were still very low, and like Amanda said – OH MY! It was just like having one of the cream cheese sweet rolls I ate before I was on Weight Watchers. Thanks for all of the great ideas and inspiration.
Spread on 2 whole-grain, low-fat Nutri Grain waffles. 135 yummy calories, very filling and portable.

I read on the WW website that many members like to prepare pasta, and then just melt a LC wedge in before serving–sort of stir it all around in it. I thought that sounded fabulous as I am a fan of pasta.
Regular (not light) is 1 point also. It’s funny how much the light is pushed by those in the weight watchers community.
I’m excited to try some new ways to use it.
Here’s an idea from Hungry-girl.com: salmon roll ups (smoked salmon, cream cheese, tomato, onion). She uses ff cream cheese, and it wasn’t as good as laughing cow, so I swapped it. Even yummier with laughing cow!
